How To make Coconut Chicken Curry
2 tb Vegetable oil
1 md Onion; chopped
1 Green pepper; cut in strips
1 Garlic clove; minced
1 1/2 tb Curry powder
4 Chicken breasts, boned
- skinned & cut in 1" dice 4 md Potatoes; peeled
- cut in 1" dice 1 cn Coconut milk (about 16 oz)
Chicken stock or water IN A LARGE CASSEROLE, saute onion in oil until softened. Add green pepper and garlic and saute 2 minutes. Add curry powder and saute 1 minute. Add chicken, potatoes, coconut milk, salt to taste and enough stock or water to cover. Bring to a boil, cover and simmer for 30 minutes or until potatoes are tender.

650 g (1.5lb) boneless skinless chicken thighs or chicken breasts
1 ½ tablespoon curry powder
400 g coconut milk
2 tablespoons coconut oil substitute for olive oil or any other flavourless cooking oil of choice
½ cup finely chopped onions
½ cup (200g) canned chopped tomatoes swap this for fresh chopped tomatoes or concentrated tomato paste. You can also use red curry paste for Thai flavour.

Ingredients for the chicken curry:
2 tbsp vegetable oil
3 chicken breasts - - (approx 500g/17.5 oz) chopped into bite-size chunks
1 large onion - (or 2 small) peeled and finely chopped
2 cloves garlic - minced
2 tsp minced ginger
2 tbsp mild curry powder- go hotter if you prefer
1 tbsp ground coriander
½ tbsp ground cumin
1 tsp paprika
½ tsp ground cinnamon
1/2 tsp salt
½ tsp black pepper
2 tbsp tomato puree/paste
14 oz (400g) tin finely chopped tomatoes
1 cup (240ml) chicken stock
14 oz (400ml) tin full fat coconut milk
1 tbsp cornflour mixed with 2 tbsp cold water to make a slurry - *optional*
2 packed cups (60g) baby spinach

EASY CHICKEN CURRY RECIPE: COCONUT CHICKEN CURRY
Just showing you how I make this yummy Coconut Chicken Sauce.
I used soft chicken hence the use of chicken broth as I find soft chicken a tad bland. If you're using hard chicken , you can use just water instead.
Of course, if you use hard chicken, the cooking times and liquid contents will be considerably more, so, you'll need to adjust as suitable.
The Cornflour slurry is simply a mixture of cornflour and water. For this recipe, I used 2 tablespoons of cornflour to 1/4 cup of water.
Ingredients:
10-12 chicken parts
Vegetable/ coconut oil
3 Coloured bell peppers(chopped)
1 small Onion (chopped)
2 Scotch bonnet peppers (chopped)
1 cup water or chicken broth/stock
300g Coconut milk
Minced ginger
Minced Garlic

Onion Powder
Stock Cubes

Homestyle Chicken Curry In Coconut Milk | Chicken Curry With Coconut Milk | Mild Chicken Curry | Chicken Curry in Coconut Milk | Chicken Gravy | Chicken Curry | Chicken Masala Curry | Easy Chicken Curry
Ingredients for Homestyle Chicken Curry:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Chicken, curry cut with bones - 1 Kg
Tempering:
- Cumin Seeds-1 tsp
- Cinnamon- 3 pieces
- Curry Leaves- 15-20
Spice Powders:
- Turmeric Powder- 1/2 tsp
- Red Chilli Powder- 1 tsp
- Coriander Powder- 3 tsp
- Chicken Masala Powder- 3 tsp
- Kashmiri Chilli Powder- 1.5 tsp
Other Ingredients:
- Onions, chopped- 2 big ones (200 gms)
- Green Chillies, slit- 4
- Ginger, crushed- 2 tbsp
- Garlic, crushed- 2 tbsp
- Tomato, sliced- 2 small (100 gms)
- Salt- 1 tsp+ 3/4 tsp
- Coconut Milk - 200 ml
- Refined Oil- 5-6 tbsp
Preparation:
- Chop the onions, peel and crush the ginger & garlic and slice the tomatoes.
- Also slit the green chillies and take out the curry leaves.
Process:
- Heat oil in a pan and add the cumin seeds, cinnamon and curry leaves. Give a stir and then add the chopped onions & slit green chillies. Fry on medium heat for 8-9 mins till the colour changes.
- Now add the crushed ginger and garlic and fry on medium heat for 2-3 mins.
- Add the sliced tomatoes, mix and fry for 2 mins and then add the turmeric, red chilli powder, coriander powder & 1 tsp salt.
- Mix and fry on medium heat for 5-6 mins till the spices are cooked and oil separates.
- Now add the chicken pieces, give a mix and fry on high heat for 2-3 mins. Now add the Chicken Masala and 3/4 tsp salt , give a mix and fry 3-4 mins on high heat. Continue to fry on medium heat for another 8-9 mins till the chicken is browned.
- Add the Kashmiri Chilli Powder, give a mix and fry on medium heat for around 2 mins.
- Now add the Coconut milk, give a mix, add 200 ml water and cook covered on low heat for 15 mins till the chicken is tender.
- Serve with roti or rice.
