Beef stew recipe:
4 lbs braising beef
2 celery stalks peeled
3 carrots peeled and halved
1 large shallot halved
8 sprigs of fresh thyme
2 sprigs of fresh rosemary
3 tbsp tomato paste
5 cloves garlic
20 peppercorn
1 bay leaf
6-8 cups of beef stock
1-2 tsp kosher salt
Add roux to desired thickness

INGREDIENTS:
2 tbsp Butter
1 kg/2 lb beef chuck
Season with salt and black pepper
2 onions
4 garlic cloves
1 bell pepper
2 tomatoes
1L / 4 cups beef stock/broth
2 bay leaves
2 carrots
2 potatoes
4 tbsp Sweet Hungarian Paprika
1 tsp caraway seeds
Parsley
INSTRUCTIONS:
1. Season the beef by sprinkling it with salt and pepper, then toss it to make sure the seasoning coats the meat.
2. In a large pot, melt some butter over medium heat and add the onion. Cook for about 5 minutes until the onion turns translucent and slightly golden.
3. Add the beef to the pot and stir it until the outside changes from red to brown, which should take around 2-3 minutes.
4. Now it's time to add the flavors! Stir in the garlic, bell pepper, and tomato. Cook for about 4 minutes until the tomato breaks down and becomes soft.
5. Stir in Hungarian sweet paprika, caraway seeds, and bay leaves for an extra boost of flavor. Keep stirring for about a minute.
6. Pour in the beef stock, give it a good stir, and let it come to a simmer. Cover the pot with a lid and let it cook over low heat for 1 1/2 hours. This slow cooking method will make the beef tender and delicious.
7. Add the carrot and potatoes to the pot, stirring them in. Cover the pot again and cook for another 30 minutes. By now, the beef should easily fall apart when you touch it.
8. It's time to serve! Ladle the goulash into bowls, sprinkle some fresh parsley on top, and enjoy your hearty and flavorful goulash!

There’s something about a hearty beef stew that’s just so comforting and perfect for the cold months of winter. This French-inspired easy beef stew recipe has lots of herbs and a dash or lemon juice to brighten the rich flavors up.

SOME TIPS AND POINTERS
If you have the time, this stew is great to make a day ahead. Not only do the flavors intensify, but it also allows you to skim some fat off the top, if you’re into that. But it’s totally not necessary. Be sure to serve with lots of crusty bread to sop up all the juices.
Adding beans, rice or pasta will make this soup even more filling and stretch the portions out.
I suggest serving with some nice crusty French bread to sop all that broth up.
If you don’t have a Dutch oven just use an oven-safe pot.

Ingredients:
1-2 tablespoons Oil
1½ (700g) Stewing beef, cut into chunks
Salt to taste
Pepper to taste
2 Onions, roughly chopped
1 Red bell pepper, diced
3 Tomatoes, chopped
3 garlic cloves, minced
1 tablespoon Sweet paprika
1 teaspoon Cumin
1 teaspoon Dried thyme
1 tablespoon Tomato paste
1 cup (240ml) red wine (optinal)
4-5 cups Beef stock/chicken stock/water
2 Bay leaves
1 Celery stalk, chopped
3 Carrots, cut into chunks
2 Potatoes, cut into chunks
Directions:
1. In a large pot heat oil, add beef chunks, season with salt and pepper and brown them, about 6-7 minutes. Remove the beef from the pot and add chopped onions. Cook and golden. Add bell pepper and cook for 3-4 minutes. Add chopped tomatoes, minced garlic and cook for 3-4 minutes.
2. Put the beef back into the pot, add tomato paste, season with the spices and mix well.
3. Pour in red wine and deglaze (cook until reduced by half). Add beef stock and bay leaves.
4. Cover the pot, reduce the heat to low and cook for 90 minutes.
5. After 90 minutes add celery, carrots and potatoes and cook for another 20-30 minutes.
6. Serve!
Notes:
• If you prefer a thinner stew, add more liquids. If you prefer thicker stew, add less liquids.
• Instead of wine you can use beef stock/chicken stock/water.
