How To make Chicken with Apples and Bacon
3 slices turkey bacon
chopped
12 chicken thighs without skin
2 sm onions :
halved & sliced
1 1/4 c apple juice
2 Granny Smith apples -- peeled and sliced
1 tbsp dijon mustard
1 tbsp balsamic vinegar
1 tsp dried thyme
1 tsp salt
1/2 tsp pepper
1 1/2 tsps cornstarch
In a large pot, cook bacon over medium heat until browned and crisp, about 3 minutes. Transfer bacon with a slotted spoon to a piece of paper towel to drain. Discard all but 2 tsp of fat from pan. Add half of the chicken and brown well, about 2 minutes per side. Remove to a plate and repeat with remaining thighs.
Reduce heat to medium-low and add onions to pan. Cook, scraping up browned bits at bottom of pan, until onions are browned and beginning to soften, about 4 minutes. Add apple juice, apples, mustard, vinegar, thyme, salt, pepper and reserved bacon and chicken thighs to pan. Cover, reduce heat to low and simmer gently, stirring occasionally, until chicken is no longer pink in center, 20 to 25 minutes.
In a small bowl, stir cornstarch together with 2 tsp water; stir into sauce. Cook until sauce thickens, about 1 minute.

My boys were interested to try fried apples and onions which is from the book “Farmer Boy”.
It is a very simple recipe with few ingredients but tasted delicious!!!
The caramelized onions with the sweetness of the apple and saltiness of the bacon were delightful flavours.

Sheet Pan meals are my favorite! Especially when I’m cooking for the family or for a busy week ahead, being able to throw everything together in one pan makes it so easy to cook and clean up. This recipe has all those warm flavors that get you in the mood for Fall. ????
Recipe Below????????
2 cups chopped Brussels sprouts
2 fuji apples, chopped
1 large sweet potato, diced
2 shallots, chopped
2 large chicken breasts, chopped
4-6 slices bacon, chopped
2 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp salt & pepper
1 tbsp thyme
1 tbsp sage
1 tbsp rosemary
Heat oven to 450°. Line a large baking sheet with foil. Chop up all of your ingredients and add everything to the pan. Drizzle with olive oil and red wine vinegar then top with your seasonings. Once everything is added, mix it around with a spatula. You can combine everything in a large bowl beforehand and mix together if you prefer, but this works also! Place the baking sheet in the oven and set a timer for 25 minutes. Check to make sure that the chicken and bacon have cooked all the way and then remove from the oven and let r4est for 5 minutes. Distribute everything out into four meal prep containers and enjoy throughout the week! Can be served cold or heated in the microwave.

4 CHICKEN BREAST FRIED
I mixed one egg, 1/2 cup milk, dipped each piece into the egg bath then rolled it if flour, cooked until done.
3 APPLES PEELED AND SLICED
1/2 ONION CUT INTO QUAETERS
1/2 CUP BROWN SUGAR
1/2 CUP CHICKEN STOCK
8 SLICES OF BACON CHOPPED AND COOKED IN 1/2 STICK BUTTER. IN THE SAME PAN WITH THW CHICKEN GREESE.
1/3 SLICED ALMONDS ARE OPTIONAL
WHEN APPLES ARE SOFT ADD THE CHICKEN BACK INTO THE PAN, COOK FOR 15 MINUTES.

French Chicken Casserole with Apples and Apple Cider | Delicious Creamy Chicken Recipe
This French Chicken Casserole is going to be your new seasonal favourite. Chicken thighs and legs slowly braised in apple cider and served with fried apple wedges are as scrumptious as it sounds.
Chicken casserole is an incredibly general term and basically means chicken cooked slowly in the oven until tender. A good casserole is always what I go to when I want a true comfort food for dinner.
What you add to that chicken will make all the difference, and in my case I went with a French recipe for Chicken a la Normande. In this recipe chicken thighs and legs are slowly braised in a dry apple cider. Can you just imagine the aroma that is going to fill your house?!
INGREDIENTS
1 tbsp olive oil
2 lbs chicken thighs and legs
salt
4 shallots diced or one medium onion
1 rib celery diced
4-5 thyme sprigs
2 cloves garlic minced
125g/4 oz bacon lardons or 6 strips of bacon, chopped
2 tbsp brandy or whiskey
2 tbsp flour
85 ml/1/3 cup chicken stock
400ml/1 1/2 cups hard dry apple cider such as Strongbow
2 apples peeled, cored and cut into wedges
125ml/1/2cup double cream/heavy cream
