How To make Cathe's Green Enchiladas
12 Corn tortillas (frozen),
-thawed 1/2 c Bacon grease (or oil)
4 tb Butter
2 c Monterey Jack, grated
-(8 oz package) 1/4 c Flour
3/4 c Onion, chopped
1 cn Chicken broth
1 Chicken bouillon cube
-dissolved in 6 oz Water
1 c Sour cream
4 oz Jalapenos, canned
Cook tortillas, one at a time, for 15 seconds in hot bacon grease or oil. Place 2 tablespoons of cheese and 1 tablespoon of chopped onion on each tortilla and roll up. Place seam-side down in 11 by 7.5 by 1.5-inch dish. Melt butter and blend in flour. Add chicken broth and bouillon/water all at once. Cook and stir in sour cream and peppers. Pour over tortillas and bake in 425 degree F. oven for 20 minutes. Add extra cheese and onion; bake an additional 5 minutes.

Tricia's Creations: TexasLady Casserole
Tonight I wanted something hearty and delicious for dinner. I make this casserole using an existing recipe and adding a few twists to it making it my own casserole.
TexasLady Casserole Recipe
Ingredients:
2 or 3 lg chicken breasts boiled and shredded or cubed (or 1 whole rotisserie chicken boned skinned and shredded)
1 10.5 oz can cream of chicken
1 10.5 oz can cream of mushroom
1 10 oz can rotel diced tomatoes with green chiles ( i used the hot)
1 2.5 oz can black olives
1/2 sliced or chopped large yellow onion
1 1/2 sliced or chopped bell pepper
1 1/2 cups melty cheese (ex: velveeta i used store brand)
1 8oz pkg shredded cheese (your choice, i used mexican blend)
1 can black beans drained and rinsed
1 8 oz sour cream (seperate 3/4 and 1/4)
1 lg bag of tortilla chips, doritos, or about 15 corn tortillas cut up
1/4 cup chicken broth
1/2 tsp salt
1/2 tsp pepper
1 tsp ground cumin
1 tsp garlic powder
1 tbs olive oil
olive oil spray
Instructions:
Preheat oven to 350 degrees farenheit
In a large pan add olive oil and saute on high onions and bell peppers till soft and transluscent about 5 minutes and season to taste, stir often. Add the can of rotel tomato and peppers.. drain if desired and allow to simmer on med heat for another 5 minutes. Add the black olives and mix well. Add the cream of mushroom and chicken.. stirring to mix well. Next add the cubed cheese and stir till melted. Add the chicken broth and the sour cream (using 3/4 or all of it). Mix all this till well combined to make a creamy cheese sauce.
Turn off heat. In a large casserole dish 9x13 inches, layer some of your chips or cut up tortillas. sprinkle chicken, beans, and then the creamy cheese sauce. Sprinkle a tiny bit of the shredded cheese if desired or save all for topping. Create a new layer till you have 3 or maybe even 4 layers. top with all the shredded cheese or any remainder. If you use chips .. crumble some up on top as well.
Place this in oven for 15 mins or till all cheese is melted and it's bubbling hot. Serve while hot topping with remaining sour cream if desired and ENJOY!
