How To make Beef and Vegetable Soup 2
BEEF STOCK: Made one day -ahead 5 lb Short ribs of beef
1 lg Onion skin left on
2 ea Whole cloves
3 ea Cloves of garlic
2 ea Stalk celery with leaves
1 lg Carrot
3 c Low/no sodium beef broth
VEGETABLES: 3 lg Carrots cut in 1/2 inch
-dice 2 lg Parsnips cut in 1/2 inch
-dice 2 ea Stalk celery cut in 1/2 inch
-dice 6 ea Sprigs fresh dill
1/2 lb Green beans 1 inch lengths
2 ea Leeks cut into thin strips
1/4 c Chopped parsley
1/4 c Chopped dill
Salt and pepper to taste Place short ribs in a soup pot. Halve onions and stud with cloves. Add garlic, celery, carrot and broth. Add water to cover by 1 1/2 inches. Cook, covered, for 1 1/2 hours or until meat is tender. Remove meat, cool slightly and shred from the bones, trimming and discarding all fat. Cool meat completely. Wrap well and refrigerate until ready to use. Discard bones. Strain stock, discarding solids, and cool completely. Refrigerate overnight. Remove and discard alll the fat that has risen to the top before using. To make soup, return defatted stock to large soup pot. Add diced carrots, parsnips, celery and dill sprigs. Bring to a boil slowly. Reduce heat and simmer, covered, for 15 minutes. Bring reserved meat to room temperature. Add green beans and leeks; simmer for an additional 10 minutes. Remove dill sprigs. Add reserved meat and half the chopped parsley and dill. Season with salt and pepper; cook 3-4 minutes more to heat through. Add remaining chopped parsley and dill, then serve steaming hot.

Simple Beef and Vegetables Soup
Ingredients:
3 or 4 lbs Stew Meat or Steak
1 15 oz. can Tomato Sauce
1 28 oz. can Crushed Tomatoes
1 14 oz. can of Petite or Rotel Tomatoes
Bag of Frozen Mixed Vegetables
1 can Sweet Peas
1 can Green Beans
1/2 Medium Onion chopped
1 Tablespoon of Onion Powder
1 Tablespoon of Garlic Powder
1/2 Tablespoon of Black Pepper
Water May Vary depending on the amount of soup you’re making. I used 3 bottle. Thanks
Salt To Taste
***Other vegetables can be added to your liking. Always Remember To Taste
and Adjust Seasonings***
Cook For 1 hour and then check your meat for desired tenderness.

* 1/2 large onion chopped finely
* 1 tbsp garlic paste
* 1 tbsp ginger paste
* 1 tbsp herb and spice blend
* 1 tsp salt
* 1/2 tbsp all purpose seasoning, or 1 small bouillon cube
* 2 tbs olive oil for sautéing beef
Stew ingredients:
* 4 tbsp sliced oil or olive oil
* 1/2 large onion thinly sliced
* 2 tbsp herb and spice blend
* 1/2 tsp curry powder
* 1/2 tsp all purpose seasoning
* pinch of salt
* 1/2 cup tomato paste, or 2 tbsp tomato paste with 1 tbsp beetroot purée
* 1 each red, yellow, and green bell peppers
* 1 cup chopped string or green beans
* 1/2 a small head of cabbage cut to bite sizes
* 1/2 cup beef broth or water (optional to thin stew up)

2 tbsp beef bouillon ( add a little at a time until you get the right taste)
1 onion
2 stalks celery
2 carrots
1/2 red bell pepper
thyme, rosemary, oregano

The Best Homemade Beef Vegetable Soup ~ Power Soup Recipe
INGREDIENTS:
3-5 pound beef roast - I used a chuck roast
2 cups beef broth
8 cups water
1 29oz can diced tomatoes
1 large diced onion
2-3 diced celery stalks
1 cup diced carrots
2 cups diced cabbage
1 bag corn
1 bag peas
1 bag lima beans
2 cups diced fresh green beans
2 cups diced potatoes
1 small can white beans or kidney beans
1 tsp. minced garlic
1 tsp. thyme
1/4 cup chopped parsley or 1 tsp. dried parsley
2 bay leaves
salt and black pepper
oil for searing
Preheat oven to 325 degrees
Season beef roast with salt and black pepper on
both sides. Sear in med high pan on both sides
for 2-3 minutes. Place in soup pot or roasting
pan.
Bake 2 1/2 to 3 hours until meat is almost fork
tender and then add beans/potatoes and bake for
another 30 minutes.
Remove from oven. Remove beef roast and let
rest for 15 minutes. Shred beef and return
to pan. Stir until combined.
Enjoy.
