4 c Dried apricots
About 1 lb chopped fine 2 c Slivered almonds; toast
4 c Flaked coconut -or-
Macaroon crumbs 1 cn Sweetened condensed milk
Almonds (opt) In large bowl, combine all ingredients except whole almonds. Chill 2 hours. Shape into 1" balls. Top each with whole almond if desired. Store tightly covered in refrigerator. -----

Persian Walnut Cookies (Naan-e Gerdui)
These rich, nutty Persian Walnut Cookies (Naan-e Gerdui) have a crunchy meringue shell and a soft, chewy interior. Traditionally made for Persian New Year (Nowruz), these cookies are so delicious and easy, they are perfect for any occasion.
Ingredients (Makes 15 cookies)
Walnuts 1 ½ cups (170 g)
Sugar 1 cup (200 g)
3 Large Egg Whites (105 g)
Salt ¼ tsp (2 g)
Vanilla Extract ½ tsp (2.5 mL)
Ground Cardamom ¼ tsp (1 g) (Optional)
Cornstarch 1 tbsp (8 g)
Baking Powder ¼ tsp (1 g)
Directions
1. Add walnuts, sugar and egg whites to a food processor. Process until the walnuts are finely ground and the mixture forms a thick paste.
2. Pour batter into a pan and cook over low heat while stirring constantly until the sugar dissolves (about 5 minutes).
3. Remove from heat and allow to cool to room temperature (10 minutes). Stir in salt, vanilla extract, ground cardamon (if using), cornstarch and baking powder.
4. Pour batter into a pipping bag and pipe 1-inch (2.5 cm) mounds per cookie or use 1.5 tbsp cookie scoop to form the cookies.
5. Bake in a preheated 375°F (191°C) oven for 18-22 minutes. The cookies are done when the tops are dry and lightly brown, and the edges are set.

BETH'S APRICOT ALMOND TARTLETTE RECIPE
Makes 12 tarts
For Filling:
7 ounces (200g) almond paste
½ cup (120 g) of unsalted butter
3 tbsp (75 g) sugar
2 eggs
½ tsp (2.5 ml) Almond extract
¾ cup (90 g) flour
1 tsp (5 ml) baking powder
½ tsp (2.5 ml) salt
1/3 cup (50 g) sliced raw almonds
Powdered sugar for garnish
12 Apricot halves (6 whole apricots)
2 sheets puffed pastry cut into 3x3 squares
1 container vanilla ice cream
METHOD:
Cream together the almond paste, unsalted butter and sugar.
Add the eggs one at a time, beating in between additions. Add almond extract.
Whisk together the flower, baking powder and salt. Add flour mixture to butter mixture to combine.
Place puffed pastry on a floured surface. Cut pastry into 3x3 squares. Roll out slightly.
Fit squares into a muffin tin that has been lightly sprayed with baking spray. Spoon in 2 tbsp of filling into each cup, top with 1 tsp of almonds and place apricot halves in center.
Pop muffin tin in the freezer for 10 mins (or refrigerator for 15 mins) to firm up.
Meanwhile preheat oven to 400F degrees (200C)
Bake for 20 mins, until pastry is puffed and golden and centers are set.
Allow to cool slightly, dust with powdered sugar, serve with vanilla ice cream.

Dried Fruit Biscotti Recipe
Dried Fruit Biscotti are absolutely wonderful for morning hot tea or coffee. These are made with dried cranberries, plums, apricots and raisins that bring an amazing taste.

Ingredients
Makes about 25 biscotti
1 stick (110g) butter, room temperature
1/2 cup (100g) sugar
2 eggs
1 1/2 tsp (6g) baking powder
Finely grated zest of 1 lemon
1 tsp (5g) vanilla extract
1 cup mix of dried fruits (cranberries, plums, apricots and raisins)
1 1/4 cup (160g) all-purpose flour
1/2 cup (50g) nuts, optional
1. Preheat oven to 180°C (350°F).Line a baking sheet with parchment paper.
2. In a medium bowl beat butter and sugar until creamy, then add eggs, lemon zest and vanilla extract. Stir well.
3. Add baking powder and flour and mix until well blended. Stir in dried fruits.
4. Pour the dough into one long loaf or 2 smaller loafs into the prepared baking tray. The dough is pretty sticky so you can wet your spatula or use flour to be able to give the right shape.
5. Bake for about 25 minutes, remove from the oven and let cool for about 30 minutes. Cut into 1/2 inch diagonal slices and place them on the baking tray. Bake for another 15-17 minutes until golden brown.
