How To make Chinese Pepper Chicken
3 tablespoons vegetable oil
1 tablespoon soy sauce
1 clove garlic
minced
1 1/2" ginger root slice :
chopped
1 teaspoon cornstarch
3 boneless skinless chicken breasts cut in 1/2"
strips 2 bell peppers :
sliced
3 celery stalks sliced
1/3 cup green onions :
chopped
3/4 cup water
1/2 teaspoon sugar
2 tablespoons soy sauce
2 teaspoons cornstarch
1 teaspoon sesame oil
1 tablespoon rice wine
In medium bowl, combine 1 tablespoon vegetable oil, soy sauce, garlic, ginger root and cornstarch. Toss chicken in sauce to coat and marinate 30 minutes. In a wok, heat remaining 2 tablespoons oil and cook peppers and celery over high heat, stirring frequently until softened. Add green onions and cook 2 minutes more. Remove vegetables from wok. Drain chicken and pat dry with paper towels. Add chicken to wok and stir fry until chicken is done, about 3 minutes. Mix remaining ingredients together in a small bowl. Add to chicken with vegetables; simmer 3 minutes.

Black pepper chicken is a must-try Chinese stir-fry dish. We like to use skinless and boneless chicken legs for stir-fry dishes because they are moist and flavourful. You can use either fresh or frozen chicken, but we've used frozen chicken because it's always readily available in our freezer. If you don't like chicken leg or thigh, use chicken breast instead, but keep in mind that chicken breast can be tough and dry. Roland marinated the chicken before cooking it to keep it moist and tender. The goal is to infuse flavour into the chicken as well, so that you don't end up with tasteless chicken in a flavourful sauce.

Oyster sauce
Dark soy sauce (we've never tried this brand before so you gotta trial and error until you find a good premium dark soy sauce. The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)

Today I’m sharing my easy and delicious black pepper chicken recipe! This black pepper chicken recipe is inspired by Chinese flavours and is ready in a pinch. This is the perfect recipe to use chicken breasts for a quick weeknight dinner.
Try this easy black pepper chicken with a side of fried rice or noodles. It tastes great on it’s own too!

*RECIPE*
INGREDIENTS:
2 chicken breasts
2 medium onions
1 large bell pepper/capsicum
2 tbsp cornstarch/cornflour
1-2 tsp crushed black pepper
2 tbsp oil
—Sauce—
3 tbsp light/regular soy sauce
1 tbsp dark soy sauce
1 tbsp rice/white vinegar
1/2 tbsp grated ginger
1/2 tbsp grated garlic
1/2 tbsp minced green chilli (optional)
*salt may not be needed. Taste and add at the end if required
PROCESS:
1. Cut onions and bell pepper/capsicum into cubes. Try to keep them evenly sized
2. Cut chicken into 1 inch thick cubes. Try to keep them evenly sized
3. Combine all the sauce ingredients in a bowl
4. Coat chicken with 1 tbsp of the sauce and 2 tbsp cornstarch and set aside for 15 minutes
5. Heat up a wok or pan on medium flame. Heat 2 tbsp cooking oil and fry the chicken on both sides until cooked through
6. Fry in batches for a crisp outer coating. The chicken should be done in 2-3 minutes per side. Check a piece for doneness and set aside
7. To the same pan, stir fry onions on high heat for 30 seconds
8. Add the bell peppers and continue stir frying for 1 minute
9. Reduce flame to low and pour in the sauce. Let it simmer for 30 seconds
10. Add the fried chicken and toss well until warmed through
11. Switch off the flame and add 1-2 tsp freshly ground black pepper

SUBSTITUTES:
• No fresh ginger or garlic?
Use 1 tsp of the powdered version
• No dark soy sauce?
Replace with 1/2 tsp soy sauce + 1 tsp sugar
• No green bell peppers?
Any kind of bell pepper works. Bell pepper can be skipped too

TIPS:
• Fry chicken in batches if the pan can’t hold all the pices in a single layer. Otherwise the chicken will release water and steam
• Add the chicken once the oil is hot so it starts frying right away
• The veggies must stay crunchy so don’t overcook it
• Add pepper as per spice tolerance

*salt : 1/4 tsp

*Mama sita's oyster sauce: 1tbsp
*soy sauce: 1tbsp
*Ground black pepper: 1/2 tsp

Black Pepper Chicken Stir Fry - Juicy chicken pieces seasoned with salt & black pepper, stir-fried with veggies & delicious homemade Chinese stir-fry sauce.
This one-pot black pepper chicken can be served with garlic noodles or steamed rice. This is a Restaurant style Chinese black pepper chicken recipe.
Prep time: 10 minutes
Cook time: 15 minutes
Serves: 4
Black pepper chicken stir-fry Ingredients:
For the sauce:
• 3 tbsp light soy sauce
• 2 tbsp Oyster sauce or 2 tbsp dark soy sauce
• 1 tbsp Sriracha (optional)
• 1/2 tsp black pepper powder
• 1 tbsp cornstarch
• 1 tsp vinegar
To stir-fry the chicken
• 350 gram Chicken breast, cut into bite-size pieces.
• 2 tsp oil
• 1 tsp butter
• Salt
• 1 tsp black pepper powder (freshly ground)
• 1/4 cup onion, cut into cubes
• 1/4 cup yellow bell pepper, cut into cubes
• 1/4 cup green bell pepper, cut into cubes
• 1 tbsp finely chopped garlic
• 1 tsp grated ginger
• 2 spring onion whites, sliced
• 2 tbsp spring onion greens
• 1 tsp roasted sesame seeds
Preparations:
1. Cut the chicken breast into bite-size pieces.
2. Finely chop the garlic, grated ginger & sliced spring onion whites.
3. Cut red onion & bell peppers into cubes.
4. Cut spring onion greens.
5. In a small mixing bowl, combine all the sauce ingredients. Set it aside.
To stir-fry the chicken
1. Heat 2 tsp oil in a pan over medium-high heat.
2. Add 1 tsp butter (optional).
3. When the butter melts, add chicken. Spread the chicken pieces on the pan in a single layer.
4. Season it with salt and black pepper powder.
5. Cook stirring it until the color of the chicken turns white from pink.
6. Now slide the chicken pieces on one side of the pan.
7. Add onion, green and yellow bell peppers. Stir fry for 3-4 minutes.
8. Stir the chicken pieces too to avoid burning.
9. Slide the veggies & add ginger, garlic & white onions. Stir fry for a minute.
10. Now combine everything well. Stir-fry for 2 minutes.
11. Next, pour the sauce into the pan.
12. Stir to coat the chicken & veggies well with the sauce.
13. Finish with spring onion greens & roasted sesame seeds.
Notes:
• Freshly ground black pepper powder is a must.
• Addition of butter enhances the flavor of the dish. However, you can skip it.
