How To make Brunswick Stew1
1 pound chicken
3 quarts water
1 large onion
1/2 pound ham
lean :
in small piece
2 pints tomatoes
1 pint lima beans
4 large Irish potatoes diece
1 pint corn :
grated
1 tablespoon salt
1/4 teaspoon pepper
1 red pepper
3 ounces butter
Cut up a pound of Chicken and put it in a large pan with three quarts of water, one large onion, one half pound of lean ham cut into small pieces and simmer gently for two hours. Add three pints of tomatoes, one pint oflima beans, four large Irish potatoes diced, one pint of grated corn, one tablespoon of salt, one fourth teaspoon pepper, a small pod of red pepper. Cover and simmer gently for one more hour stirring frequently to prevent scorching. Add three onces of butter and serve hot. Note: ----- This makes a lot of stew. You will probably want to half or even quarter it, if want to try it before serving it to a group.

Grandaddy's Brunswick Stew: Decades Old Family Recipe
This recipe is decades old stemming back to my WWII Veteran Grandaddy. It's what some would call old country cooking! Here's the ingredient list:
- 1 Vidalia Onion Diced
- 1 stick of butter
- 2.5 lbs of peeled, uncooked, and ground potatoes
- 2.5 lbs of whatever meat you like. Precooked & ground.
- 32 oz of Chicken Stock
- 32 oz of Beef Stock
- 1 lb of uncooked Wampler's sausage
- 1 qt of crushed tomatoes
- 1 can of cream corn
- 8 oz block of sharp cheddar cheese
- 8 oz of Ketchup
- 8 oz of Whole Milk
Start by grinding all meats and potatoes. Keep them separate. Dice the onions.
Throw butter in the pot along with the onions and Caramelize the onions.
Once they are caramelized, cook sausage.
Once browned, add in potatoes and broth.
Cook until thickened and potatoes seem cooked.
Add tomatoes, ketchup, and corn.
Cook slowly until boiling.
Add in meat. Heat thoroughly.
Cut off the heat, add in the cheese, stir until melted.
Once no longer cooking (to avoid curdling), but still warm, add in milk.
Salt and pepper to taste.

Today Marie makes a great brunswick stew using some of the supplies from our prepping storage.
Brunswick Stew
1 can Chicken breast drained and shredded
1 can Castleberry Pork in BBQ Sauce
1 can Castleberry Beef in BBQ Sauce
3 cans petite diced tomatoes
2 cans cream style corn
¼ cup ketchup
¼ tbsp Worcestershire sauce
1 cup salsa
1 tsp salt
¼ tsp black pepper
Mix all ingredients in a crock pot and cook on low for four hours.
Serve and enjoy !!!

Mrs. Joan's BRUNSWICK STEW
1 c. chopped cooked pork (Some people also put cooked beef, I usually don't)
1 c. chopped cooked chicken
2 c. chicken broth
½ c. chopped onion
1 ½ c BBQ Sauce
1 c. corn (Pulsed quickly in food processor if whole kernel corn,
if cream corn, pulse not needed.)
1 jar Salsa
1 can tomato soup (or crushed tomatoes)
1 t. Worcestershire sauce
1 T. Hot Sauce or more to taste
1/4 t. mustard
½ t. lemon juice
Cook all together and simmer on low.
