How To make Chocolate Glazed Banana Cake

BANANA CAKE:
1 ts Vegetable shortening
3 c Sifted cake flour
1 tb Baking powder
1 1/4 c Granulated sugar
3 Eggs
1/3 c + 1 tb butter softened
1 1/2 c Mashed ripe bananas
1/3 c Buttermilk
CHOCOLATE GLAZE:
1 c Unsifted powdered sugar
1/4 c Unsweetened cocoa
1 1/2 oz Unsweetened chocolate
1/4 c Boiling water
To make Banana Cake: Preheat oven to 350 degrees. Lightly grease two 9-inch cake pans or one 13-by-9-by-2-inch baking pan with shortening. Then flour and set aside. Sift flour with baking powder; set aside. In mixer bowl, beat sugar with eggs and butter on medium speed 5 minutes, scraping bowl down several times. Reduce speed to low, beat in bananas and buttermilk. Add dry ingredients all at once, mixing only moisten dry ingredients. Spoon batter into pans and bake on middle shelf of oven 25 to 30 minutes, or until wooden pick inserted in center comes out clean.
Cool 5 minutes in pans, then turn onto rack to finish cooling. For best results, wrap cooled layers in film and ripen overnight before serving. Either serve plain or with Chocolate Glaze. To make Chocolate Glaze: Sift sugar with cocoa, set aside. Melt chocolate in top of double boiler over simmering water, or in microwave oven on high for 1 minute. Off heat, stir boiling water into melted chocolate to make a smooth paste, then stir in sugar-cocoa mixture. Spread evenly while warm over Banana Cake layers. Variation: To make Banana Nut Cake, fold in 1/2 cup chopped pecans or walnuts with flour. Per serving (based on 12 servings with glaze): 346 calories, 5 grams protein, 62 grams carbohydrate, 10 grams fat, 70 milligrams cholesterol, 166 milligrams sodium.

1 tsp baking soda

4 tbsp butter
1/2 cup cocoa powder
1 cup powdered sugar
1/2 cup milk

10x6 inch baking pan

250g Flour

1 Vanilla pod
15g Baking powder
Chocolate Glaze:
100g Dark chocolate
150ml Cream
1 Tablespoon of maple syrup
Some chopped nuts for decoration :)

How to make Banana Cake Chocolate Almond. Moist banana cake glazed with chocolate and toasted almond slices for topping.

Banana Chocolate Almond Cake
125ml melted butter
2 large eggs
200g sugar
190g all purpose flour/plain flour
1 tsp vanilla sugar (vanilla extract)
1-1/2 tsp baking powder
A pinch of salt
1 large ripe banana, mashed.
125g sour cream (we can use plain yogurt or buttermilk work too)
A handful of raisins.
75g almond slices, toasted.
In a bowl: sugar, melted butter, eggs. Whisk/mixer until pale and the sugar dissolved.
Sift into the egg mixture: flour, vanilla sugar, baking powder, and salt.
Using a spatula, fold the cake batter gently until combined.
Add sour cream (yogurt). Buttermilk work too.
Add mashed banana and raisins. Fold until well combined.
Pour the batter into a loaf pan lined parchment paper.
Bake at 180°C preheated an oven, for 30 - 35 minutes. An oven may vary.
Toothpick test! Cool in the pan 10 minutes. remove from the pan and peel off the paper. Cool completely on wire rack.
Melt chocolate glaze over simmering water. Pour over the cooled cake, sprinkle with toasted almond.

Hope you’ve watched my previous upload on the Banana Bread – that recipe was Banana Bread with spices and nuts. This time round it’s the chocolate version!
Previous Banana Bread Recipe:
▶Chocolate Banana Bread◀
Yield: 2 x mid-sized pound cake pans (15cm x 7cm x 6cm, somewhere around 700ml in volume)
Bananas 280g (Ripe bananas pls!)
Butter 72g
Grapeseed Oil 16g
Light Brown Sugar 130g (can use white sugar but light brown sugar recommended)
Whole Egg 90g
Vanilla Extract a few drops
All purpose flour 155g
Cocoa Powder 16g
Baking soda 3g
Salt a pinch
Dark Couverture Chocolate 120g (80g melted, 40g unmelted)
① Mash the bananas.
② In a bowl add the banana, melted butter, oil, sugar, egg, vanilla extract and whisk.
③ Sift in the flour, cocoa powder, baking soda, salt.
④ Add in the melted couverture chocolate followed by unmelted couverture chocolate.
⑤ (pre-heat 160℃) 160℃ for 40~50mins. You MUST adjust baking temp/time due to the difference in the pan size.
⑥ Personally, I prefer wrapping the banana bread in cling film and storing at room temp to serve the next day for optimal tenderness.
▶Baking time / temp◀
Everyone uses different sized pans – so adjust baking time & temperature. I’ve explained in the video on “how to check” if your banana bread is baked well. My advice is to stick to 160℃ and adjust the time first - if it takes too long to bake even after extending the time, than raise the temp by 10~15℃. (I know my suggested baking temperature is lower compared to a lot of those recipes out there – I prefer baking at lower temp for longer)
▶Quickly ripening bananas◀
① Put banana into a paper bag with an apple inside. Check back after half a day and leave it longer if not ripe enough.
② Another super quick way would be to bake unpeeled bananas at 150℃ (pre-heat 150℃) for 15~30mins. The banana will turn black but that’s ok.
▶How to store / Shelf life◀
Air-tight container for 3 days at room temp. It’s possible to store in the freezer up to 2wks.
