Best-Ever, Moist, Delicious Pumpkin Banana Bread Recipe | Fall Recipe ~Episode 7
Hello, guys and welcome to Chanda’s Home Cooked Meals. Today I will be sharing with you a wonderful delicious Pumpkin Banana Bread recipe. My passion is to cook and share all my wonderful recipes with you while feeding my family of five. This is also a quick and grab Delicious breakfast or Snack for your family. Delicious Pumpkin Banana Bread
1 3/4 cups of All purpose flour
1 cup light brown sugar
1/2 cup sugar
1 cup of raisins
1 cup of chopped walnuts
1/2 cup oil
2 eggs (at room temperature)
1 tsp cinnamon
1/2 tsp salt
2 tsp pumpkin pie spice
1/2 tsp baking powder
1 tsp baking soda
1 tsp Vanilla extract
1 cup pumpkin puree
1 banana
Preheat oven to 350 degrees
Directions:
Add wet ingredients oil, eggs, sugar, brown sugar, and Vanilla extract and mix for two minutes. Then add pumpkin puree and banana and mix for another two minutes. While mixing as baking powered, baking soda, pumpkin pie spice, salt, and cinnamon and mix for 30 seconds. Then add flour and mix until almost combined. Then scrap down sides of bowl and then mix for another 30 seconds. While mixer is still on add walnuts and add half of the raisins and mix a few seconds and add the last half of the raisins and mix for a few more seconds. Add bread batter to a greased loaf pan. Bake bread for 1 hour and 25 minutes. Let bread cool completely before removing bread from pan. Then slice your bread and enjoy!

Pumpkin Banana Bread Recipe:
Ingredients:
- 2 ripe bananas
- ¾ cup pumpkin puree
- 2 Tbsp. coconut oil, melted
- 2 Tbsp. unsweetened applesauce
- ¼ cup maple syrup
- ¾ tsp. vanilla extract
- 2 eggs
- ¼ cup nonfat plain Greek yogurt
- 1 ¾ cup whole wheat pastry flour
- 1 tsp. baking soda
- 1 tsp. pumpkin pie spice
- ½ tsp. cinnamon
Directions:
1. Preheat oven to 350°F. Grease a bread pan with nonstick cooking spray.
2. In a small bowl, combine the flour, baking soda, pumpkin pie spice and cinnamon. Set aside.
3. In a separate bowl, mash the bananas with a fork. Stir in the pumpkin puree, coconut oil, applesauce, syrup, vanilla extract, eggs and yogurt.
4. Stir in the flour mixture.
5. Pour the batter into the greased bread pan. Bake for 40-45 minutes or until a toothpick comes out clean.
6. Let the banana bread cool on a wire rack before slicing and serving.

Best Pumpkin Banana Bread Recipe
This fall pumpkin banana bread is a variation of my Banana Bread recipe which is moist and delicious with pumpkin puree and spices. See full recipe:
Pumpkin Banana Bread
Pumpkin banana bread is moist, tender, and bursting with fall flavor. Make this recipe with pumpkin butter, then enjoy it all year long!

Ingredients
1 cup pumpkin butter
1 banana (ripe and peeled)
1/3 cup butter browned (See below)
1 large egg
1 tsp vanilla extract
1 cup sugar
1 1/2 cups flour
1 tsp baking soda
1/8 tsp salt
Instructions
Preheat the oven to 350°F (175°C), and coat a 4x8-inch loaf pan with butter or cooking spray.
To Make Brown Butter
Melt butter over medium heat and swirl the sauté pan to be sure the butter melts evenly.
The butter will begin to foam and the color will change from yellow to golden to brown. Once you smell that nutty aroma, take the pan off the heat and allow to cool. It takes a few minutes total.
Bread
Mash the ripe bananas in a large bowl with a fork by hand until smooth or in a mixing bowl with paddle. Add the pumpkin butter, browned butter, sugar, beaten egg, and vanilla.
Sift together the flour, baking soda and salt. Add to the bowl of wet ingredients and mix thoroughly to blend.
Pour batter into prepared loaf pan. Bake for 55 -60 minutes, or until a tester inserted into center comes out clean. If the bread is browning too quickly, tent the pan with aluminum foil.
Remove from oven and let cool in the pan for a 5 minutes. Then run spatula along sides of pan and bread, tilt pan sideways and remove bread from loaf pan. Let cool on wire rack for at least 15-20 minutes before slicing.
