flour, all-purpose
1/3
cup
cooking oil

water

smoked sausage links, fully cooked, sliced 1/2 inch thick
2
cup
chicken, cooked, chopped
2
cup
okra, sliced OR one 10 oz package frozen
1
cup
onion, chopped
1/2
cup
green pepper, chopped
1/2
cup
celery, chopped
4
each
garlic cloves, minced
1
teaspoon
salt
1/2
teaspoon
pepper
1/4
teaspoon
red pepper
1
rice, cooked, hot
Directions:
For roux, in a heavy 2 quart saucepan stir together flour and oil till smooth. Cook over medium-high heat 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir constantly about 15 minutes more or till a dark, reddish brown roux forms. Cool.
In a 3 1/2, 4, 5, or 6 quart crockery cooker place water. Stir in roux. Add sausage, chicken, okra, onion, green pepper, celery, garlic, salt, pepper, and red pepper. Cover; cook on low-heat setting for 10-12 hours or on high-heat setting for 4 1/2 to 5 hours. Skim off fat.
Serve over rice. Makes 6 servings.

Here is a simple and delicious way to make a chicken and sausage gumbo.
Gizzards, okra, chicken liver are all meats that could be added as well but I decided to
keep everything simple.
Serve over white rice and a few more dashes of gumbo file at the table.
Ingredients:
6 C water or chicken stock
1 1/2 C diced onion
1/2 C bell pepper
1/4 C Rotel
1 cut up whole chicken (ribs and backbone removed, skin removed on half of the chicken)
4 oz of your favorite smoked sausage
1/3 C roux or (1/2 C roux would make for a thicker gumbo)
1 bay leaf
1/2 TBS salt
1/2 TBS dry diced onion
1/2 TBS paprika
1/2 TBS + 1/2 tsp garlic powder
1/2 TBS browning sauce
1 tsp Cajun seasoning
1/4 tsp cayenne
3/4 tsp gumbo file
1 chicken bouillon cube
Add all ingredients to crock pot and cook on high for 6 hours.
For the last 30 minutes of cooking add 4 TBS fresh green onion tops and 1 TBS fresh parsley

1 lb. Chicken Thighs chopped - (or chicken breast )
Kosher Salt and Black Pepper (to taste)
12 oz. Andouille (sliced into ¼ inch slices)
½ cp. Vegetable Oil (or Peanut Oil)
½ cp. Flour
1 medium Bell pepper chopped
1 medium Onion chopped
1 medium Celery Stalk chopped
3 cloves Garlic chopped
1 cp. Okra (I used frozen)
2 tbsp. Cajun Seasoning (or more to taste)
6 cps. Chicken Stock
3 Bay Leaves
4 tbsps. chopped Parsley + more for serving
1 tbsps. Filé powder (or to taste)
Cooked White Rice (to serve)

How to make crockpot gumbo (chicken and sausage gumbo)! I show you how to make a roux on the stove and then combine the chicken, sausage, bell peppers, celery, onion, garlic, seasonings and chicken stock in the crockpot. My recipe is on the mild side, but if you like your gumbo spicy, feel free to increase the cayenne pepper! This easy Slow Cooker gumbo makes a great dinner recipe!

Chicken and Sausage Gumbo
3/4 Cup of Canola Oil
1 Cup of All Purpose Flour
1 Large Bell Pepper
2 Stalks Celery
3 tsp Minced Garlic
1/2 Cup Green Onion Chopped
1/4 Cup Chopped Parsley
1 lb Chicken Thighs cubed
1 lb Smoked Sausage
1 12 oz Bottle of Beer
6 Cups Chicken Stock
1 Tbsp Cajun Seasoning
3 tsp Paprika
1 tsp Onion Powder
1 tsp Garlic Powder
1 tsp Cayenne Pepper
2 tsp Oregano
1 tsp Thyme
2 Bay Leaves
3 Cups Cooked Rice
Heat a dutch oven to a medium heat. Add the oil and flour and stir continuously for 10 to 15 minutes till the flour has become a chocolate color. ( refer to video at 1:56 if this your first time making a roux). Add vegetables and cook for 5 minutes. Add Garlic and cook for 3 minutes. Add the herbs and 1/2 of the seasonings. Do not add the parsley here. Mix and cook for about a minute and add the beer. Mix well til it thickens and let cook for 3 minutes to cook the alcohol out of the beer. Add the chicken stock and mix well. Bring to a boil, cover and drop to a simmer for 45 minutes.
In the mean time heat 2 tablespoons olive oil in a frying pan to a medium high heat and add the chicken and sausage. Add a 1/4 of the leftover seasoning and sear for about 4 minutes and then add to the gumbo. Cover and simmer for another 45 minutes.
After 45 minutes uncover and skim the oil off of the top of the gumbo with a spoon.
Cook you some long grain rice. When the rice is done, add the parsley to the gumbo and serve.
