For this passion fruit hot sauce you'll need...
1 cup passion fruit puree
1/2 cup white vinegar
2 tablespoon honey
1/2 teaspoon salt
12-14 scotch bonnet
* feel free to add a couple cloves of garlic and some chopped cilantro if you'd like to play around with the flavors a bit. Some fresh lime or lemon juice would be ideal as well.

Grilled Chicken Sizzler with Garlic Pepper Sauce | Restaurant Style Sizzler | Chef Sanjyot Keer
Full written recipe -
Ingredients:
• Chicken boneless 1 kg (breast & thigh)
• For marination:
1. Salt & black pepper powder to taste
2. Ginger garlic paste 1 tbsp
3. Light soy sauce 1 tbsp
4. Lemon juice 1 tsp
• Oil for grilling
Methods:
• Wash the chicken well, now, thinly slice the chicken breast keeping the knife diagonally, further divide the big chicken thigh piece in two halves.
• Transfer the sliced chicken in a mixing bowl, add the marinated ingredients and mix well, keep it marinated for 15-30 minutes.
• After marinating, set a grill pan or any pan on medium heat, add oil and grill the chicken slices on both the sides until cooked and tender, make sure the pan is hot enough while grilling. serve hot on a sizzler platter along with its other components.
Tip: Try to grill the breast and thigh separately as thigh takes longer time to cook compared to breast.
For garlic pepper sauce
Ingredients:
• Oil 2 tbsp
• Onions 1/4th cup (chopped)
• Garlic ½ cup (chopped)
• Ginger 1 inch (chopped)
• Green chillies 2-3 nos. (chopped)
• Refined flour 2 tbsp
• Hot water/chicken stock 1.5 litres
• Soy sauce 1 tbsp
• Ketchup 2 tbsp
• Salt to taste
• Peppercorns 1 tbsp (freshly grounded)
Methods:
• Set a wok on medium heat, add oil, onions, garlic, ginger and green chillies, stir & cook for 3-4 minutes.
• Low down the flame and add, refined flour, stir and cook for 2-3 minutes, further add hot water/chicken stock, add the stock gradually while stirring continuously.
• Further add soy sauce, ketchup, salt to taste and freshly grounded black peppercorns, mix and cook until the sauce thickens.
Tip: prefer to grind the black pepper corns fresh and keeping them coarse to get its distinct flavour.
• Garlic pepper sauce is ready, serve hot on a sizzler platter along with its other components.
For sautéed veggies
Ingredients:
• Oil 1 tsp + butter 1 tbsp
• Garlic 1 tbsp (chopped)
• Veggies:
1. French beans 1 cup
2. Carrots 2 nos. (batons)
• Red chilli flakes 1 tsp
• Salt & Black pepper powder to taste
• Sugar a pinch
• Lemon juice 1 tsp
• Light soy sauce 1 tsp (optional)
Methods:
• Set a wok on low heat, add oil & butter, add garlic, stir and cook for 1-2 minutes on low flame.
• Further, increase the flame to high heat, add the veggies, red chilli flakes, salt & black pepper powder to taste, sugar a pinch, lemon juice and light soy sauce, stir and cook for 1-2 minutes on high heat.
• Sautéed veggies are ready, serve hot on a sizzler platter along with its other components.
For herbed rice
Ingredients:
• Oil 1 tbsp + Butter 1 tsp
• Oregano/Mixed herbs 1 tsp
• Fresh coriander/parsley 2 tbsp (chopped)
• Cooked rice 5 cups
• Salt & black pepper powder to taste
Methods:
• Set a wok on medium heat, add oil & butter, oregano mix and freshly chopped coriander leaves and sauté briefly for a minute.
• Add the cooked rice and salt & pepper to taste, toss well and cook for 2-3 minutes. Herbed rice is ready, serve hot on a sizzler platter along with its other components.
Assembly
Ingredients:
• Sizzler pan
• Cabbage leaves
• Grilled chicken
• Herbed rice
• Homemade french fries
• Baby capsicum Mashed potato cup
• Caramelized onions
• Sautéed veggies
• Garlic pepper sauce
Methods:
• Heat the sizzler plate until its smoking hot.
• Spread the cabbage leaves over the smoking hot sizzler pan.
• Place the herbed rice, sautéed veggies, homemade french fries, baby capsicum mashed potatoes, caramelized onions, over the sizzler pan, add grilled chicken over the rice and finish by pouring the hot garlic pepper sauce. Add few pieces of cold butter on the sizzler plate below the cabbage so the pan to give the sizzling sound.
• Your chicken sizzler is ready to be served, Enjoy the hot sizzler with its sizzling sound that’s like a music to your ears.
*NOTE: If you don’t have a sizzler pan that’s totally alright, you may skip the step of using the sizzler pan and the use of cabbage & directly serve the freshly prepared dish in separate bowl or a platter.

Comparing to western cuisine, we don’t have as many sauces.
But these few sauces are more than good to go with almost anything.
It will be super handy on your BBQ days or BBQ dinner party.
Meats, seafood, these sauces and don't forget A LOT of fresh vegetables to go with.

- 2 tbsp Lime Juice

- 2-3 Thai chilis
- 4 tbsp Fish Sauce
- 1/2 tsp Sugar
???? Nam Jim Seafood - Thai Seafood Dipping Sauce NO Fish Sauce Version
- 1 tbsp Palm Sugar
- 1/3 cup Warm Water
- 4 tbsp Lime Juice
- 2 tsp Salt
- 5 cloves Garlic
- 1 cup Coriander
- Chili as you like
*NOTE : You can either blend as shown in the video or pound with mortar & pestle

- Fish sauce 3 tbsp
- Tamarind juice 2 tbsp
- Lime juice 1 tbsp
- Palm sugar 1/2 tbsp

- Ground toasted rice 1 tbsp**

〽️ Prik Nam Pla (Thai Chili Fish Sauce)
- Every Thai Street Food restaurant has this sauce on the table. This one is not a dipping sauce, it’s more like a table sauce which we use to enhance the flavors of the dish. Some areas in Thailand might call it Nampla Prik instead of Prik Nampla. Both are the same and straightforward meaning. Prik = Chilis and Nampla = Fish sauce in Thai. Like salt and pepper in the west, it’s always good to have this with Thai meals.
〽️ Nam Jim Seafood (Thai Spicy Seafood Dipping Sauce)
- Even though we call it a Seafood Dipping Sauce, as you can see in the video, I even dipped with grilled pork belly. It’s so good with the seafood from it’s spicy, sweet, salty and sour. But also good to go with ANYTHING even vegetables. The main character of this sauce is sharpness yet mellow. All the taste elements are so clear so you’ll have a perfect combo in one dip.
〽️ Nam Jim Jaew (Thai Spicy BBQ Dipping Sauce)
- Good with any BBQ you’re planning to have. Beef, pork, chicken, lamb, etc. Not for seafood in my opinion, it’s not as light and fresh. Comparing to wine I’d say this one is the red and seafood dipping sauce is the white. Special character of this sauce is ground toasted rice(check out the link above).

Super Easy Chicken Stew in Creamy Mushroom Sauce | Chicken Fricassée w/ Bulla Thickened Cream

For both recipes, we used @bullafamilydairy ‘s Thickened Cream, made with fresh Australian milk (fresh cream, not UHT). Not only is it lusciously smooth and thick, but it’s also a great multipurpose cream that can be used for whipping, cooking & pouring! Recipe: Chicken Fricassée or French Chicken Stew
Serves 4
Season 800g chicken legs with 1 tsp each of salt & black pepper. Add some cooking oil to the pan and 30g unsalted butter, and brown the chicken on all sides. Remove the chicken from the pan when it's done.
Fry until fragrant 1 whole sliced yellow onion, 100g sliced fresh button mushrooms, and 3 chopped garlic cloves. Then mix 1.5 tbsps plain flour into the ingredients. Add 800ml water, 1 chicken stock cube, 3 bay leaves, & 3 sprigs of thyme. Bring the stock to a boil. Return the chicken to the pan & simmer for 30 mins. Season with some salt to taste and cook for 10 mins to reduce the sauce. Remove the chicken from the pan again and add 120ml Bulla Thickened Cream. Return the chicken to the pan and bring to a soft boil; serve hot with mashed potatoes. Bon appétit!
Recipe: Fresh Cream Fruit Tarts
Serves 4
Whip 100 ml of Bulla Thickened Cream with 1 tbsp honey and 2 drops of vanilla essence until stiff peaks form. Pipe the cream into the tart shells and garnish with some fruits and thyme.
