Chocolate Sandwich Cookies
A pair of sweet and crunchy biscuits/cookies sandwiched together by a rich, velvety chocolate ganache. A lovely treat with afternoon tea.

Homemade Chocolate Sandwich Cookie Recipe
These cookies have almost a brownie like consistency and are filled with a delicious vanilla buttercream.
1 3/4 cup all-purpose flour
3/4 cup unsweetened cocoa
2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup vegetable oil
2 large eggs
1/4 cup milk, or buttermilk
1 stick butter, room temperature
4 - 4 1/2 cups powdered sugar
1/4 cup milk
For the cookies, preheat the oven to 350° and line two cookie sheets with parchment paper. In a medium bowl, whisk together flour, cocoa, baking soda, baking powder, and salt. In a large mixing bowl, beat together sugar, oil, eggs, and milk. Gradually add dry ingredients and beat after each addition until well combined.
Scoop the dough with a 2-tablespoon cookie scoop and place them on the prepared baking sheets.
Bake for 8-12 minutes. Allow them to cool completely before filling.
To make the buttercream cream butter until smooth and creamy, 2 to 3 minutes. With mixer on low speed, add 2 cups powdered sugar and mix. Once combined add in half of the milk and mix. Repeat with the rest of the powdered sugar and then the milk again. If necessary, gradually add remaining 1/2 cup sugar to reach desired consistency.

▣ Chocolate Cheese Sandwich Cookies Recipe|Ohyoo Cooking
▣ Ingredients:
·Whole wheat cookie
Butter 65g
Salt 0.5g
Powdered sugar 30g
Egg yolk 18g
Cake flour 90g
Whole wheat flour 40g
Baking: 170℃/338°F 15-18 min
·Chocolate Cheese Sandwich
Cream cheese 130g
Brown sugar 50g
Chocolate 80g
Heavy cream 130g
Sour cream 70g
Egg 55g(1pc)
Cake flour 5g
Cocoa powder 5g
Baking: 140℃/284°F 22-28 min
·Chocolate topping
Chocolate 90g
Cocoa butter 30g
▣ Method.
1.First make whole wheat cookies, add softened butter with salt and powdered sugar, mix well, add one egg yolk, mix well
2.Add sifted cake flour and whole wheat flour, mix and knead into a dough, put it on greaseproof paper, roll it to 3mm thickness, freeze it for one hour.
3. Use a 55mm round mold to cut out the cookies, bake, and set aside to cool after baking.
4. To make chocolate cheese, add softened cream cheese to brown sugar and mix well, add melted dark chocolate and mix well.
5. Add the heavy cream, sour cream and eggs to the bowl and mix together.
6. Sift the batter and squeeze it into a 50mm diameter mold, bake at low temperature and allow to cool.
7. Make the topping, melt the chocolate and cocoa butter and mix well, dip the cheese into the chocolate, put it on the cookie and cover with another cookie (if the room temperature is high, you can refrigerate to solidify), wait for the chocolate to solidify and then serve, please seal and refrigerate.

Chocolate Sandwich Cookies | Valentine's Day Cookies | No talking recipe
I made these chocolate sandwich cookies as an idea for Valentine's day. If you don't have enough time or you forgot about this special day here is a easy recipe idea for a small present or dessert. These heart shaped cookies are easy to prepare and looks pretty cute. Is not necessarily to use food colouring because looks good even without it.
The dough is very tender and and the chocolate ganache is perfect.
