How To make Chinese Chicken Strata
3 c Chicken; diced, cooked
3 tb Soy sauce
1 1/2 tb Rice vinegar
1 1/2 tb Sesame oil
1 ts Chili paste with garlic
1 3/4 ts Dry mustard
4 Scallions; chopped
1 md Red bell pepper; chopped
1 cn Waterchestnuts; sliced,
-drained 6 Bread slices; cubed
2 c Cheddar cheese; shredded
3 Eggs
2 c Milk
In a medium bowl, combine diced chicken, soy sauce, vinegar, sesame oil, chili paste with garlic, 1 teaspoon dry mustard, scallions, red pepper, and water chestnuts. Mix well and set aside. Turn half the bread cubes into a buttered 11 x 7 baking dish. Sprinkle with half the cheese. Distribute half the chicken mixture over cheese. Cover with remaining bread cubes and remaining 3/4 teaspoon dry mustard until blended. Pour evenly over casserole. Cover with plastic wrap. Refrigerate several hours, or overnight.
Preheat oven to 350 degrees F. Bake, uncovered 40 to 45 minutes, until top is golden and center is set. Let cool 5 minutes, then cut into squares or rectangles to serve.

How To Make Chicken Fried Rice Recipe
There's chicken, there's rice... and it's fried. So I think this qualifies as a 'Fried Rice Recipe'. True it probably doesn't conform to Chinese fried rice recipe style guidelines, and you won't find this fried rice at the Chinese restaurant takeout; but it is good, and you may eat it all in one sitting. This Uncle Roger fried rice... If uncle roger made fried rice.
Ingredients:
1 cup (250 mL) uncooked basmati Rice
1½ cups (375 mL) water or chicken broth
200g chicken
¼ tsp (1 mL) baking soda
1 tsp (5 mL) corn starch
¼ tsp (1 mL) M.S.G. (optional)
Black pepper to taste
2-4 Tbsp (30-60 mL) Teriyaki sauce to taste
(Our Teriyaki Sauce Recipe:
Thumb of ginger to taste
2 eggs
1 bunch (150g) broccoli
2 (120g total weight) carrots
1 bunch (100g) green onions
1 cup (250 mL) frozen peas
A few dashes of Shichi-mi tōgarashi
High heat cooking oil like grapeseed.
Our Teriyaki Sauce Recipe:
Method:
Cook the rice by the dry method: 1 part rice to 1.5 parts liquid.
When cooked spread on a sheet tray and leave to dry out for about an hour.
Slice up the chicken into small strips or cubes.
Mix the chicken in a bowl with the corn starch, baking soda, pepper, M.S.G., and teriyaki sauce.
Prep the veg by cutting into small even, easily cooked dice.
Par steam the broccoli florets.
Crack the eggs into a bowl and fork mix them.
Heat the wok over high heat, pour in some oil.
Scramble the eggs and then place in a bowl.
Stir fry the chicken until just cooked, and then place in the bowl with the cooked egg.
Stir fry the carrots and broccoli stems, but leave them in the wok when cooked and add in the broccoli florets, white parts of the green onions, and the frozen peas.
Add the cooked rice to the wok, and stir until heated through.
Add the cooked / reserved items back to the wok, and stir until heated through.
Check the seasoning and adjust with more teriyaki sauce if desired.
Sprinkle on some Shichi-mi tōgarashi .
Sprinkle with reserved green onion tops before serving.
