Instant Pot Chicken Broccoli Pasta Recipe
Full Recipe -
Ingredients
4 tablespoons extra virgin olive oil
1 cup broccoli florets (rinsed)
2 teaspoons minced garlic
½ cup chopped onions
½ pound boneless skinless chicken breast (250 g, cut into ½-inch pieces)
1 and ½ cups chicken broth
1 cup unsweetened heavy cream
¼ cup cream cheese
½ teaspoon salt
1 teaspoon dried oregano
1 teaspoon red pepper flakes
8 ounce uncooked bow-tie pasta (250 g, or any other pasta of your choice)
¼ cup grated parmesan cheese
¼ cup chopped fresh parsley
Instructions
Press SAUTE button on the instant pot.
Add extra virgin olive oil to the pot.
Once the oil is hot, add broccoli florets and saute for a minute. Transfer the florets to a plate and set them aside.
Add garlic, onions, and chicken, and saute for a minute or until the chicken is pale white in color, stirring frequently.
Now add chicken broth, heavy cream, cream cheese, salt, oregano, and red pepper flakes and stir nicely.
Add pasta to the pot and stir to mix. Push the pasta gently downwards, just enough to submerge it into the broth.
Close the lid of the instant pot and set the valve to the sealing position.
Press PRESSURE COOK and set the timer to 3 minutes at high pressure for al dente pasta. Cook for extra 1-2 minutes for slightly more cooked pasta.
Once the timer goes off, do a quick pressure release.
Open the lid and add sautéed broccoli, parmesan cheese, and parsley and mix gently.
Taste the sauce and adjust for salt and pepper. Serve!
Notes
I made this pasta recipe in my 6-quart instant pot but if you want to double the recipe, then use an 8-quart instant pot. The time of cooking will remain the same.
To make this recipe vegetarian, skip adding chicken and replace the chicken broth with veg broth.

Slow Cooker Sunday: Jen's Chicken and Pasta Soup Recipe
In this video, I've shared my chicken and pasta soup recipe with you. I think you will enjoy this hearty soup made with simple ingredients. The chicken is so tender from slow cooking all day. It tastes even better reheated the next day. I love making enough to have leftover soup for lunches throughout the week. You can easily make this gluten free, if needed.
Jen's Slow Cooker Chicken and Pasta Soup
8 cups chicken broth
4 large frozen boneless skinless chicken breasts
1 cup chopped onion
4 medium sliced carrots
2 cloves garlic, minced
2 bay leaves
1 teaspoon dried thyme
1/4 cup fresh flat leaf parsley, coarsely chopped
4 teaspoons salt
1/2-1 teaspoon freshly ground pepper
2 cups small shell pasta
Place chicken in slow cooker. Pour all other ingredients except pasta over chicken. Cook on high for 6 ½ to 7 hours. Remove chicken and coarsely chop. Add chicken back to slow cooker. Adjust seasonings, if desired. Add 2 cups small shell pasta and continue to cook for 30-45 minutes.

Lemon Garlic Herb Pasta with Grilled Chicken Recipe | Easy Pasta Recipe
Don't feel like making dinner tonight? This takes less than 30 minutes and is so easy you can basically do it with your eyes closed. Well, maybe not closed, but you get what I'm saying. My lemon garlic herbed pasta is so rich with flavor, your family will think you spent forever prepping it. A simple dressing with ingredients you already have on hand and pasta is really all you need! Add the chicken and the greens and you take it up another notch! Even though I love cooking, I have many nights where I just don't wanna move off the couch and making dinner seems overwhelming. When I have those days, I make this. Not only is my lazy habits satisfied but so is my stomach.

SLOW COOKER CHICKEN & VEGGIES :

| Ingredients |
1/2 Pound Spaghetti or Pasta of your choice
Dressing:
3/4 Cup Extra Virgin Olive Oil (Good Quality)
3 Cloves Garlic, Minced
4 Tablespoons Lemon Juice (Fresh is Preferred)
1 Tablespoon Dijon Mustard
1 Tablespoon Italian Seasoning
1 Teaspoon Garlic Powder
1 Teaspoon Salt
1/2 Teaspoon Black Pepper
1/4 Teaspoon Cayenne Pepper
Greens:
8-10 Fresh Basil Leaves
1/4 Cup Italian Parsley, Chopped
1/2 Cup Fresh Spinach
Chicken:
3 Boneless Skinless Chicken Breasts
Season with - 1 Teaspoon Garlic Powder, 2 Teaspoons Italian Seasoning, Pinch of Cayenne, Salt and Pepper to taste.
| Directions |
Season both sides of chicken breasts with garlic powder, Italian seasoning, cayenne pepper, salt and pepper to taste. Grill until chicken is fully cooked reaching and internal temperature of 165 degrees F. Allow to set 5 minutes then slice into strips. Set aside.
Cook Pasta according to package instructions.
Meanwhile prepare the dressing by combining the olive oil, fresh garlic, lemon juice, Dijon mustard, and all seasonings. Shake or whisk well until creamy. Set aside.
Drain cooked pasta and return it to its pot. Add the dressing and greens. Stir well. The heat of the pasta will start to wilt the greens. Add chicken, stir, and serve immediately.
