How To make Coconut Rice Noodles
1/3 lb Dried rice noodles
2 ts Sesame oil
1/2 lb Firm tofu
1 1/4 c Vegetable stock
2 2/3 oz Creamed coconut
2 tb Soy sauce
1 sm Onion
2 lg Red chillies
3 Garlic cloves
3 1/2 oz Beansprouts
4 Spring onions
2 tb Fresh coriander
Seasoning Preparation: Cut the tofu into 1-inch cubes. Crumble the creamed coconut. Grate the onion. Finely slice the chillies. Crush the garlic cloves. Thinly slice the spring onions. Chop the fresh coriander. 1. Pour boiling water over the noodles and leave for one minute then
rinse wuth cold water and drain thoroughly. 2. Heat the oil in a large frying pan and fry the tofu cubes until
lightly golden on all sides. 3. Heat the vegetable stock in a medium pan, then add the creamed
coconut, soy sauce, onion, chillies and garlic and simmer for 5 minutes. 4. Add the cooked noodles, beansprouts, spring onion slices and fried
tofu and cook for a further 3 minutes. Season to taste, add the coriander and serve. 445 cal per serving 12g protein 35g carbohydrate 29g fat 6g saturated fat

I call this incredibly delicious and beautiful dish the creamy sister of pad thai. Mee gati shares many of the same ingredients as pad thai, but is truly unique in that it has a rich coconut gravy poured over the pink-tinted noodles! The thread-thin rice noodles are enriched by coconut milk and tinted an iconic pink colour by red bean curd.
And that gravy...my oh my...there's nothing quite like it—somehow its flavour is reminiscent of peanut sauce...but there are no peanuts in it!! That's right! The combination of tao jiew and coconut milk magically takes on the characteristics of peanuts after being simmered together, so if you're allergic to peanuts, but want to experience what peanut sauce tastes like, this is the dish to try.
Oh, did I mention there is no fish sauce in this dish? No fish sauce?!?! Had to happen eventually ;) Enjoy!

⭐️ Peanut noodles are tossed with a creamy and delicious peanut sauce made with just a few simple ingredients.
⭐️ Ingredients
8 ounces dry noodles double the amount if you use pre-cooked noodles like vacuum-packed udon noodles.
Peanut Sauce
½ cup peanut butter
⅓ cup soy sauce
3 tablespoons lime juice
2 tablespoons maple syrup
2 teaspoons sriracha sauce
1 clove garlic grated
1 teaspoon ginger grated
Vegetables
1 cup red bell pepper cut into strips
1 large carrot cut into matches or grated
2 green onions thinly sliced, save green tops for garnishing
2 cups broccoli florets boiled
¼ cup roasted peanuts coarsely chopped
Garnish (optional)
4 wedges lime
1 tablespoon sesame seeds
1 drizzle sesame oil
2 tablespoons crunchy onions
