Ingredients:
1 cup pecan halves feel free to use more plus a tbs of butter
2 1/4 cups all-purpose flour (weigh for best results) (285 grams)
1 teaspoon baking soda
1 teaspoon salt
1/2 cup salted butter, softened (114 grams)
1/2 cup Crisco (96 grams Crisco)
3/4 cup granulated sugar (organic is best) (150 grams)
3/4 cup packed dark brown sugar (150 grams) (recipe calls for light brown)
1 teaspoon vanilla extract
2 eggs (I had large eggs however, I used the smallest ones I had)
2 cups Nestle Tollhouse Morsels or whatever brand you like Semisweet Chocolate Chip
** I felt as though the recipe could use an extra 1/4 cup of sugar. (Maybe 1/2 brown sugar and 1/4 granulated)

Laura Bush's Cowboy Cookies | Southern Living
Former First Lady Laura Bush is credited with putting these delicious oat-, coconut-, and pecan-stuffed chocolate chip cookies, now known as Cowboy Cookies, on the map. And the story behind her famous Cowboy Cookie recipe is almost as good as the cookies themselves. Almost.
Starting in 1992, Family Circle magazine has orchestrated a political bake-offthis link opens in a new tab during every presidential election year. It was already commonplace for presidential candidates to release family recipes during their campaign—it helps to humanize the candidates and also allows them to promote family values. But Family Circle decided to up the antethis link opens in a new tab by publishing cookie recipes from the wives of each candidate and asking readers to try baking both and then vote on their favorite. The results of the bake-off have interestingly almost always predictedthis link opens in a new tab the winner of the presidential election, save a couple outliers.
In the first First Lady bake-off in 1992, Hillary Clinton’s chocolate chip cookies beat out Barbara Bush’s still-delicious chocolate chip recipe, and again in 1996, Hillary’s chocolate chip recipe won over Elizabeth Dole’s Pecan Roll cookies. In 2000, Laura Bush debuted her Texas Governor’s House Cowboy Cookies, and as expected, they beat our Tipper Gore’s ginger snap recipe. Laura switched up her recipe during her husband’s second presidential campaign in 2004 to a similar oatmeal chocolate chunk recipe, but it’s her first Cowboy Cookie that’s become so famous.
As with most things in Texas, Laura’s Cowboy Cookies are big and completely stuffed with so many mix-ins: oats, coconut, pecans, and of course, chocolate chips. They’re sure to win over any crowd.

My Cowboy Cookie Recipe, Inspired by Former First Lady Laura Bush
I used to make these cookies a lot in college. I would make them for bake sales and for most memorably to me “cookie Wednesdays” when I was an intern. Anyways, This recipe was inspired by Former First Lady Laura Bush’s cowboy cookie recipe. I found it annoying to have to measure so many ingredients so my adjusted recipe skips measuring the chocolate chips, pecans, and coconut by using common package weights for these things. Her original recipe I think could be easy divided into 1/3 batch, but for my recipe I keep it the full size-again for the ease of not measuring so many ingredients. Also, if you can’t find exact weights below for the products, don’t stress out, just try to get close to it. If you like a little more coconut, you can add more and take out a little of oatmeal. It’s pretty flexible that way. Enjoy.
1.5 cups butter (3 sticks) softened
1.5 cups white sugar
1.5 cups brown sugar
3 eggs
1 tsp vanilla
3 cups all purpose flour
1 tsp salt
1 tbs baking powder
2 tbs ground cinnamon
3 cups quick cooking oatmeal
10 oz chocolate chips or chunks, any kind-milk chocolate, semi sweet, bitter sweet
10 oz chopped pecans
7 oz sweetened shredded coconut
Yields 8.5 dozen golf ball sized cookie balls
Preheat the oven to 350 degrees Fahrenheit. Cream the softened butter with sugar and brown sugar. Add the eggs one at a time then add the vanilla. While the butter and eggs are mixing, combine flour, salt, baking powder, and cinnamon in a bowl. Slowly add the flour to the butter mixture. You can reserve a small amount of flour to coat the “goodies” you are about to mix. Combine the oatmeal, chocolate chips, pecans, and coconut in the bowl and mix well. With the mixer on low, slowly add half the “goodies” to the dough. Remove from the mixer and mix in the remaining “goodies” by hand. Scoop the dough into golf ball sized balls and bake 12 on a parchment sheet for 11-12 minutes. Allow the cookies to cool for a minute or two on the baking sheet before transferring the cookies on the parchment paper onto a cooling rack to cool completely.
Bake frozen dough for 12-13 minutes at 350 degrees Fahrenheit.
