Recipe: Peach & Comté Grilled Cheese
A summertime spin on classic grilled cheese! This simple sandwich only uses few ingredients but delivers gourmet flavour. Recipe here:
Peach & Comté Grilled Cheese
Prep time: 15 min
Total time: 30 min
Serves: 4
2 tbsp (30 mL) butter, softened
8 slices sourdough bread, 3/4-in. (2-cm) thick
4 tsp (20 mL) apricot jam
4 tsp (20 mL) grainy mustard
16 slices Comté or Swiss cheese (about 5 oz/150 g)
1 ripe peach, pitted and thinly sliced
1/4 cup (60 mL) chopped toasted hazelnuts
Directions:
1. Spread butter on one side of bread slices. Mix jam and mustard; spread on non-buttered sides. Top 4 bread slices (on mustardy sides) with 2 slices cheese, peach, hazelnuts and remaining 2 slices cheese. Cap with remaining bread; buttered sides out.
2. Place sandwiches on grill preheated to medium. Cook, pressing down gently with spatula, 2 to 3 min. per side or until toasted and grill-marked. Turn off burner(s) directly under sandwiches and finish cooking over indirect heat for additional 3 to 5 min., or until cheese is melted.
Tip: Try grilling fruit and cheese combos such as apple and Cheddar, or provolone and pear.

Roasted Tomato Grilled Cheese Sandwich Recipe
Grilled cheese sandwiches with gooey melted cheese, summer roasted tomatoes, fresh basil and crispy buttery bread slices. One of the best breakfast or lunch ideas for summer days.

Ingredients
Makes about 4 sandwhiches
Roasted Tomatoes
9 oz (250g) cherry tomatoes, halved
2 garlic cloves, minced
1 tbsp (15ml) olive oil
1/2 tsp (2g) salt
Freshly ground black pepper
For the sandwhiches
1 1/2 cup (150g) cheddar cheese, grated
Butter, room temperature
Fresh basil leaves
8 bread slices
1. Prepare roasted tomatoes. Preheat oven to 375°F (190°C).
2. In a medium bowl, toss together tomatoes, garlic, olive oil, salt and pepper.
3. Place tomatoes to a baking sheet and spread into an even layer.
4. Bake for 25-30 minutes until tomatoes are roasted.
5. Prepare the sandwiches. Heat a nonstick pan over medium high heat. Spread butter on the sides of the bread. With butter side down, top with cheddar cheese, roasted tomato and basil leaves. Top with the other slice of bread, butter side up.
6. Place the sandwich on the pan and cook until the bottom is golden brown, for about 3 minutes. Flip, press with a spatula and cook the other side until crispy, golden brown and cheese is melted.
7. Serve immediately.

Grilled melted cheese toasted sandwich. What could be more like a food cuddle. So simple.
Cheese tips, when making your sandwich also use a non stick pan and lo n slow is the way to get a even colour and get your cheese melted. Thick bread is not good, your cheese has little chance to melt. Thin cut or grated cheese always works best. A big thick slice of cut cheese stands no chance of melting in time. Choosing your cheese, Mozzarella is as other similar cheese, stretchy and stringy, this works well. Cheddar, Emmental, Montery Jack, Gouda and others are smooth flowing melters and work great. There are a few non melters in the family, these include, Cottage cheese, ricotta, Indian Paneer and Feta. Goats cheese is not a great melter but is awesome and can be used. So get the right cheese, please stay away from them plastic wrapped bright orange bits of plastic, they really are not good, get your bread right and enjoy. There are so may combos you can work on, we have a few on our channel. Give them all a go.
