How To make Arroz Con Pollo(Chicken & Rice)
1 lb Skinless, boneless chicken
-breasts, cut into 1" strips 1 md Onion, quartered
2 Green peppers, chopped
1 Jalapeno pepper, seeded and
-chopped 3 Cloves garlic, minced
2 tb Chopped fresh coriander
2 c Chicken stock
1 c Crushed and drained canned
-Italian plum tomatoes 1 t Ground cumin
1 t Chili powder
3/4 c Long-grain brown rice
1 d Cayenne pepper
1 c Green peas (fresh or frozen)
1 tb Sliced pimentos
1 tb Rinsed and drained capers
Source: MAINPOUL.ZIP Saute chicken strips in nonstick skillet until white, about 5 minutes. Set aside and keep warm. In large skillet, bring all other ingredients, except peas, pimentos and capers, to a boil. Cover and simmer about 30 minutes, until rice has adsorbed liquid. Add peas, remove from heat and let steam. Arrange chicken and sauce over rice, garnish with pimentos and capers. Makes 6 servings.

Spanish chicken and rice (arroz con pollo) is a classic Spanish recipe that combines simple ingredients to make a filling and oh-so-tasty meal. The recipe combines rice with Spanish smoked paprika, a sofrito sauce base, plus bone-in chicken thighs, some generous hunks of chorizo, and white beans all thrown in for good measure.
Enhance the flavor with some Spanish sherry vinegar and a few sprigs of fresh rosemary and you’ve got yourself a hearty meal that comes together in one pan. Loaded with carbs and dietary fiber and ready in under an hour, Spanish chicken and rice is an ideal midweek dinner option!

So one of my all-time favorite dishes whenever I go to a Spanish (and some Mexican) restaurants is the classic Arroz con Pollo, which translates to Rice & Chicken (or Chicken & Rice). It may sound pretty basic from the sound of it, and it is. But only in how easy it is to make. It is ANYTHING BUT basic in flavor!Folks, this Arroz con Pollo is one to rival all others as it is so astoundingly rich in flavor thanks to a wonderful, full-bodied sauce that embodies the chicken and rice, and I also add in some of that classic Spanish sausage known as Chorizo into this dish as well. It is the furthest thing from dry and dull. It is just bursting with a flavor fiesta in every bite.What's more, this is a SNAP to make in your Instant Pot or Ninja Foodi with zero babysitting!

This is one traditional Mexican recipe you need to try yourself at home, and my Mom is back in the kitchen with me to share with you all our family recipes and her THREE TIPS to make this dish perfectly.
ARROZ CON POLLO
¾ cup Jasmine rice
2 cups chicken stock or water, (we use homemade stock)
1 tbs vegetable oil
2 garlic cloves
1 tsp whole cumin to crush
½ tsp coarse black pepper or peppercorns
1-2 tsp salt to taste
1 dash of oregano or to preference
¼ to ½ cup tomato sauce, preference
⅓ cup chopped or diced white onion
2 - 3 deboned chicken thighs cut into 1” pieces
