This is a unique chocolate angel food cake with less sugar than a normal angel food cake recipe. The frosting is light and fluffy mocha whipped cream with shaved dark chocolate on top for extra chocolatey goodness.
Ingredients:
Cake Batter:
1/2 cup cake flour
3 tbs dark cocoa powder
3/4 cup sugar
1 cup egg white
1 tsp cream of tartar
1 tsp vanilla
1/4 tsp Kosher salt
Frosting:
1 tsp instant coffee
1 tbs warm milk
1/2 cup confectioner sugar
2 tbs dark cocoa powder
2 cups heavy whipping cream
dash of Kosher salt
Toppings:
Dark chocolate shavings

2 Ingredient Angel Food Cake
This recipe is so simple and a crowd pleaser. There is no special equipment needed to make this and you can knock the cake out so quickly in a pinch. I have made this cake in a two layer version, a sheet cake version, and now in these little angel food cake pans. The frosting is not always necessary. I have served it with fresh macerated fruit or whipped cream, or just on it's own. The frosting that I use here is what my mom used to put on her angel food cake. Her cake didn't include the pineapple like this recipe but the frosting was always my favorite. I have made the frosting without draining the pineapple and draining the pineapple. It works both ways. I used to make it all the time while draining the juice from the can and then when I saw the recipe on the side of the pudding box, it said not to drain it so I made it that way this time. I think I prefer it drained but you can decide for yourself.

How To Make Angel Food Cake 2
Preparation and Cooking Time: Depend on your need.
Ingredients
1. 1 cup sifted cake flour
2. 3/4 cup confectioners' sugar
3. 1 1/2 cups egg whites
4. 1/4 teaspoon salt
5. 1 1/2 teaspoons cream of tartar
6. 1 teaspoon vanilla extract
7. 1/4 teaspoon almond extract
8. 1 cup white sugar
9. 2 cups confectioners' sugar
10. 1/4 cup butter, softened
11. 3 tablespoons cream
12. 1 teaspoon vanilla extract
Instruction
1. Preheat oven to 375 degrees F (190 degrees C). Wash angel food tube pan in hot soapy water to ensure it is totally grease-free. Let dry completely.
2. Sift flour and 3/4 cup confectioners' sugar together three times; set aside.
3. In mixing bowl, beat egg whites and salt on high speed until foamy. Add cream of tartar, 1 teaspoon vanilla, and almond flavoring; beat until soft peaks form.
4. Peaks should be soft enough so they bend over slightly at the tips. Gradually add 1 cup white sugar, continuing to beat until stiff peaks form.
5. Sift about 1/4 of the flour mixture over the egg whites, and using a flat spatula, quickly but gently fold into egg whites.
6. Repeat using 1/4 of the flour mixture each time. Pour batter into a clean tube pan. Gently cut through batter with a knife to remove air pockets.
7. Bake for about 30 to 35 minutes, until an inserted wooden pick comes out clean. Invert pan onto a wire rack to cool for 1 hour.
8. Beat 2 cups confectioners' sugar, butter, cream, and 1 teaspoon vanilla together until smooth. Add more cream or confectioners' sugar as needed. Frost the cooled cake.
