These healthier peanut butter blossom cookies are made 100% from scratch, with homemade dark chocolate kisses.
These holiday cookies are gluten-free, lower in fat (I don't use any butter or oil), but still festive and delicious.

PEANUT BUTTER BLOSSOM COOKIE RECIPE
(makes 16 cookies)
Ingredients:
For cookies:
1 1/4 cups ground oats or oat flour (125g)
1/4 cup rice flour (37.5g)
1 tbsp tapioca starch or cornstarch
3/4 tsp baking soda
1 tsp salt
1/4 cup honey, maple syrup or agave (60ml)
1/4 cup unsweetened applesauce (65g)
1/2 cup natural peanut butter (125g)
1 egg
1 tsp vanilla extract
For chocolate kisses:
3 oz dark chocolate (85g)
2.5 tbsp heavy cream or coconut milk (35ml)
NUTRITIONAL INFO (per cookie):
129 calories, fat 5.4g, carb 15.1g, protein 4.8g
Preparation:
First, prepare the chocolate kisses. In a small bowl add the chopped dark chocolate and pour with a boiling hot heavy cream or coconut milk.
Let it sit for 2-3 minutes, then stir until smooth chocolate ganache is formed.
Now you should wait until the ganache is thick enough to be piped, and it depends on the chocolate you use. Then transfer the ganache into a piping bag, and pipe in shape of original Hershey kisses, it doesn't have to be perfect.
Let it set for 30 minutes at room temperature, and put it in the freezer while the cookies are baking.
Next, in a bowl, add room temperature peanut butter, your liquid sweetener and applesauce, beat with the mixer for 1 minute.
Add vanilla extract and egg, and continue to beat with a mixer.
In separate bowl combine all the dry ingredients, ground oats, rice flour, cornstarch, baking soda and salt.
Pour the dry ingredients into the wet ingredients, and mix with a mixer on low speed, until the dough starts to form.
Place the cookie dough in the fridge for 30 minutes to rest.
Scoop the cookie dough with tablepoon and roll with your hands, you'll end up with 16 equal balls.
Flatten into a cookie shape and transfer to a lined baking tray.
Bake cookies at 350F (180C) for 7 minutes.
While the cookies are warm, press a chocolate kiss into each cookie.
When completely cool, serve or store in your cookie box.

Healthy Peanut Butter Oatmeal Cookies - 2 ways

1st Method:
1 Egg
2 tbsp Honey
1/2 cup Peanut Butter
1/2 cup Oats
2nd Method:
1 Egg
2 tbsp Honey
1 cup Peanut Butter
1/2 cup Oats Flour
Directions
1st Method:
Whisk egg, honey and peanut butter.
Once the peanut butter is blended well, add oats and blend well.
Take small amount and give a cookies shape. Place it on baking tray.
Bake in pre-heated oven for 15-20 minutes.
I would suggest to bake 10 minutes and check in between.
2nd Method:
Grind Oats in a blender to make Oats Flour.
Whisk egg, honey and peanut butter.
Once the peanut butter is blended well, add oats flour and blend well.
Take small amount and give a cookies shape. Place it on baking tray.
Bake in pre-heated oven for 20-25 minutes.
I would suggest to bake 10 minutes and check in between.
