Healthy diet cake with oats and apples in 5 minutes! No flour, no butter, no sugar!
The sweetness comes from the natural sugars in the raisins and apple. So, it's just a little sweet. However, if you prefer a sweeter taste, you can always add a sweetener of your choice,
Ingredients:
230 g rolled oats(2 1/2 cups)
7 g baking powder(1/2 tablespoon)
1/2 teaspoon cinnamon
2 medium apples
3 eggs
1 teaspoon vanilla extract
40 g dried cranberries (optional) 1/4 cup
a pinch of salt
26 x 10 cm/ 10 x 4 inches baking form
bake 35-40 minutes at 180°C/360°F

Ingredients
Dry ingredients
* 2 cups (250g) oat flour (just process rolled oats until finely ground) OR use whole wheat flour
* 1/3 cup (70g) brown sugar or cane sugar
* 2 1/2 tsp baking powder
* 1 tsp ground cinnamon
* Pinch of salt
Wet ingredients
* 2 (~300g) medium-sized apple, cubed
* 1 tbsp lemon juice
* 1 cup (250g) buttermilk (or milk + 1 tbsp apple cider vinegar)
* 1/4 cup (60g) coconut oil, or any vegetable oil
* 1/4 cup (60g) applesauce
Topping
* 1/2 cup (50g) walnuts or pecans
* 1/3 cup (55g) oat flour, or all-purpose flour
* 2 tbsp (60g) any liquid sweetener, such as rice malt syrup or maple syrup
* 2 tbsp (30g) light-tasting vegetable oil, or melted vegan butter
* 1 (180g) medium-size apple, core-removed, quartered and thinly sliced
Instructions
* Preheat the oven to 180°C (350°F). Line a 18 - 20 cm (7-8 inch) round cake tray with baking paper.
To make the cake:
* Add all the dry ingredients to a large mixing bowl. Mix until there are no lumps. Add all of the wet ingredients and apples to the bowl and mix until combined. Pour the cake batter into the cake tin, spread evenly. Flatten the top with a spatula
To prepare the crumble topping:
* In a medium bowl, combine all the crumble ingredients and mix until well combined.
To assemble and bake:
* Arrange the thinly sliced apple on the top of the cake as desired. Wet your hands and scatter the crumble in the gaps on top of the cake.
* Bake the cake in the oven for 50-60 minutes or until a toothpick comes out clean. The cake is very moist and there might be some crumbs on the skewer which is fine. If the cake is browning too quickly at any point, cover it with an oven-safe plate or aluminium foil.
* Allow the cake to rest in the cake tin for at least 15 minutes. Remove the cake from the tin and dust with powered sugar if desired. Serve and enjoy!
* The cake can be kept at room temperature for 1 day or in an airtight container in the fridge for 3 days.

For the cake:
120g Rolled oats
1 cup (240ml) Milk, hot
2 Ripe Bananas (200g)
2 Eggs
3 tablespoons Cocoa powder
1 teaspoon Baking powder
For topping:
100g Dark chocolate
1/4 cup (60ml) Milk
Nuts of choice
Directions:
1. Make the cake: Preheat oven to 180C (350F). Grease a 8-inch (20cm) round pan and set aside.
2. In a large bowl, place rolled oats, pour in milk and allow to soak for 15 minutes.
3. In a separate bowl, mash bananas, add eggs and whisk until combined. Add cocoa powder, baking powder and mix until combined. At this stage you can add sweetener to make the cake a bit sweeter.
4. Pour soaked oats into the bowl with mashed bananas and mix until combined.
5. Pour the batter to prepared pan and bake for 25-30 minutes or until
6. Allow to cool for 5 minutes, then release from the pan and allow to cool completely.
7. Make the topping: chop the chocolate and transfer into a heatproof bowl. pour in hot milk, allow to sit for 1-2 minutes and mix until melted and smooth. Drizzle the chocolate over the cake.
8. Chop the nuts and sprinkle over the cake.
9. Serve and enjoy!
