How To make Capellini with Burst Cherry Tomato Sauce
1 lb Capellini or thin spaghetti
1/4 c Olive oil
3 pt Cherry tomatoes, washed
2 Garlic cloves
pn Red pepper flakes 1 t Oregano leaf
1/2 c Pitted & sliced olives
-(Italian, Greek, or canned) 1/2 c Grated Parmesan cheese
Heat olive oil in a large skillet or Dutch oven over medium high heat until very hot. Add all the cherry tomatoes and roll occasionally to, heat evenly. Cover with a lid and cook about 10-12 minutes, shaking pan or stirring once. Remove lid, and if tomatoes have not burst, continue to cook, pressing gently with the back of a spoon to mash. Add garlic, red pepper flakes, oregano, olives and salt to taste. Lower heat and continue to simmer for another 7-10 minutes. Cook and drain pasta. Top pasta with a generous ladle of sauce and Parmesan cheese. Serves four.

This burst cherry tomato sauce makes the perfect weeknight meal as you can prepare it in 15 minutes.
I love how simple and straightforward it is. I love the sweet smell of bursting tomatoes that fills the kitchen. But mostly, I love to sit at the table and share this summery meal with my family or friends, having a second serving because the juiciest tomatoes fall without fail to the bottom of the bowl.

Easy & Quick Spaghetti in Cherry Tomato Sauce
The quickest, easiest and tastiest spaghetti recipe you can whip up in 20 minutes. This spaghetti in a cherry tomato sauce involves a handful of ingredients and makes for a great weeknight recipe to have on those busy days. I end up making this atleast once a week, and always end up licking my plate. Fresh Italian basil leaves and good quality parmesan cheese takes it up a notch. And that starchy pasta water is the ultimate hack to make the spaghetti strands glossy and delicious! A must try!

200 g spaghetti
300 g cherry tomatoes
2 tbsp minced garlic
3 tbsp extra virgin olive oil
1 tbsp butter
1 tsp chilli flakes (adjust as per taste)
