1 cup sugar
1 large egg
FILLING:
10 tablespoon (1 1/4 sticks) unsalted butter, at room temperature
1/2 cup confectioners' sugar
Pinch of salt
1 1/2 cups Marshmallow Fluff
1/4 teaspoon peppermint extract
green and red food colouring

1. Make cookies: Mix flour, cocoa, baking soda and salt in a bowl. Using an electric mixer on medium speed, beat butter and sugar until light, about 3 minutes. Beat in egg and vanilla until smooth. Stir in flour mixture until just combined.
2. Divide dough in half. Shape each portion into a log about 9 inches long and 1 1/2 inches in diameter. Wrap in plastic; chill for at least 2 hours and up to 1 day (or freeze for up to 1 month).

3. Preheat oven to 350ºF. Place racks in upper and lower thirds of oven. Line 2 baking sheets with parchment. Slice dough into 1/4-inch-thick rounds (36 slices per log); place on baking sheets 2 inches apart. Bake until cookies are dry on top, about 10 minutes. Remove to a wire rack; cool. Repeat with remaining dough.

4. Make filling: Using an electric mixer on medium speed, beat butter, confectioners' sugar and salt until combined. Stir in Fluff and peppermint extract. Beat on high until light, about 3 minutes. Divide filling between 2 bowls, add red or green food coloring to each bowl; stir until evenly dyed. Sandwich 2 cookies with a teaspoon of filling. Repeat with remaining cookies and filling.

INGREDIENTS
- 6 oz semi-sweet chocolate
- 2 cups flour
- 1/2 cup sugar
- 2/3 cup butter, room temperature
- 1/4 cup corn syrup
- 1 egg
- 1/2 tsp salt
- 2 tsp baking soda
- 25 thin mints
INSTRUCTIONS
Melt chocolate in the microwave and set aside to cool slightly. In the bowl of an electric mixer, beat melted chocolate, butter, corn syrup, egg, and sugar on low speed until well incorporated. Sift together flour, salt, and baking soda. Slowly add dry ingredients to mixer running on low speed. Increase speed to mix until just combined. Chill dough in an airtight container for at least two hours or overnight.
Using a small cookie scoop or tablespoon measurer, make small balls of dough. Roll in sugar and place on a parchment-lined or ungreased baking sheet. Put in a preheated 350-degree oven for 10-12 minutes, until set but slightly soft in the middle of the cookie.
Let set on pan for two minutes. While warm, turn half of the cookies upside down. Place thin mint on top and immediately set another cookie on top, creating a sandwich. Let thin mint melt then twist and gently push cookies together. This spreads the thin mint to the edges and seals the sandwich.
Let cool completely and enjoy!

Temper Chocolate Mint Ice Cream Sandwiches
Ingredients
Ice Cream:
2 cups whipping cream
1 can (14 oz) condensed milk
1 tsp vanilla extract
1 tsp peppermint extract
½ cup peppermint patties, roughly chopped
green food coloring
Cookies:
2 cups all-purpose flour
¾ tsp salt
1 cup unsalted butter, room temperature
½ cup confectioner’s sugar
1 tsp vanilla extract
green food coloring
Dark chocolate, melted
candy eyes
mini marshmallows, halved
Directions
Make the ice cream:
1. Beat the whipping cream with an electric mixer until stiff peaks form. Set aside.
2. In a large bowl, combine the condensed milk, vanilla extract, peppermint extract and green food coloring. Add a large dollop of whipped cream and mix until well combined. Add the remaining whipped cream and gently fold to combine. Add the peppermint patties and fold to combine.
3. Pour the ice cream into a plastic container, seal with a lid and freeze for 6 hours until firm.
Make the cookies:
1. Beat the butter with an electric mixer until pale and fluffy. Add the confectioner’s sugar and beat for 2 minutes, until well combined. Add the vanilla and combine. Add the green food coloring and dye it a deep green color. In a separate bowl, combine the flour and salt, then add to the butter mixture. Mix until the dough sticks together when pinched.
2. Wrap the dough in plastic wrap and refrigerate until firm, about 1 hour.
3. Roll the dough out on a floured surface to ¼ inch-thick. Use a 3” round cookie cutter to cut out circles. Place them on a baking sheet lined with parchment paper.
4. Bake at 325F for 13-15 minutes. Cool on the pan for 10 minutes, then transfer to a wire rack and cool completely.
Assembly:
1. Place half of the cookies on a baking sheet lined with parchment paper. Dip half of each cookie into some melted dark chocolate and return to the baking sheet.
2. Use some extra dark chocolate to attach the candy eyes and marshmallow halves to create Temper’s eyes and teeth. Place the baking sheet in the fridge until the chocolate has set.
3. Place a scoop of ice cream between a plain cookie and a decorated cookie. Enjoy!
