How To make Applesauce Oatmeal Cake
JANICE WORTHINGTON:
1 1/4 c Applesauce
3/4 c Quick-cooking oats;
-uncooked 3/4 c Raisins
1/2 c Butter or margarine;softened
3/4 c Firm pack light brown sugar
1 lg Egg
1 1/2 c All-purpose flour
1 ts Baking soda
1/2 ts Salt
1 ts Ground cinnamon
1/4 ts Ground cloves
Bring applesauce to a boil in a small saucepan; remove from heat. Stir in oats and raisins; cover and let stand 20 minutes. Beat butter at medium speed with an electric mixer until fluffy. Gradually add sugar, beating well. Add egg and beat well. Combine flour, baking soda, salt, cinnamon, and ground cloves. Gradually add to creamed mixture; mix just until blended after each addition. Stir in applesauce mixture. Pour batter into a greased and floured 9-inch square pan; bake at 350 degrees for 30 to 35 minutes or until a wooden pick inserted in center comes out clean. Oatmeal Cake with Brown Sugar Coconut Pecan Icing
Grandma's Oatmeal Cake recipe with Brown Sugar Coconut Pecan Icing on Top. Broiled to perfection. Think... if an oatmeal cookie and a delicious cake had a baby...
1/2 cup oats
3/4 cup boiling water
1 teaspoon vanilla
Mix together ingredients and set aside for 10-20 minutes until thick.
1/4 cup lard (butter or shortening)
3/4 cup sugar
3/4 cup brown sugar
1 egg
1/2 teaspoon cinnamon
3/4 cup self rising flour
1/2 teaspoon salt
Mix together sugar and lard until combined. Add egg and mix again until smooth. Stir in oatmeal and mix. Fold in cinnamon, flour and salt with spatula until smooth. Grease a 9x9 baking dish and bake at 350 degrees for 30-35 minutes. Let cool before adding icing.
ICING
3 tablespoons butter
1/2 cup brown sugar
1/4 cup whipping cream
1/2 cup coconut
1/4 cup pecans, crushed
Melt butter and stir in sugar and cream until smooth. Remove from heat and stir in coconut and nuts. Pour over top of cake and place under broiler for 2-3 minutes, remove and let cool.

Ingredients:
2¼ cups (200g) Rolled oats
1¼ cups (100g) Quick oats
1/2 (170g) cup Honey/maple syrup
1 1/3 cups (270ml) Milk
2 Egg
1½ teaspoons vanilla extract
3 tablespoons (40g) Coconut oil
1 teaspoon Baking powder
1/4 teaspoon Salt
1 teaspoon Cinnamon
50g Dried cranberries
50g Raisins
50g Dried apricots
Butter for greasing
Directions:
1. In a large bowl mix all the dry ingredients and set aside.
2. In separate bowl, whisk all the wet ingredients.
3. Pour the wet mixture over the dry ingredients and mix until combined. Let sit for 15-20 to absorb the liquids.
4. Preheat the oven to 360F (180C). prepare 8-inch pan – line with parchment paper and grease the edges with butter.
5. Pour the batter into the pan and bake for 35-40 minutes or until golden brown.
6. Let cool on a wire rack for 10 minutes, then Release from the pan and let cool completely
Notes:
• All the ingredients should be in room temperature.
• You can use any kind of dried fruits.

Wet Ingredients
1 cup plant milk soy, almond, oats
¾ cup sugar plus 2 tablespoons to sprinkle on top
¼ cup vegetable oil sunflower oil, canola oil, or melted vegan butter
Dry Ingredients
2 cups flour all-purpose, wholewheat, or 50% all-purpose and 50% wholewheat (see notes below for more info)
1 tablespoon baking powder
3 teaspoons cinnamon or 1 tablespoon vanilla extract with wet ingredients
1 pinch salt
3 - 4 medium apples (about 6 ounces or 170 grams per whole apple - 2 apples for the filling and 1 to 2 apples for the top)
⭐️ Bake the cake at 360°F or 180°C for 55 minutes to 1 hour on the center rack of the oven.
