How To make Berry Fine Baby Back Ribs
2 slabs baby back pork ribs, membraines removed -- <about 3#>
2 tablespoons Worcestershire sauce
DRY RUB 3 tablespoons brown sugar
1 tablespoon onion powder
2 teaspoons chili powder
1 teaspoon dry mustard
1 teaspoon salt
GLAZE 1 cup raspberry or strawberry jelly
1/4 cup water
1 tablespoon ketchup
3 tablespoons minced onion
2 tablespoons Worcestershire sauce
2 tablespoons cider vinegar
At least 3 hours and preferably the evening befoe you plan to smoke the ribs, mix the dry rub ingredients in a small bowl. Coat the ribs with the Worcestershire sauce. Massage the ribs with all but 2 tsp of the spice mixture, reserving the remaining rub. Place the ribs in a plastic bag and refrigerate them for at least 2 hours.
Bring your smoker to its appropriate cooking temperature. Remove the ribs from the refrigerator and let them sit at room temperature for 30 minutes.
Combine the glaze ingredients in a small saucepan. Warm the mixture over medium heat, simmering about 10 minutes. Reserve the glaze at room temperature .
Transfer the ribs to the smoker. Cook the meat until you can bend it easily between the ribs, about 2 3/4 to 3 hours at a temperature of 225 to 250. About 1 hour before the ribs are done, brush them thickly with the glaze; repeat the step in the last 15 minutes of cooking. The glaze will be sticky and caramelized in spots.
Let the slabs sit for 5-10 minutes before slicing them into individual ribs...serve.
Technique tip: Slabs of baby back ribs come with a thin membrane that covers their underside. It's not essential to remove the membrane, but spices sink more fully ino the meat when it's gone, and ribs slice more easily. Push a small knife tip under the membrane or scrape one of the rib bones until the tissue loosens. Work your fingers under the membrane and then strip it off in one or more sections. Okay, it's the only keto BBQ rub I've ever made, but it seems that everyone puts the word best in their titles. This is a great barbecue rub, and unlike many recipes out on the web, it's sugar free.
WARNING: do not use allulose as a sweetener in this rub. Allulose has a very low browning/caramelization point (below any temp you'd typically smoke at).

Grilled Country Style Boneless Pork Ribs - This is one of many easy to follow Low and Slow videos on hot to make Grilled Country Style Boneless Ribs using my Weber Kettle Grill. I will also be setting up my cook using a SnS Grills Slow n Sear for a long cook. The wood I will be using for flavor is a Cedar wood.
In the Oven:
You can bake them in a 250°F oven (line a baking pan with foil and cover the pan) for 90 minutes. Then, every 30 minutes or so, turn your ribs and paint them again with your favorite BBQ sauce.
Cook them for 3 - 5 hours

Cheshire Pork Baby Back Ribs with Apricot Chipotle BBQ Sauce
Cheshire Pork Baby Back Ribs:
Heat @KamadoJoe to 225 Degrees and add hickory smoking chips
Remove membrane from the back of the Ribs
Season Ribs generously with salt and pepper
Place rib-side down on the Kamado Joe and cook for 2 hrs
After 2 hrs, wrap the ribs in aluminum foil and place back on the grill for 1 more hr.
Open foil and coat generously with Apricot Chipotle BBQ Sauce. Cook for 1 hr.
Remove and let rest.

BBQ Sauce Ingredients:
6 oz Cheshire Pork Bacon, ends and pieces, coarsely chopped
1 Yellow Onion (medium), diced
1/2 TB Garlic, minced
6 oz Chipotle Peppers, diced (no stems)
5 oz Apricots, dried
1/4 cup Chili Garlic Sauce
1 cup Ketchup
1/4 cup Malt Vinegar
3/4 cup Orange Juice
1/2 cup Dark Brown Sugar
1 tsp Paprika
1 tsp Dry Mustard
1 tsp Kosher Salt
1 tsp Black Pepper
BBQ Sauce Recipe:
Sauté the bacon until almost crispy (about 4 minutes). Drain, leaving 1 TB of fat in the pot. Add the onion and sauté until browned, about 5 minutes. Add the garlic and sauté for another 5 minutes. Add the remaining ingredients and simmer until apricots are tender. Puree all with an immersion blender. Return to a low simmer for 10 minutes and let cool.

Blueberry Barbequed Baby Back Ribs
Serves 3–4
Ingredients
Blueberry Barbeque Sauce
1 jar (9.7 oz) blueberry jam
1 pack (6 oz) fresh blueberries
¾ cup apple cider vinegar
2 canned chipotle chilies in adobo
2 tsp. adobo sauce (from the can of chipotles)
1 ½ tsp. kosher salt
Rib Spice Rub
2 tbsp. kosher salt
1 ½ tsp. smoked paprika
1 tsp. ground black pepper
½ tsp. onion powder
½ tsp. garlic powder
¼ tsp. ground mustard
⅛ tsp. ground clove

1 rack baby back ribs
Directions
For the BBQ sauce:
1. Combine the Blueberry Barbeque Sauce ingredients in a nonstick saucepot. Bring to a simmer on the stovetop and cook just until the blueberries look swollen and ready to burst (15–20 minutes).
2. Remove from the heat. Transfer the ingredients to a blender and blend on medium speed until very smooth.
3. Portion the sauce into two separate cups and let cool.
NOTE: The Blueberry Barbeque Sauce can be made 1–2 days in advance and stored in the refrigerator.
For the Ribs:
1. Combine the Rib Spice Rub ingredients in a bowl and mix thoroughly and evenly.
Season the ribs evenly and generously with the rub on all sides. All the rub should be applied to the ribs.
2. Let the ribs marinate for at least 5 hours (preferably overnight).
3. Preheat the Air Fryer Oven to 300° F.
4. Cut the rib rack into two pieces and brush thoroughly with the Blueberry Barbeque Sauce.
5. Carefully place the ribs on a Crisper Tray or in the Round Basket. Cook for 15 minutes.
6. Brush the ribs with the Blueberry Barbeque Sauce again and rotate to ensure even browning. Cook for another 20 minutes.
7. Brush the ribs with the rest of the sauce before serving.
NOTE: The Rib Spice Rub can be made days in advance and stored in an airtight container away from heat and moisture.
