1/4 c Shortening 3/4 c Sugar 2 lg Beaten Eggs 1 ds Vanilla 2 c Flour 1 ts Baking Soda 1 ts Salt 3 tb Sour Milk 1 c Mashed Bananas 1/2 c Nutmeats Cream together the shortening and the sugar until fluffy. Combine the eggs, vanilla and sour milk with the shortening sugar mixture. Add the flour, baking soda and salt to the previous mixture. Bake in a 350?F oven for one hour. Highlights of my week in Sydney during covid19 including my day off baking - choc chip banana recipe... 1. Mix wet ingredients together in a big bowl: - 1/2 cup maple syrup - 1/3 extra virgin olive oil - 1/2 tsp vanilla essence - 1/4 cup milk (any kind is fine - I actually forgot to add it this time) 2. Mash 1 cup ripe bananas 3. Mix dry ingredients in separate bowl: - 1 cup + 3/4 cups wholemeal white flour - 1 tsp baking soda - 1/2 tsp salt - 1/2 tsp cinnamon powder 4. Add dry mixture into big bowl of wet mixture and mix to combine. 5. Add mashed bananas and 1/2 cup of choc chips (or nuts, dried fruit) 6. Grease loaf pan with oil, add mixture in and put in preheated oven at 165 deg for 55-60mins. Enjoy.. :)

BANANA BREAD: By: The Corrigan Sisters Makes: 1 Loaf
INGREDIENTS:
-2 cups all-purpose flour
-1 teaspoon baking soda
-1/2 teaspoon salt
-1/2 cup oil
-1/2 cup brown sugar (packed)
-2 large eggs
-4 overripe bananas
-1 Tbsp. vanilla extract
INSTRUCTIONS:
1. Preheat the oven to 350F. Grease and flour a 9x5 inch loaf pan.
2. In a large bowl, mash bananas with a fork, or potato masher until smooth in consistency. 3. Now add in 1/2 cup of oil, 1/2 cup of brown sugar and 2 large eggs, mixing until fully combined.
3. Sift in 2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt, and stir.
4. If you want to add nuts of raisins to your banana bread, add 1/2 cup of each (optional)
5. Pour batter into the prepared pan.

6. Now bake in a preheated oven at 350F for 55-60 minutes, or until a toothpick inserted comes out clean.
7. Let cool in the pan for 15 minutes.
