How To make Chili Bean Tacos
2 tb Olive oil
1 lb Pork sausage, crumbled
1 Onion, chopped
1 Garlic clove, crushed
1/2 ts Ground cumin
1 ts Hot chili powder
1 Tomato, peeled, chopped
3 tb Tomato paste
1/2 Red bell pepper, seeded,
-diced 1 cn Kidney beans, drained (10oz)
Salt to taste 8 Taco shells
Sour cream Paprika Lettuce leaves Radish roses Preheat oven to 350'F. (175'C.). Heat oil in a saucepan. Add sausage, onion, garlic, cumin and chili powder; fry gently 5 minutes, stirring to break up sausage. Add tomato, tomato paste, bell pepper and kidney beans. Stir well and cook gently 15 minutes, stirring frequently to prevent mixture sticking. Season with salt. Meanwhile, heat taco shells following package instructions. Fill hot taco shells with sausage mixture. Top each taco with sour cream and sprinkle with paprika. Serve with lettuce leaves and radish roses. VARIATION: Substitute lean ground beef for sausage, if desired.

1 tsp red chili powder
1/4 tsp chili flakes
1/4 tsp dried oregano
1 tsp salt
1 tsp black pepper
1 1/2 tsp cumin powder
1 1/2 tsp paprika powder
Avocado Dip:
2 whole avocados
1/2 cup cilantro
1 whole jalapeno, diced
1 whole lime juice
1 tsp taco seasoning
Black Bean Mixture:
1 tbsp oil
2 cans black beans, washed and drained
1/2 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1 tsp taco seasoning, or to taste
1 tsp hot sauce, or to taste
Taco:
1/2 tsp oil
few corn tortillas
1 cup of mexican blend cheese

INGREDIENTS:
• 1 (15-ounce) can of black beans, drained and rinsed
• 4 cloves garlic
• 1 chipotle in adobo sauce, optional
• 1 tsp each: cumin, ancho chili powder
• ½ tsp each: salt, pepper, garlic powder
• ¼ tsp cayenne powder, optional
• Vegetable oil, for frying
• 6 tortillas
• ½ cup shredded cheese
• Shredded lettuce
• Salsa or Pico de Gallo
• Fresh lime wedges, for serving, optiona
Place the black beans, garlic, chipotle pepper, and seasonings in a food processor, and pulse until smooth. Taste and adjust seasonings, if necessary. Spread a few tablespoons of the black bean mixture into each tortilla, followed by 1 to 2 tablespoons of the cheese. Fold in half and set aside. Heat a couple teaspoons of the oil in a large nonstick skillet over medium heat. Working in batches, fry the tacos until golden and crispy, 2 to 3 minutes per side. Fill each taco with lettuce and serve with your favorite salsa and fresh lime wedges, and enjoy!
