The best oxtail recipe
Ingredients:
oxtail
2 tbsp vegetable oil
1 onion, diced
2 cloves of garlic, minced
2 cups beef broth
2 bay leaves1 tsp
thyme
Salt and pepper, to taste
Rosemary
onion and garlic powder
green capsicum
tomato
tomato paste
Instructions:
In a large heavy pot, heat the vegetable oil over medium-high heat.
Season the oxtail with salt and pepper and brown them on all sides in the pot.
Remove oxtail from the pot and set aside.
Add the onion and garlic to the pot and sauté until softened, about 5 minutes.
add tomato and tomato paste
Add carrots and capsicum
add onion and garlic powder, mixed herbs
add the beef broth
flour to thicken the sauce
Return the oxtail in the pot
add bay leaves, Rosemary thyme.
Bring the mixture to a boil, then cover the pot with a lid and cook on the stove for 2-2 1/2 hours on low heat, or until the oxtail is tender and falling off the bone
Remove the bay leaves and season with salt and pepper, to taste.Serve the oxtail with mashed potatoes or rice, and enjoy! #cooking #oxtails

Ox tails - salt, lawrys seasoned salt, onion powder, black pepper, garlic powder, beef stock, butter, lawrys garlic salt, EV olive oil.
Cabbage - salt, black pepper, garlic powder, worcheshire sauce, EV olive oil, lawrys seasoned salt, ketchup.
Carrots - EV olive oil, salt, black pepper, thyme leaves, honey, butter, lemon juice.
Rosemary gravy - butter, flour, black pepper, rosemary leaves, beef stock (from oxtails), onions, salt.

Oxtail Ingredients
3 lbs oxtail
2.5 lb beef neck bones
1 1/2 tbsp oxtail seasoning
1 tbsp vegetable seasoning or Mrs. Dash
1 tsp roasted garlic pepper seasoning
1 tsp salt free cajun seasoning
1 tsp white pepper
1 tsp ginger powder
coconut powder (optional)
1 tbsp ketchup
1 1/2 tsp low sodium beef bouillon
thyme
rosemary
5 allspice berries
salt to taste
Pepper jack Mac & Cheese
8 oz noodles cooked in chicken broth
8 z pepper jack cheese ( use a good quality brand)
1 shallot and herb boursin cheese
6-8 oz medium or sharp cheddar cheese
2 tbsp butter
1 tbsp flour
1/4 tsp Vegeta or chicken bouillon
garlic powder
salt
pepper
1/2 sazon packet
1/4-1/2 cup sour cream
1 1/2 cup milk
Bourbon Sweet potatoes
3 lb sweet potatoes cut into 1 1/2 in cubes
5 - 6 tbsp butter ( sometimes I use a whole stick even lol)
1/2 cup brown sugar
1 tbsp maple syrup
1 tsp vanilla
2-4 tbsp bourbon
1/2 tsp lemon extract
pinch salt
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp fresh grated nutmeg
Note: this recipe can also be made without the bourbon and it taste great!
Cabbage
1/2 cabbage
1/2 onion
2 tbsp butter
2 oz cajun sausage

Amazing Blazin Cajun Seasoning or salt free cajun seasoning

OLD SCHOOL OXTAIL STEW/SOUP
who doesn't love a big bowl of juicy,tender,flavorful oxtails
This is a hearty filling recipe to enjoy on a cold rainy fall or winter night
3 teaspoons kosher salt and white pepper
1 teaspoon freshly ground black pepper, plus more for seasoning
(2-pound) beef oxtails (trimmed)
3 tablespoons vegetable oil
1 medium yellow onion, small dice
1 small red bell pepper diced
1 small green bell pepper diced
1 small yellow bell pepper diced
12 oz tomato paste
4 cups (1 quart) low-sodium beef broth
8 oz baby carrots carrots
2 tsp chopped garlic
3 medium celery stalks(optional)
8 oz small Yukon gold potatoes
Place the oxtails on a pan and season well and set aside.
Heat the oil in a large, heavy-bottomed pot or Dutch oven over medium heat until shimmering. take about one-third of the meat and add it to the pot. Cook on all sides until browned all over, about 2 to 3 minutes. Remove to a large bowl. Repeat with the remaining oxtails in 1 more batches; set aside.(do not over crowd the pot when searing the meat)
Add the onions, bell peppers and garlic to the pot and season with salt and pepper. Cook, stirring occasionally, until softened and just starting to brown, about 5 minutes. Add the tomato paste, stir to coat the onion, and peppers and cook until the raw flavor has cooked off, about 1 to 2 minutes.
Pour in the beef stock, scrape up any browned bits from the bottom of the pot, and cook until the mixture has thickened, about 3 minutes.
Return the meat and any accumulated juices in the bowl to the pot. stir to combine. Increase the heat to high and bring to a boil. Immediately reduce the heat to low and placed covered in oven on 350 degrees for 1& 1/2 hours
after 1& 1/2 hours add potatoes and carrots and cook for 1 1/2 more hours or until meat is tender
serve with hot buttered rice and cornbread
