How To make Applesauce Cake Squares
1 1/3 c Butter; softened
5 Eggs
1 3/4 c Juice, apple, concentrated
1 1/2 c Applesauce
5 1/4 c Flour
5 ts Baking powder
5 ts Cinnamon, ground
1 1/2 ts Baking soda
1 ts Salt
3 lg Apples; peeled/chopped
Creamy Topping 1 1/3 c Cream, heavy
3 ts Extract, vanilla
1 ts Cinnamon, ground
Preheat oven to 375. Beat butter in large bowl until creamy. Blend in eggs, juice, and applesauce. Combine dry ingredients. Gradually add to egg mixture, beating until well blended. Stir in appls. Spread batter evenly into greased 8" square baking pan. Bake 20-25 minutes, until wooden pick inserted in center comes out clean. Cool on wire rack. Cut into squares. Serve warm or at room temperature, with Creamy Topping if desired. Creamy Topping: Beat cream in small bowl at high speed of electric mixer until soft peaks form. Beat in vanilla and cinnamon until stiff peaks form. Nutrition information per piece: 229 calories, 4 gm protein, 34 gm carbohydrate, 8 gm fat, 65 mg cholesterol, 289 mg sodium, 1-1/4 diabetic starch/bread exchange, 1-3/4 diabetic fat exchange, 1 diabetic fruit exchange. Apple Spice Cake -- Three Ingredients
This is Marie's three ingredient apple spice cake. It can be served as cake only or it can be topped with a scoop of cool whip. Marie made an icing to put on top of hers. The cake recipe and the icing recipe is below.
Apple Spice Cake – Three Ingredients
1 box of spice cake mix
1 can apple pie filling
4 eggs
Mix ingredients together and bake in a 9 X 13 pan
Bake for 25 – 30 minutes at 350 degrees
Icing Recipe
1 cup of softened butter
½ cup brown sugar
1 tsp cinnamon
1 tsp vanilla
3 cups powdered sugar
2 tbsp milk
Mix the butter, brown sugar, cinnamon and vanilla
Until it is fluffy. Gradually add powdered sugar and mix.
Add milk if the icing is to thick, only add a little at a time.
Spread icing on cake after it is completely cooled.
Can be served right away or
Put is refrigerator to cool before serving.
Serve and enjoy.

1 t. nutmeg
1 t. cinnamon
1 t. baking soda
pinch salt
2 cups raisins
1 cup walnuts
2 cups applesauce
350. 50 minutes
frosting
1/4 cup butter
1 T. heavy cream
2 cups Confectioners sugar
2 T. bourbon or Vanilla

The Waltons - in the kitchen with Judy Norton (Mary Ellen) as she makes Olivia's Applesauce Cake with Jane's Whisky frosting. A little recipe in the recipe.
Here is the recipe we are following:
Olivia's Applesauce Cake
1 cup butter 3 ½ cups flour (sifted)
1 cup sugar 2 eggs
2 cups applesauce 1 teaspoon cinnamon
2 cups light raisins 2 teaspoons cloves
1 cup chopped walnuts 2 teaspoons nutmeg
1 teaspoon baking soda Pinch of salt
Sift together: Flout, baking soda, salt, cinnamon, cloves and nutmeg. Take ½ cup of flour mixture and stir into the nuts and raisins. Set both aside. Cream butter until whipped soft. Add sugar a little at a time until mixture is smooth. Beat in eggs vigorously. Alternately stir in flour mixture and applesauce. When all mixed together add nuts and raisins and mix well. Pour batter into a well-greased cake mold. Bake in preheated over at 350 degrees for one hour. Cool ten minutes, then turn out on cake rack. Frost with Whiskey Frosting when cake is cool.
Jane's Whiskey Frosting
¼ cup butter 2 cups powdered sugar
1 tablespoon cream 2 tablespoons whiskey (bourbon)
Pinch of salt
Cream butter, add sugar and salt, then cream and whiskey. Whip until smooth. Frost cake. Decorate with a sprig of holly.
