How To make Blue Cheese Stuffed Pork ChopsG
1/2 c Carrot
Shredded
1/4 c Pecans :
Chopped
1/4 c Cheese, Blue crumbled
1 Onions, Green :
sliced
1 t Worcestershire sauce
4 Pork loin chops
1/4 c Yogurt, Plain
4 ts Flour, All-purpose
3/4 c Milk
1/2 ts Instant chicken bouillon
ds Pepper
In a small bowl, combine carrot, pecans, blue cheese, green onion and worcestershire sauce for stuffing. Trim fat from meat. Make a pocket in each chop by cutting horizontally into the chop from the fat side almost to the bone. Spoon about 1/4 of the stuffing into each pocket. Fasten with wooden toothpicks if needed. Grill until brown and cooked through. In a small sauce pan, mix yogurt and flour. Add milk, chicken bouillon, and pepper. Cook and stir until thickening and bubbly. Cook and stir for 2 minutes more. To serve, remove the toothpicks, and serve sauce over chops. Original Posters Notes: From the Better Homes and Gardens "Grill It Right" cookbook. Got the book at Sam's about 4 months ago. Very good book. I fixed this because my wife LOVES blue cheese, any form, on or in anything <g>. I am so-so on it, but this is a very good recipe, and well worth the trouble to make the pockets and stuffing. Picky 13 year old (It's not a big mac) even ate it <g>. Stuffed Pork Chops - Food Wishes
I’ve never been a big fan of stuffing steaks and chops, since it makes the cut of meat trickery to cook, and the stuffing is almost always better cooked separately, and served alongside. But, I make an exception when it comes to these double-cut pork chops, especially when they’re being flavored from the inside-out with fresh peaches.

Cheesy Spinach Stuffed Pork Chops

Cheesy Spinach Stuffed Pork Chops
INGREDIENTS
Servings: 4
2 ounces cream cheese
½ cup mozzarella, shredded
2 tablespoons Parmesan, grated
Salt, to taste
Pepper, to taste
¾ cup frozen cooked spinach, thawed and squeezed out
6 1-inch thick pork chops
5 eggs
1 cups flour
3 cups panko breadcrumbs
Oil for frying
PREPARATION
1. Preheat the oven to 375℉ and heat 1-inch of oil to 375ºF in a deep pan.
2. Add the cream cheese, mozzarella, Parmesan, spinach, salt, and pepper to a bowl and thoroughly combine.
3. Season the top and bottom of the pork chop with salt and pepper, then slice a thin slit down the side of each chop.
4. Stuff each pork chop with an even amount of filling and press the edge to seal it.
5. Dip the chops in flour, then egg, then breadcrumbs, and back in the egg and breadcrumbs again.
6. Fry the chops until the breadcrumbs are golden brown, then transfer to a baking sheet and bake until the internal temperature reaches between 145ºF and 160ºF. Let rest for 3 minutes.
7. Enjoy!

I was sitting at a friend's house... it was a little chilly outside, so we were sitting at the kitchen table, enjoying an Irish Coffee or two. I was staring at her pears when it struck me... I haven't done a recipe with pears before!.
We came up with a few stupid ideas, and some downright boring... but the idea of a fillet stuffed with pears and using a creamy blue cheese to break the sweetness sounded delicious.
