How To make Chicken Breasts with Lemon
1/2 cup flour
(for dredging)
salt and pepper :
to taste 4 chicken breasts skinless, boneless
2 tablespoons olive oil
4 sprigs thyme :
(1 tsp dried)
2 tablespoons shallots finely chopped
2 teaspoons garlic :
finely chopped
2 teaspoons lemon rind grated
3 tablespoons lemon juice
1/2 cup chicken broth :
fresh or canned
2 tablespoons butter or margarine
Season flour with salt and pepper, and dredge the chichen all over. Shake off excess flour.
Heat the oil in a heavy skillet large enough to hold the chicken pieces in one layer. Add chicken and cook, uncovered, over medium heat for 5 minutes or until lightly browned.
Turn the chicken and cook for 5 more minutes, or until cooked through. Carefully remove the oil from the skillet, leaving the chicken. Discard the oil.
Add the thyme, shallots and garlic, and cook for about a minute. Do not burn the garlic. Add the lemon rind, the lemon juice and the broth.
Scrape the skillet to dissolve the brown particles that cling to the bottom. Add the butter, and cook for 3 minutes longer.

*RECIPE* (2 servings)
INGREDIENTS
1 lb/450g chicken thighs/chicken breasts
3 tbsp olive oil
3 garlic cloves
Optional: fresh parsley and lemon zest
— marinade —
1/2 tsp salt
1 tsp crushed black pepper
1 tsp oregano/mixed herbs
1/2 tsp cumin powder
Juice 1/2 lemon
METHOD:
1. Cut 1 lb/450g chicken thighs or chicken breasts into bite sized pieces about 1 inch thick
2. Add the marinade ingredients to the chicken, mix well and set aside for 30 minutes to 1 hour
3. On medium flame, heat 3 tbsp olive oil and infuse 3 crushed garlic cloves
4. Add the chicken without overcrowding the pan. This way they will brown well
5. Sear on all sides until browned and cooked through. Chicken thighs will be ready in 5-6 mins and chicken breasts in 3-4 mins
6. Optional: Garnish with some fresh parsley and lemon zest

SUBSTITUTES:
• No lemons?
1 tbsp lime juice can be substituted. Avoid lime zest however
• No cumin powder?
Skip it
• No oregano or mixed herbs?
Dried thyme, rosemary, tarragon, sage, mint and dill work well too
• No fresh parsley?
Fresh cilantro/coriander works well too

TIPS:
• The chicken can be chopped and tossed into salad, sandwiches, wraps and pasta
• Don’t overcook the chicken or it will get too tough
• The salt and lemon quantity might change depending on taste. The amounts mentioned will be suitable for most but adjust at the end if needed

Juicy and tender lemon pepper chicken breast ????
This is the easiest lemon pepper chicken breast recipe you will ever find.
It’s also the best way to make chicken breast IMO.
I’m a dark meat chicken girl but this is my favorite way to prep chicken breast.
It comes out juicy every single time. Perfect for salads, grain bowls, taco bowls or on its own!
Here’s what you need:
3 chicken breasts, pounded until even
1 tsp lemon pepper seasoning, any brand works fine
1/2 tsp of Herb de provence or Italian seasoning or your favorite dried herb (rosemary, thyme, oregano etc.)
Salt to taste* optional (not much, lemon pepper is salty)
1 tbsp of Olive oil or grappled oil for searing
1 tbsp of butter for basting
1 tbsp of water, to steam the chicken breast
Use your favorite non stick skillet with matching lid

1 Chicken Breast - 1 lb - cut into bite size pieces
1 Tbsp Soy Sauce
Salt and pepper to taste
1 Egg - Medium size
3 Tbsp Corn starch
For the sauce:
1 Cup Chicken stock
1/4 Cup lemon juice (Approx. 2 lemons)
2 Tbsp Sugar
1 Tbsp Honey
3 Tbsp Slurry - Equal parts corn starch mixed with water

Creamy Lemon Chicken
Crispy pan fried golden chicken in a delectable creamy lemon sauce. So simply, SO GOOD!

CREAMY LEMON CHICKEN
INGREDIENTS:
2 chicken breasts , around 10oz/300g each
Salt and pepper
1/4 cup flour
1 tbsp olive oil
1 1/2 tbsp butter (salted or unsalted)
1 - 2 garlic clove, minced
1 1/4 cups chicken broth/stock
3/4 cup heavy / thickened cream
3 - 4 tbsp lemon juice (adjust to taste, start with 3 tbsp)
2 tsp Dijon mustard
3/4 cup freshly grated parmesan cheese
TO SERVE
Pasta of choice
Finely chopped parsley
INSTRUCTIONS:
1. Slice chicken breast horizontally to create two thin steaks (so you end up with 4 thin steaks in total).
2. Sprinkle each side with salt and pepper, then coat with flour, shaking off excess.
3. Place butter and oil in a large skillet over medium high heat, heat until butter melts. Swirl to mix the two together.
4. Add chicken and cook the first side until golden, then turn and cook the other side until golden and just cooked. Remove onto a plate.
5. Add a touch of oil if your pan is dry - but you shouldn't need it. Add garlic, stir quickly, then add chicken broth, cream, lemon and Dijon mustard. Bring to simmer and scrape the bottom of the pan to dissolve brown bits into the liquid. Use a whisk if needed to smooth sauce.
6. Add parmesan then simmer rapidly for 2 - 3 minutes or until sauce thickens slightly. Add salt, pepper and adjust lemon to taste.
Optional: Return the chicken to the pan (pour in any juices on the plate too), turn to coat.
7. Place chicken on serving plates with pasta or mashed potatoes. Sprinkle with fresh parsley if using. Pour lemon cream sauce into a sauce jug and serve on the side.
