1/4 ts Vanilla extract
Sugar substitute to equal 1 -ts sugar 1/2 c Egg substitute
4 sl Reduced-calorie white bread
1 md Banana; sliced
1/4 c Red.-cal. maple-flavored
-syrup 1. In small bowl, whisk together yogurt, vanilla, and sugar substitute.
Set aside. 2. Pour egg substitute into shallow bowl; dip bread in egg substitute,
coating both sides and absorbing all liquid. 3. Spray large nonstick skillet with nonstick cooking spray; over medium
heat, cook bread until browned on both sides. Remove to heated platter, cover, and keep warm. In same skillet, quickly cook banana slices until golden on each side. 4. Place 2 slices bread on each serving plate; top evenly with yogurt
mixture, banana slices, and syrup. Each serving (2 slices) provides: 1/2 milk; 1 protein; 1 bread; 1/2 fruit; 25 optional calories. Per serving: 239 calories, 12 g protein, 2 g fat, 48

INGREDIENTS
10 slices sandwich bread
3 Bananas sliced thinly
3-4 tbsp Butter
1 tbsp Sugar
2 Eggs
3 tbsp Milk
1/3 cup sugar
1/2 - 1 tsp Cinnamon
powdered sugar
INSTRUCTIONS
Heat a non-stick pan over medium heat and melt about 1 - 1/2 tbsp of butter. Add sliced banana and 1 tbsp sugar. Saute until golden.
In a bowl combine remaining sugar with cinnamon and set aside. In another bowl beat eggs with milk and set aside.
Remove the bread crust, and flatten the slices with a rolling pin. Spread about 1-2 teaspoons of banana mixture along one edge of the bread. Brush the other side with the prepared egg wash.
Gently but tightly roll up the bread around the banana mixture and seal to make a roll. Continue with the remaining bread.
Melt about 1 tbsp of butter in a pan. Coat the rolls in the egg mixture and place seam side down. Cook 3-4 roll at a time.
When browned, turn a quarter turn and continue until all sides are cooked and browned nicely.
Clean the pan slightly with a paper towel and repeat until all rolls are cooked. Roll into the sugar cinnamon mixture or dust with powdered sugar. Serve warm.

Texas French Toast Bananas Foster

Ingredients
French Toast Batter:
3 eggs
1/3 cup milk, preferably whole
1/3 cup heavy cream
1/4 teaspoon pure vanilla extract
1/4 teaspoon orange-flavored liqueur (recommended: Grand Marnier)
1/8 teaspoon sea salt
1/8 teaspoon ground cinnamon
Caramel Sauce:
1 cup unsalted butter
2 cups packed brown sugar
1/4 teaspoon ground cinnamon
1/2 cup orange juice
1/4 cup dark rum
1 tablespoon creme de banana liqueur, optional
3 bananas, peeled and sliced
6 thick bread slices, preferably French toast bread (brioche) or Texas toast
Directions
Batter: In a large bowl, combine all of the ingredients until a smooth batter is formed.
Sauce: In a saucepan over medium-high heat, melt the butter, then add the brown sugar. Stir continuously until the sugar has dissolved. Add the cinnamon and orange juice and bring to a simmer. Remove the pan from the heat, pour in the rum and creme de banana, if using, then return the pan to the heat. Brush down the sides of the pan with water using a pastry brush. Remove from heat.
In a small saute pan, add 1/4 cup of the caramel sauce and the bananas. Saute over high heat until just warmed through. Keep warm.
Toast: Preheat a griddle or a nonstick pan over high heat. Dip the bread slices into the batter, then put them on the griddle, turning over after 2 minutes. To each serving plate, add 1/4 cup of the caramel sauce and top with the French toast. Spoon the bananas, over the toast and drizzle with some of the caramel sauce.
