How To make Bean, Barley & Sausage Soup
IOWA REC NEWS, MAY 1992:
1 lb Kidney beans, dry
1 pk Smoked Polish sausage,sliced
7 c Water
1 c Barley
2 Garlic cloves; peeled
3 Bay leaves
Put rinsed beans in large saucepan. Add water, cover and let stand overnight. Drain off water the next day. Put beans, barley and remaining ingredients into crockpot. Stir. Cover and cook on high for 4 hours. Remove bay leaves. Salt to taste when serving. Sylvia's comments: I nuked the beans to fast-soak them, and it worked great. Even the kids liked this one! I used a fine-ground wurst instead of Polish sausage and cut it into bite-sized pieces before cooking. I also added some powdered beef stock to the water for cooking. Then I packed the soup into empty jars to take to work. It reheats great! Also worked well for a quick supper for the kids. Definitely a keeper. I might add some chopped browned onions next time, though. 28 can crush tomatoes
2 tbsp beef bouillon ( add a little at a time until you get the right taste)
1 onion
2 stalks celery
2 carrots
1/2 red bell pepper
thyme, rosemary, oregano
1 cup mixed vegetables
2 potatoes
1 tsp onion powder and garlic and herb seasoning
1/2 tsp dried thyme, pepper
enough water to get to the consistency you like
1 tsp wostichier sauce
1 tsp sugar

ITALIAN LENTIL SOUP PRINT RECIPE:
INGREDIENTS WITH GRAM AMOUNTS
1/4 cup (54 grams) extra virgin olive oil - plus more for finishing
1 medium onion - diced
2 ribs celery - diced
2-3 medium carrots - diced
1 teaspoon (~2 grams) dried oregano
3 ounces (84 grams) tomato paste
8 ounces (226 grams) canned plum tomatoes hand crushed
8 ounces (226 grams) baby spinach
8 cups (1890 grams) water
16 ounces (454 grams) brown or green lentils see notes below
1 rind Parmigiano Reggiano (optional)
salt and pepper to taste

Sausage/Beef Barley Soup. Easy to make family meal
This was a great soup that we loved! Here is the recipe from the book and how I changed it up. I put my changes in parentheses. ( ) Let me know it the comments below what your favorite soup is.
3/4 lb gr. beef (about 1/2-3/4 lb gr. pork) 1 1/2t dried thyme
4 C water 1 t garlic powder (1T)
1 can stewed tomatoes (Rotel) 1/4t black pepper (1/2t)
1 1/2C thinly sliced carrots 1 t dried oregano
1 C chopped onions 1/8 t salt
1/2 C quick-cooking barley 3 cups torn stemmed spinach
1 1/2t beef bouillon granules (Chicken) ( I omitted this)
1. Brown beef (and sausage) in a saucepan over medium-high heat until cooked. Drain fat.
2. Stir in water, tomatoes, carrots, onions, barley, bouillon, and all spices. Bring to a boil over high heat.
3. Reduce heat to low; cover and simmer 12 to 15 minutes or until barley and vegetables are tender, stirring occasionally. Stir in spinach; cook until spinach starts to wilt.
