How To make Beef Pot Roast Tex Mex Style
-JUDI M. PHELPS 4 To 5 lb beef bottom roast;
-boneless, trimmed of fat 2 tb Worcestershire sauce
2 tb Lime or lemon juice
1 tb Prepared mustard
2 Cloves garlic; minced
6 oz Can spicy tomato juice
1/2 c Chili sauce
1 To 2 jalapeno peppers;
-finely chopped 2 tb Fresh cilantro or parsley;
-finely chopped 2 ts Cumin seeds
Put meat in shallow plastic dish just large enough to hold it. Combine Worcestershire, lime or lemon juice, mustard, garlic. Spread mixture over meat. Cover and refrigerate overnight. Roast meat in preheated 325 degree oven for 1 hour. Combine remaining ingredients; pour over meat. Cover and roast 3 to 4 hours more at 275 degrees until meat is very tender. Baste occasionally with pan juices (thin with a little boiling water if necessary) Slice thinly to serve. Makes about 6 to 8 servings. Approximately 200 calories per 3-1/2 oz. serving. This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste

This Carne Guisada is so tender and flavorful! Diced beef chuck roast in gravy comes together to make a delicious guisada. This works great in tortillas served as tacos or paired with rice and beans for a complete dinner. YUM!!!!!

Ingredients:
2 1/2 - 3 lbs of beef chuck roast diced into 1-inch pieces
1/2 tsp pink Himalayan salt ( use less if you are using fine salt)
1/4 tsp black pepper
1 tbsp olive oil
1/2 cup diced onion
1/4 cup of bell pepper
2 cloves of minced garlic
4 tbsp of flour
3 tbsp tomato sauce
3 cups hot water
2 tsp beef bouillon powder or 2 tsp better than bouillon beef base
1 tsp ground cumin
1. In a hot skillet over medium heat, add the olive oil. Next, add the diced beef. The beef will start to produce liquid. Simmer on medium heat and occasionally stir for 15 minutes or until most of the juice has evaporated.
2. Add the onion, bell pepper, and garlic and saute for 5 minutes or until the veggies have softened.
3. Sprinkle the flour over the beef and saute for another 2 minutes.
4. Add the tomato sauce and stir to combine. The sauce should start to brown. Add 3 cups of water. It will sizzle! Next, add the beef bouillon and cumin. Stir everything around making sure to scrape the bottom of the pan. Bring to a boil. Once the guisada starts to boil, set heat to low and reduce to a gentle simmer. The gravy will thicken as it cooks. Simmer for 2 1/2 to 3 hours. Add 1 tbsp or 2 of water if the sauce thickens too much while simmering.
5. That's It!! Enjoy with your favorite tortillas and serve with some rice and beans!!

INGREDIENTS
2.5 lb ( 1.13 kg ) beef chuck roast
3 Tbsp (27 g) all-purpose flour
1 1/2 tsp seasoned salt
1 tsp garlic powder
1 tsp onion powder
1/2 tsp coarse salt
1/2 tsp cracked black pepper
1 1/2 lb (681 g) potatoes
2 large carrots
1 celery stick
**GRAVY**
1/4 cup (60 ml) rendered fat or cooking oil
1/2 small onion (diced)
1/4 cup (40g) all-purpose flour
14.5 fl oz (429 ml) low sodium beef broth or stock
salt and pepper to taste
Bake in a preheated oven at 275 degrees F / 135 degrees C
for 3 hours or until tender

6 pounds of chuck roast
1/2 Tbsp salt (sea salt)
