How To make Beef Pot Roast Tex Mex Style
-JUDI M. PHELPS 4 To 5 lb beef bottom roast;
-boneless, trimmed of fat 2 tb Worcestershire sauce
2 tb Lime or lemon juice
1 tb Prepared mustard
2 Cloves garlic; minced
6 oz Can spicy tomato juice
1/2 c Chili sauce
1 To 2 jalapeno peppers;
-finely chopped 2 tb Fresh cilantro or parsley;
-finely chopped 2 ts Cumin seeds
Put meat in shallow plastic dish just large enough to hold it. Combine Worcestershire, lime or lemon juice, mustard, garlic. Spread mixture over meat. Cover and refrigerate overnight. Roast meat in preheated 325 degree oven for 1 hour. Combine remaining ingredients; pour over meat. Cover and roast 3 to 4 hours more at 275 degrees until meat is very tender. Baste occasionally with pan juices (thin with a little boiling water if necessary) Slice thinly to serve. Makes about 6 to 8 servings. Approximately 200 calories per 3-1/2 oz. serving. Carne Guisada Recipe (Tex Mex Beef Stew) | Simply Mamá Cooks
This recipe is my easy and delicious take on carne guisada. This Tex Mex style beef stew is tender and delicious. It goes great with a side of Mexican rice and homemade soft flour tortillas.
INGREDIENTS
1 1/2 to 2 lbs beef stew meat
1 tomato
1/2 onion
2 cloves garlic
1 beef or chicken Knorr bullion cube
1/2 tsp to 1 tsp ground cumin (to your taste)
1/2 tsp kosher salt
1/4 tsp black pepper
2 tbls flour
2 to 2 1/2 cups water

oil
3 - 4 lbs chuck pot roast
1 packet au jus gravy
1 packet ranch seasoning mix
1/2 - 1stick butter
8-10 pepperoncini peppers
2-3 tbs pepperoncini pepper juice from the jar
1 med-large yellow onion sliced
2 tbs garlic chopped or minced
4 cups beef broth
Preheat the oven to 425F
Add oil to a medium to large-sized dutch oven.
Sear the pot roast on all sides, remove, and set aside on a plate.
Add more oil if necessary, along with the onions. Saute until the onions become translucent.
Add the garlic and combine for about one minute.
Add the beef broth, au jus gravy, and ranch seasoning mix, pepperoncini juice, and combine.
Add the pot roast, pepperoncini peppers, and butter.
Cover with a lid, place into the oven, and bake for about 1 1/2 - 2 hours or until the beef is fork-tender.
*Add more liquid if necessary during the cooking process.

This is a delicious and hearty meal we love to eat at home and it is also another one of my mom’s specialties – so she’s gonna oversee me a bit in this video to make sure I cook it just like she does. What I love about this recipe and about Tex-Mex or Mexican recipes in general is that they’re really pretty easy to make if you have a good recipe. Here is what we use:
1 ½ lb Cubed Sirloin
2 Russet Potatoes
½ an onion
⅓ green bell pepper
1 roma tomato
1 bay leaf
2 garlic cloves
2 tbsp of tomato sauce
3c chicken broth
APC OG & Comino to Taste
