LEMON CORIANDER CHICKEN SOUP

RECIPE DETAILS
Lets make the broth...
heat water 1 litre
tej patta 2
star anise 1
peppercorns 8-10
salt 1tsp
cover & bring to a boil
chicken on bone 250 gms
simmer for a few minutes
remove scum as shown
please do not skip this step
shut the lid
cook for 30-45 mins on low flame
remove the chicken pieces
strain the stock & save it
You can store in airtight glass container & refrigerate uptil a week OR freeze in smaller quantities to store for longer.
debone & shred the chicken as shown
lets make the soup!
in a small pan, heat oil 1 tsp
garlic chopped 1 tsp
ginger chopped 1 tsp
green chillies chopped 1 tsp
saute till fragrant
add shredded chicken 1 cup
saute a bit & add prepared chicken stock 2.5 cups
add salt to adjust but please remember stock is little salted.
add pepper 1/2 tsp
bring to simmer
add fresh chopped coriander 2 tbsp & fresh squeezed lemon 1 tsp
rest for 5 minutes
serve hot!!

LEMON AND CORIANDER SOUP
Ingredients
Zest of 1 lemon
Juice of ½ lemon
2 tablespoons chopped fresh coriander leaves
3 cups vegetable stock
1 tablespoon oil
1 tablespoon chopped garlic
2-3 spring onion bulbs, sliced
5-6 button mushrooms, cut into quarters
1-2 stalks spring onion greens, sliced
¼ cup shredded cabbage
Salt to taste
Crushed black peppercorns to taste
Method
1. Heat oil in a deep non-stick pan. Add garlic and sauté till golden brown. Add spring onion bulbs and button mushrooms and sauté for 2 minutes.
2. Add vegetable stock and mix. Add spring onion greens and cabbage and mix. Add salt and crushed peppercorns, mix and bring the mixture to boil.
3. Grate lemon zest, mix and cook for 1-2 minutes. Switch off heat, add lemon juice and coriander leaves and mix well.
4. Serve hot.
