How To make Chicken, Corn, and Zucchini Saute
-JUDI M. PHELPS 2 ts Olive oil
1 oz Canadian bacon
diced
1 Zucchini :
cut into thin
rounds 1/2 lb Mushrooms :
thinly sliced
1 lb Boneless chicken breasts
-skin removed, cut into -large chunks 1 tb Flour
1/2 c Apple cider or
1/2 c Natural apple juice
1/2 ts Salt
1 c Frozen corn kernels
2 tb Fresh parsley -- chopped
-optional
In a large nonstick skillet, heat the oil until hot but not smoking over medium heat. Add the bacon, and cook until lightly crisped, about 2 minutes. Stir in the zucchini and mushrooms, cover, and cook until the vegetables begin to soften, about 5 minutes. Stir in the chicken and flour and cook, uncovered, stirring frequently, until the chicken is lightly browned, about 2 minutes. Add the cider and salt. Bring to a boil over medium-high heat, reduce to a simmer, cover, and cook until the chicken is cooked through, about 4 minutes. Stir in the corn and cook, uncovered, until the corn is just heated through, about 2 minutes longer. Spoon the chicken and vegetables onto 4 plates, sprinkle with the parsley, and serve. 1 pc chicken leg
0.5 pcs corn cobs
0.5pc zucchini
1 pc carrot
0.5 teaspoon black sesame seeds
For the marinade:
25 ml olive oil
25 ml soy sauce
25 ml lemon juice
1 teaspoon dried herbs
1 teaspoon salt
1 clove of garlic
Grease the chicken leg with marinade and leave for 30 minutes.
Cut the zucchini and corn into slices. Cut the carrots into long strips.
Place chicken and vegetables on foil dipped in olive oil. Brush with the remaining marinade, sprinkle with black sesame seeds. Wrap and bake in the oven for 40 minutes at 180 ° C. Then open the foil and bake in the oven for 15 minutes.

INGREDIENTS:
1 to 1 1/2 pounds cubed boneless chicken thighs
1 package button mushrooms - cleaned and quartered
1 1/2 cups sliced zucchini
1 tbsp. minced garlic
1 tbsp. minced ginger
slurry - 1 tbsp. cornstarch and 2 tbsp. water
Chicken marinade:
2 tbsp. light soy sauce
1 tbsp. Chinese cooking wine
1 tbsp. sesame oil
2 tbsp. cornstarch
*Mix with chicken and let marinate for 30 minutes
Sauce:
1/2 cup chicken broth or water - I added 1/4 tsp. Better Than Bouillon Chicken to 1/2 cup water
1/4 cup light soy sauce
2 tbsp. oyster sauce
1 tbsp. Chinese cooking wine or rice wine vinegar
1 tbsp. brown sugar

Spicy Chinese Chicken & Zucchini Stir Fry Recipe
INGREDIENTS:
1 pound cubed boneless chicken breast
1/4 tsp. salt
1 egg white
3-4 tbsp. cornstarch
*Mix above ingredients well
Fry chicken in batches for 3-4 minutes or until golden brown.
Drain on paper towel.
SAUCE:
3/4 cup water or broth
2 tbsp. light soy sauce
2 tbsp. oyster sauce
2 tbsp. garlic chili sauce
1 tbsp. sugar
2 tsp. cornstarch
*Mix above ingredients well
2 sliced carrots
2 sliced celery stalks
4 green onions - whites and greens separated
1 small zucchini or about 2 cups diced
4-5 cloves sliced garlic
oil
In a wok or deep skillet on medium high heat add oil, garlic, carrots, celery and the whites of the garden onions.
Cook and stir for 2-3 minutes.
Add zucchini, cook and stir another 2 minutes.
Add sauce and bring up to a boil and cook for 30 seconds.
Add cooked chicken into wok, stir to get chicken thoroughly coated and its ready!
Serving with steamed jasmine rice. Enjoy.
