Vegetable lasagna
Serves 6-8
Recipe in English:
Ingredients:
Red Sauce:
-Oil 1 tbs
-Lehsan (Garlic) crushed 1 tsp
-Pyaz (Onion) chopped 2-3 tbs
-Tamatar (Tomatoes) grinded 5 medium
-Dried parsley ½ tsp
-Laung powder (Clove powder) ¼ tsp
-Namak (Salt) ½ tsp or to taste
-Dried basil leaves ½ tsp
-Cheeni (Sugar) 1 tbs
-Kali mirch powder (Black pepper powder) 1 tsp or to taste
Ricotta Cheese Layer:
-Anday (Eggs) 2
-Kali mirch powder (Black pepper powder) ¼ tsp
-Dried oregano ½ tsp
-Namak (Salt) ¼ tsp or to taste
-Ricotta cheese 1 & ½ Cups
-Cheddar cheese grated 1 Cup
-Hara dhania (Fresh coriander) chopped 2-3 tbs
-Cooking oil 2 tbs
-Makhan (Butter) 1 tsp
-Lehsan (Garlic) crushed ½ tbs
-Pyaz (Onion) chopped 1 Cup
-Gajar (Carrot) cubes 1 Cup
-Mushrooms sliced 1 Cup
-Tomato puree 2 tbs
-Dried parsley 1 tbs
-Namak (Salt) 1 tsp or to taste
-Lal mirch (Red chili) crushed 1 tbs
-Dried oregano 1 tsp
-Corns kernel boiled 1 Cup
-Colored bell pepper cubes 1 Cup
-Bund gobhi (Cabbage) shredded 2 Cups
Assembling:
-Makhan (Butter) for greasing
-Prepared red sauce
-Lasagna sheets 1 packet (Boiled as per pack’s instruction)
-Prepared ricotta cheese layer
-Cooked vegetables
-Cheddar cheese grated
-Lasagna sheets 1 packet (Boiled as per pack’s instruction)
-Dried parsley
Directions:
For Red Sauce:
-In pot,add oil,garlic and mix well.
-Add onion and fry until translucent.
-Add grinded tomatoes,mix well and bring it to boil.
-Add dried parsley,clove powder,salt,dried basil leaves,sugar,black pepper powder,mix well and cook on low flame for 10 minutes and keep stirring in between & set aside.
For Ricotta Cheese Sauce:
-In bowl,add eggs,black pepper powder,dried oregano,salt and whisk well.
-Add ricotta cheese,cheddar cheese and mix until well combined.
-Add fresh coriander,mix well & set aside.
-In pot,add cooking oil,butter,garlic and mix well.
-Add onion and mix well.
-Add carrots,mix well and fry for 3-4 minutes.
-Add mushrooms and fry for 2 minutes.
-Add tomato puree,dried parsley,salt,red chili crushed,dried oregano and mix well.
-Add corns kernel,colored bell peppers,cabbage,mix well and cook for 2 minutes & set aside.
Assembling:
-Grease baking dish with butter,add and spread prepared red sauce.
-Place lasagna sheets,add prepared ricotta cheese layer and spread evenly.
-Add cooked vegetables,cheddar cheese,prepared red sauce and spread it.
-Add lasagna sheets,prepared ricotta cheese layer and spread it.
-Add cooked vegetables,cheddar cheese,prepared red sauce,lasagna sheets,prepared ricotta cheese layer,cheddar cheese and sprinkle dried parsley.
-Cover with aluminum foil and bake in preheated oven at 170 C for 15 minutes and uncovered for 10 minutes more.

-Grinded tamatar dal ker ache tarha mix karein aur ubal anay dein.
-Dried parsley,laung powder,namak,dried basil leaves,cheeni aur kali mirch powder dal ker ache tarha mix karein aur halki ancch per 10 minutes kliya paka lein aur bech bech mein chamcha chalatay rahein & side per rakh dein.
For Ricotta Cheese Sauce:
-Bowl mein anday,kali mirch powder,dried oregano aur namak dal ker ache tarhan whisk ker lein.
-Ricotta cheese, cheddar cheese dal dein aur combine hunay tak ache tarhan mix ker lein.
-Hara dhania dal ker ache tarha mix kareina & side pe rakh dein.
-Pot mein cooking oil,makhan aur lehsan dal ker ache tarhan mix karein.
-Pyaz dal ker ache tarhan mix ker lein.
-Gajar dal ker ache tarhan mix karein aur 3-4 minutes kliya fry ker lein.
-Mushroom shamil karein aur 2 minutes kliya fry ker lein.
-Tomato puree,dried parsley,namak,lal mirhc crushed aur dried oregano dal ker ache tarhan mix ker lein.
-Corns kernel,colored bell peppers or bund gobhi dal ker ache tarhan mix karein aur 2 minutes kliya paka lein & side per rakh dein.
Assembling:
-Baking dish ko makhan sa grease karein aur tayyar red sauce dal ker pheela lein.
-Lasagna sheets rakh dein aur tayyar ricotta cheese layer dal ker pheela lein.
-Tayyar vegetables,cheddar cheese aur tayyar red sauce dal ker pheela lein.
-Lasagna sheets aur tayyar ricotta cheese layer dal ker phela lein.
-Cooked vegetables,cheddar cheese,tayyar red sauce dal ker lasagna sheets rakh dein aur tayyar ricotta cheese layer,cheddar cheese dal ker dried parsley sprinkle ker lein.
-Aluminum foil sa cover karein aur preheated oven mein 170 C per 15 minutes aur uncovered mazeed 10 minutes kliya bake ker lein.

This is a high-protein, healthy vegetarian lasagna recipe with cottage cheese, ricotta, spinach, butternut squash, zucchini and mushrooms. There are a few simple prep steps involved but overall this is an easy lasagna without bechamel sauce and you can use a store-bought tomato sauce for extra convenience. How to Make Vegetable Lasagna
This vegetable lasagna is rich, cheesy and loaded with vegetables (zucchini, carrots, mushrooms and spinach). This recipe is pretty simple and the only thing you need is some patience. Layers of tender vegetables, rich tomato sauce, lasagna noodles and delicious white sauce (béchamel). For the béchamel sauce:
6 tablespoons (90g) Butter
2/3 cup (85g) Flour
3 cups (720ml) Milk, warm
2oz (60g) Parmesan cheese
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Nutmeg
Fir the veggie mixture:
2-3 tablespoons Olive oil
1 Large onion, chopped
3 Garlic cloves, minced
1 large Carrot, diced
2 medium Zucchini, chopped
5oz (140g) Spinach
5oz (140g) Mushrooms, chopped
Salt to taste
Basil, 5-6 leaves
Black pepper to taste
1 teaspoon Oregano
360z (1000g) Tomato sauce (RECIPE FOR HOMEMADE TOMATO SAUCE:

3oz (90g) Mozzarella

Directions:
1. Make the vegetable sauce: In a large pan or pot over medium heat, add olive oil and heat. Add chopped onion and sauté until golden, about 7-8 minutes. Add minced garlic and sauté for 1-2 minutes more. Add diced carrot, chopped zucchini and cook until the carrot are tender, abbot 6-7 minutes. Add mushrooms and cook for 5 minutes, add spinach and cook for 4-5 minutes.
2. Add tomato sauce, salt, pepper, oregano, and chopped basil leaves. Stir and cook for 5 minutes. Remove from heat and set aside.
3. Make the béchamel sauce: In a medium saucepan over low heat melt butter, when the butter is melted, add flour and whisk continuously, until smooth paste forms. Gradually add the warm milk while continually whisking to prevent lumps. Whisk until the sauce is smooth and thick. Remove from heat and add pinch salt, black pepper, nutmeg and parmesan. Whisk until smooth.
4. Preheat oven to 350F (180C).
5. Assembly: spread a thin layer of the vegetable mixture in the bottom of 13X9” (32X22cm) baking dish, layer pasta sheets, spread 1/3 of the vegetable mixture, then spread 1/3 of the béchamel sauce, on the top of the sauce sprinkle some mozzarella cheese. Repeat layering two more times (3 layers in total). Finish with béchamel sauce on top and sprinkle mozzarella and parmesan on top. Spray the bottom of an aluminum foil with cooking spray (to prevent from cheese to sticking) and cover the pan loosely.
6. Bake, covered for 40 minutes, remove the foil and bake another 15-20 minutes.
7. Let cool for 15-20 minutes before serving.
