First Dish - Chicken Quesadillas
Ingredients:
Spice/Rub for Chicken
1 tablespoon kosher salt
2 teaspoons cracked pepper
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons coriander
2 teaspoons cumin
1 teaspoon Ancho chili powder (optional gives it a little heat)
2 teaspoons regular chili powder
2 teaspoons chicken powder (Knor)
Chicken - 2lbs
Bell Peppers of your choice
Onions
Whatever else you might want
Chicken Pasta:
Ingredients:
2 lbs Chicken
Penne Pasta (cooked al dente) - I used half box
1/2 cup Onions
1/2 jar Red peppers (jared)
1/2 a bag Fresh Spinach
3-4 TBS Parm
Half bottle Olive garden dressing
Note - I made a half batch. Add 4 pieces of chicken and just use whole box of noodles, peppers, spinach, and dressing. As always adjust for what you like!
Chicken and broccoli -
2 pieces of chicken breast
1/2 cup chopped onions (I forgot mine)
Marinade
t teaspoon baking soda
2 tablespoons soy sauce (low sodium)
1 teaspoon chicken powder
Garlic cloves (1-2)
2 teaspoons corn starch
Stir well and massage the chicken
1/3 cup oyster sauce
2-3 tablespoons low sodium soy sauce
1-2 tablespoons rice wine vinegar
2 garlic cloves
Ginger
2 teaspoons cornstarch
Taste and adjust
1 broccoli crown cut into bite sized pieces

Making tamales is very easy yes! It’s a process but have fun while you doing it and I promise you the process will be very shot, at the end of it every single minutes invested in this recipe is well worth it! Nothing both I had nothing beats homemade tamales!!!!!! Make the filling a day ahead to the process to go faster ????
Remember this recipe is for a small batch, to get the tamales cook in 1/2 the time you can always cook on stovetop. Me personally wouldn’t use the instant pot to cook a whole batch of tamales this is for the days that my kids crave tamales
This batch makes up to 24 tamales you can get more if you make them smaller and spread less masa we LOVE the masa so the thicker the better ????
✅soak the corn husk the night before or while the meat cooks soak in boiling hot water
✅skim some of the fat from the broth using for the masa, remember we already using lard
Ingredients: 2 dozens
26 corn husks
1 lb Chuck roast(I use it to get fat on my broth)
2 lbs Chuck tender roast
Salt I used 3 tbsp
1/2 onion
5 garlic cloves
3 bay leaves
Water up to max line
For the sauce:
10 New Mexico Chile pods
2 Chile ancho
7 small tomatillos
Chile de arbol(optional)
4 garlic cloves
1 tsp ground cumin
1 tsp oregano
Salt to taste I added 2 1/2 tsp
For the masa
4 cups instant corn masa for tamales
8 oz lard
2 tsp baking powder
Salt to taste I added 1 tsp
4 cups broth
1 cup water
1 serving of love????

How To Make Chorizo

Learn how to make homemade chorizo links with our culinary chef in this video cooking demo!
CHORIZO RECIPE:
Ingredients
3 lbs pork shoulder
2 tbsp of salt
9 Guajillo peppers
6 Ancho peppers
1 cup of apple cider vinegar
3 tbsp of paprika
6 garlic cloves, minced
2 bay leaves
1/3 tbsp ground black pepper
½ tbsp of ground cumin
¾ tbsp Mexican oregano
½ tbsp dry marjoram
½ tsp coriander seeds
½ tsp dry thyme
6 cloves
½ tsp ground allspice
Sausage casings
Butcher’s twine
Directions
1. Cut pork shoulder into small pieces. Place the meat in the refrigerator, this will make the meat easier to handle.
2. Setup your grinding attachment in your mixer with the coarser blade and grind the meat.
3. Wipe the peppers clean. Remove the stems and cut lengthwise. Remove seeds, toast the peppers in a pan and place in a bowl. Cover with hot water and let sit for 30 minutes.
4. Meanwhile, grind the spices and dry herbs using a spice or coffee grinder.
5. Discard water and place the peppers in a blender. Add the vinegar and garlic cloves and puree until smooth; strain through a fine strainer, set aside.
6. Place the ground pork in a large bowl. Add the ground mixture of herbs and spices. Mix well. Add the chili sauce and combine until well mixed.
7. Stuff pork mixture into casings.
8. Place in the refrigerator for a day to season in a well-covered glass container. This step will enhance the flavor better.
