x Vegetable cooking spray 1/2 c Cookie, chocolate graham
-teddy bear shapped, crumbed 32 oz Cheese, cream, fat-free
2 c Sugar, granulated
2/3 c Cocoa, unsweetened
2/3 c Flour, all-purpose
3 tb Amaretto
2 tb Vanilla
1/2 c Egg substitute
x Cream, whipped, instant ?w fat, refrigerated 2 tb Almonds -- sliced
Sprinkle 1/4 cup crumbs on bottom of a 9-inch springform pan coated with cooking spray. Set remaining 1/4 cup crumbs aside. Position knife blade in food processor bowl; add cream cheese and next 5 ingredients. Process until smooth. Add egg substitute, and process just until blended. Pour mixture into pan. Bake at 300 degrees for 45 to 50 minutes, or until center is almost set. Sprinkle with 1/4 cup remaining crumbs. Let cool completely on a
wire rack. Cover and refrigerate 8 hours. Top each slice with a small amount of reduced calorie whipped cream and sprinkle with sliced almonds. Yield 16 servings. 226-calories (8% from fat per slice) 10.7gm protein, 2.1gm fat, (0.4gm sat fat), 37.8gm carbo, 0.4gm fiber, 10mg cholesterol, 378mg sodium, and 211mg

INGREDIENTS
Lemon Swiss Roll - As needed
Amaretti Biscuits - As needed
For Jelly Layer:
Flavoured Gelatin (Orange/ Lemon)
Water - 1 cup
Gelatin - 44 grams
For Custard Layer:
Vanilla Custard or
Milk - 1cup
Sugar - 2 tbsp
Custard Powder - 1tbsp
Vanilla Essence - 1/4 tsp
For Mandarin Layer:
Orange Jam (as needed) or
Mandarin - 1 Can
Corn Flour - 1 tbsp
Sugar - 3 tbsp
For Whipped Cream Layer:
Whipped creams readymade or
Whipping Cream - 1/2 cup
Icing Sugar (sifted) - 2 tbsp
Vanilla Essence - 1/4 tsp
For White Chocolate Decoration:
White Chocolate - 30 grams
Edible golden/silver balls (optional)
Candied Orange Peels (as needed)
Swiss Roll Layer:
Cut mini lemon swiss roll into thin slices and make the base of the glass with thin slices.
Jelly Layer:
You can use orange or lemon jelly or a combo of both in this recipe. Please follow the instruction on the jelly box. As per my box instructions, I have made using these steps
Hot water half cup, add flavored gelatin 44 grams and add another half cup of cold water to it once the flavored gelatin seems absorbed. Add to the dessert glass and refrigerate until set.
Custard Layer:
I have used custard powder to make the layer. I am sharing the homemade custard recipe link here as well in case if you are interested that is super delicious. In case if you are in a hurry, you can also use vanilla custard of any brand available in the market.
Homemade Custard Recipe Link:
1 cup milk. Take 1 tbsp milk out of it and add 1 tbsp custard powder to it mix well.set aside
Add 2 tbsp sugar to the remaining milk and heat it (don't boil it). Once sugar seems dissolved, add the custard powder mixture to it gradually while continuously stirring. Make sure to give the custard powder mixture a stir before adding as sometimes it sticks to the base.
Keep on whisking as lumps can form very easily here. It will thicken up eventually. Stop when the desired consistency is achieved and please note that it will thicken up a little more once cold. Add 1/4 tsp vanilla essence at this point. Pour in a dish and cover with sling paper so the crust won't form on top of it. Refrigerate till cold. Once cold, stir it well and add the layer using a piping bag or with a spoon.
AMARETTI LAYER:
Amaretti biscuits are available in the market. I preferred to use the readymade ones here. Add a biscuit layer at this point. You can add as many as you want. I don't find the need to replace these.
MANDARINE LAYER:
I have used a can of mandarin easily available in the market. You can also use orange jam here to make it quicker.
Open the can and separate the pulp and juice. Use 1/4th of the juice and mix 1 tbsp corn flour into it making the corn flour slurry.
Cut the mandarin into smaller sizes. Mix mandarin, remaining juice, and 3 tbsp sugar in a pan. Heat it until it all seems mixed up and a little thicker. Add the corn flour slurry while whisking continuously (Mix slurry before adding). Give it a boil and stop when it seems thick/ viscous. Don't cook it more as corn flour begins to set and although the taste won't be impacted, it overall doesn't give a better look to the dessert.
Refrigerate and add the layer to the glass when cool.
WHIPPED CREAM LAYER:
1/2 cup whipping cream, 1/4 tsp vanilla essence, 2 tbsp sifted icing sugar. Mix and whisk it in a hand mixer or a stand mixer.
Once whipped and stiff peaks are there, decorate the top of our dessert with that layer.
WHITE CHOCOLATE DECOR:
30 grams white chocolate finely cut. Melt in microwave using the microwave method. Please use 10 seconds each internal. Mix and give another 10 seconds if needed. Don't heat more as it can burn the chocolate. Spread the melted chocolate on butter paper using a spatula and add silver/ golden edible balls along with candied orange peels. Refrigerate and once set, cut into fine pieces.
DESSERT TOP DECORATION:
Add white chocolate fine pieces on the top. Amaretti Biscuit and crushed amaretti biscuit on top.
