How To Stop Whipped Cream From Melting
Guys! This is how you stabilized whipped cream in under one minute! Just a bit of melted gelatin and your whipped cream will last in the fridge for up to THREE DAYS and it won't melt and room temperature!
PRINTABLE RECIPE ►
Stabilized Whipped Cream ►
12 oz heavy whipping cream
2 ounces powdered sugar
2 tsp gelatin
3 Tbsp cold water
1 tsp vanilla
1 teaspoon heavy cream
Instructions ►
-Sprinkle your gelatin over the water and let bloom for 5 minutes.
-Melt gelatin for 5 seconds in the microwave. If not fully melted do another 3 seconds. You can tell gelatin is melted when there are no granules of unmelted gelatin visible.
-After dissolving your gelatin, add in 1 tsp of heavy cream and mix. If your gelatin is too cold, heat again until it's melted (5 seconds).
-In a cold mixing bowl, whip your heavy cream to soft peaks
-Add in your powdered sugar and vanilla
-Turn your mixer down to low and drizzle in your gelatin and mix until whipped cream forms stiff peaks

2 oz (60g) semisweet chocolate (55-70%), for melting
2 oz (60g) semisweet chocolate (55-70%), chips or cut into small pieces
1/2 cup (113g) butter
2/3 cup (135g) sugar
2 large eggs
1 tsp (5g) vanilla extract
1 tbsp (8g) cocoa powder
1/2 tsp (2g) salt
1/2 cup (60g) all-purpose flour

8 oz (230g) cream cheese, room temperature
2/3 cup (160g) pumpkin puree
1/4 cup (50g) sugar
1 egg
1/2 tsp (2g) cinnamon
1/4 tsp (1g) ginger

1/4 tsp (1g) cloves

Chocolate Cake Using Fresh Cream
INGREDIENTS
Sift Together:
Refined Flour - 200 Gms
Baking Powder - 1/2 Tsp
Cooking Soda - 1/2 Tsp
Cocoa Powder - 3 Tblsps
Salt - A Pinch
Whip Together: (In Mixie)
Sugar - 1 Cup (Heaped)
Fresh Cream - 100 ml
Fresh Thick Curds - 3/4 Cup
Vanilla Essence - 1/2 Tsp
Chocolate Essence - 1/2 Tsp
Sliced Almonds - 25 Gms
METHOD
1. Powder sugar in a mixier grinder, add fresh cream, curds, essence and whip gently.
2. Pour on a broad bowl, add sifted ingredients. Mix gently using a flat ladle.
3. Fill in small cup cake moulds, top with sliced almonds, take in a pre-heated oven (180 degrees C) for 15 to 20 minutes (or until it is baked well).

When my daughter asks for a Birthday Cake for her friend that she needs immediately, I bake a Birthday Cake in 4 minutes! Yes, this Birthday cake is baked in 4 minutes because I baked it in a Microwave. But what is the difference between a microwave cake and an oven baked cake? I have shared the differences, advantages, disadvantages, all with you.
This birthday Cake is pretty in pink with butterflies dancing over it. So not only is a birthday Cake baked in 4 minutes, but it is also finished to look pretty!

Recipe :
Birthday Cake
Preparation Time: 5 minutes
Cooking Time: 4 minutes
Total Time: 1 hour
Ingredients:
1 cup milk
1 tsp vinegar
1 cup powdered sugar
¼ cup oil
1 tsp vanilla essence
2 eggs (replace with ¼ cup yoghurt)
1 ¼ cup flour
1 ¼ tsp baking powder
¼ tsp baking soda
1 pinch salt
For decoration:
300 ml whipping cream
Pink food colour
4 tbsp strawberry crush
Method:
Preheat the oven at 180C for 10 minutes (if baking in an oven).
Grease the moulds and line the bottom with a baking paper.
In a large bowl, mix the vinegar with the milk and allow to stand for 5 minutes. Add the powdered sugar and mix till the sugar is dissolved. Now add the oil, vanilla essence, eggs and blend well.
Sieve the flour, baking powder, baking soda, pinch of salt over the wet ingredients and mix to make a lump free batter.
Pour the batter in a greased mould.
For Microwave: Microwave on high mode for 4 minutes
For Oven: Bake in a preheated oven at a temperature of 180C for 35 minutes
Remove the cake from the oven, allow to cool in the mould for 10 minutes and then, demould the cake. Allow the cake to rest for 30 minutes.
Meanwhile whip the cream with 2 drops of pink colour.
Cut the cake into 2 neat slices.
Place the cake slice on the cake board. Soak the 1st slice with 4 tbsp sugar solution. Cover with 1” thick layer of cream. Spread the strawberry crush over it.
Place the 2nd layer of cake. Soak the 2nd slice with 4 tbsp sugar solution. Cover the entire cake with pink frosting. Decorate as desired.
