Instant Pot Mushroom Risotto
Risotto is a dish that is actually very easy to make if you have the time to stand and stir and watch the arborio rice drink up half-cup increments of broth over the course of 30-45 minutes. Or...you could just do it this way in the Instant Pot and get it done in half the time without babysitting the pot. And it’s absolutely delicious!
I used a recipe for mushroom and spinach risotto from the Instant Pot website and their book Instant Pot Miracle as my guide, but made several modifications for it. Here is a link to the original recipe:

Instant Pot Duo 6 Quart:
Today’s Ingredients:
2 TB olive oil
1 large shallot, about ½ cup minced
8 oz mushrooms, sliced
½ tsp fresh rosemary
½ tsp fresh thyme
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes
½ cup dry white wine
2½ cups chicken broth
1 cup white arborio rice
1 TB butter
½ cup grated parmesan or pecorino romano
2 TB chopped parsley
Instructions:
1. Heat the pot on the saute mode. When the display reads “HOT,” add the olive oil and shallots and cook until just softened, about 2 minutes.
2. Add the mushrooms and continue to cook, stirring occasionally, until the mushrooms have softened and taken on a nice amount of browning. This will take about 8-12 minutes.
3. Add the rosemary, thyme, salt, black pepper, and red pepper flakes. Stir for about 1 minute until very fragrant.
4. Add the wine and deglaze the bottom of the pot. Make sure to scrape up any stuck-on browned bits from the bottom of the pot.
5. Add the rice and chicken broth and stir to evenly distribute all ingredients.
6. Lock the lid and cook on manual/high for 6 minutes followed by a quick pressure release before reopening the lid.
7. Stir in the butter, cheese, and parsley. Continue to stir until the butter is melted and the risotto is very creamy.
8. Serve with extra parsley and enjoy!

Pot Barley Risotto Recipe #shorts
This super easy instant pot barley risotto makes a great meal that you can set and forget. ????⏲️ Did you know that barley contains twice the amount of calcium and fiber as rice and is also rich in magnesium? It also adds depth to your meal with its chewy texture and nutty flavor.
Ingredients:
2 tbsp. olive oil
1 large onion, finely diced
450g mushrooms (cremini, white, oyster), sliced
½ c. dry white wine
1 ½ c. Yupik Pot Barley
1 tbsp. fresh rosemary, finely chopped
1 tbsp. fresh thyme, finely chopped
2 ¾ c. water
3 tbsp. Yupik Vegetable Soup Base
3 tbsp. plant-based butter
¼ c. plant-based parmesan cheese, grated
¼ c. fresh parsley, chopped
Salt & pepper to taste
Method:
Turn your instant pot to saute. Add onion and olive oil and saute until softened. Add mushrooms and saute through. Add white wine and saute for 3-5 minutes. Add pot barley, fresh herbs, water and vegetable soup base and pressure cook on high for 27 min. Once it’s completed, allow it to naturally release for 10 min. Stir in butter, parmesan cheese, parsley, salt and pepper and enjoy!

Ingrédients:
2 c. à soupe d'huile d'olive
1 gros oignon, finement haché
450 g de champignons, tranchés
½ t. de vin blanc sec
1 ½ t. d’orge décortiqué Yupik
1 c. à soupe de romarin frais, finement haché
1 c. à soupe de thym frais, finement haché
2 ¾ tasses d'eau
3 c. à soupe de base de soupe aux légumes de Yupik
3 c. à soupe de beurre à base de plantes
¼ t. de fromage parmesan à base de plantes, râpé
¼ t. de persil frais, haché
Sel et poivre au goût
Préparation:
Mettre l’autocuiseur en mode sauté. Ajouter l'oignon et l'huile d'olive et sauter jusqu'à ce qu'ils ramollissent. Ajouter les champignons tranchés et cuire. Ajouter le vin blanc et sauter pendant encore 3 à 5 minutes. Ajouter l’orge, les herbes fraîches, l'eau et la base de soupe aux légumes et cuire sous pression pendant 27 minutes. Une fois terminé, laisser l’orge se relâcher naturellement pendant 10 minutes. Incorporer le beurre, le fromage parmesan, le persil, le sel et le poivre, et déguster!
