Webisode #021: Memorial Day Sides - Jamaican Cole Slaw + Sun-dried Tomato Orzo Pasta Salad
Happy Memorial Day!
I am having a very lazy weekend (hence this video is being posted a day late-ha!) so, decided to pick up ribs, chicken and brisket from a local bbq joint. And since I didn't have to hang out at the grill for a few hours, I decided to make two sides that will be great for the holiday or any day this summer--Jamaica Cole Slaw and Sun-dried Tomato Orzo Pasta Salad.
These two salads are perfect contrasts to the richness of bbq.
No recipes because I freestyled them--like I said, a lazy kinda day! ;-)

Turkey, Basmati Rice, Barley, Farro, Lentils
Healthy raw turkey breast with rice, barley, yellow split peas and Farro cjooked in stock with vegetables.
1 lb. turkey breast,
1/3 c. yellow split peas,
1/4 c. farro,
1/3 c. brown basmati rice,
1/3 c. barley,
4 oz. shallots,
3 oz. red peppers
2 oz. mushrooms,
1 oz. sundried tomato,
3/4 c. scallions,
5 garlic cloves,
1 c. roasted soy beans nuts,
4 oz. carrots,
4 bay leaf,
1 bunch fresh thyme,
3 oz. celery,
12 oz. onions for the stock
Vegan Lentejas
Instead of using chorizo I am tricking it with some sundried tomatoes. This is a way my mother usually make them instead of using animal products.
In a pot I put:
Olive oil
Celery
Peppers red and green
Onion 1 small
Add the washed green lentils
Cover with warm water and let it boil for 30-40 min
Add Salt and pepper as you like
