How To make Crisp Fried Vegetarian Noodles
1/2 lb Thin egg noodles
Sesame oil 1 1/2 c Chicken broth
2 tb Rice wine
1 1/2 ts Sugar
2 tb Cornstarch
3 tb Vegetable oil
1 1/2 tb Garlic, minced
1 1/2 tb Ginger, minced
10 ea Chineese black mushrooms
- rehydrated 3 c Leeks, finely julliened
2 c Carrots, shredded
1 1/2 tb Rice wine
4 c Bean sprouts
Heat 1 gallon water in large pan until boiling. Add noodles and cook until just tender, about 5 minutes. Drain. Toss with 1-2 teaspoons sesame oil. Immediately transfer noodles to round cake pan or pie plate. Press top to level noodles and let cool. This can be made a day ahead and refridgerated. In the meantime, cut leeks & re-hydrated mushroom caps into fine julienne strips. Discard mushroom stems. Rinse and drain bean sprouts. When noodles have cooled, combine broth, soy sauce, rice wine, sugar, 1 teaspoon sesame oil and cornstarch in bowl. Blend well. Heat well-seasoned wok or skillet until very hot. Add 1 1/2 tablespoons vegetable oil and heat until nearly smoking. Invert noodle cake into pan and cook until deep-golden brown, swirling pan from time to time to keep cake from sticking. Flip noodle cake over and brown other side. Transfer noodles to heat-proof serving platter and keep warm in oven at 200 degrees. Reheat pan and add remaining 1 1/2 tablespoons vegetable oil. Again, heat until very hot. Add garlic and ginger-root and stir-fry until fragrant, about 10 seconds. Add mushrooms, carrots, and leeks. Stir-fry over high heat about 1 minute. Add rice wine and cook one minute more. Then add sauce mixture and bring to boil. Add bean sprouts and cook, stirring constantly to prevent lumps, until sauce is thickened. Spoon vegetables over fried noodle cake and serve immediately.

LAY HO LAY HO! Before we get into this delicious recipe, I must warn you that it is incredibly addictive and you may want to eat this multiple times a week! Now that you've been warned, join me in this episode and learn how to make the savoury noodle lover's dream - a delicious garlic chili noodles recipe. Let's begin
Ingredients:
100g extra firm tofu
4-5 pieces garlic
small piece ginger
3 sticks green onion
3 tbsp avocado oil
3 tsp dark soy sauce
150g knife pare noodles
1 tbsp gochugaru
1 tbsp plantbased oyster sauce
Directions:
1. Pat dry the extra firm tofu with a paper towel. Then, mash into a crumble with a fork
2. Finely chop the garlic, ginger, and green onions
3. Heat up a nonstick pan to medium heat. Add 1 tbsp of avocado oil followed by the crumbled tofu. Sauté for 3-4min
4. Add 2 tsp dark soy sauce and sauté for another couple of minutes. Set the tofu aside
5. Bring a pot of water to boil for the noodles
6. Place the nonstick pan back on medium low heat. Add 2 tbsp avocado oil followed by the garlic and ginger. Cook for about 2min
7. When the water comes to a boil, cook the noodles for 1 min less to package instructions (in this case, 3min). Stir occasionally to keep them from sticking
8. Add the gochugaru to the garlic and ginger. Cook for about 1min. Then, add the oyster sauce
9. Strain out the noodles and add to the pan. Add 1 tsp dark soy sauce and the crumbled tofu. Turn the heat up to medium and sauté for 2-3min. Add the green onions and sauté for another minute

Procedure To make Crispy Fried Noodles
On the Burner, Add 4 Glass Water in a container and Heat the water up to boiling temperature. Once the water is Warm and starts Boiling add 1 tea spoon Salt in it. Ten Add 1 tea spoon oil so that the noodles don't Stick. Mix the water well so that the oil and salt get spread evenly. Then let the water boil for 1 minute and after this add Hakka Noodles in the boiling water. To check if the noodles are half cooked or not take 2 or 3 noodles at the tip of your fingers and press them with your nail and see that if it splits easily.
If it does then the noodles are half cooked well ( Do not overcook it) and turn off the Burner. Now remove the noodles from hot water and put it into room temperature water. Now remove the noodles from Room temperature water and Soak it to remove excess water.
Add oil in Container and heat it( Oil quantity should be less than half of the vessel you take and take a vessel that's deep as shown in the video because when you'll add Noodles in oil the oil will flow upwards). Now add noodles in oil to get fried until its crisp. Fry it until it's Golden brown.
Serve The Crispy Fried noodles with Shcezwan Sauce.

Veg Hakka Noodles Recipe | Chef Sanjyot Keer
Full written recipe for Veg hakka noodles
Prep time: 20 mins
Cooking time: 10 mins
Serves: 6
Ingredients:
• Capsicum 2 medium size
• Carrots 1 medium size
• Cabbage half or 1 cup
• Noodles 1 packet
• Boiling water for noodles
• Salt to taste
• Oil 1 tbsp
• Garlic 1 tbsp (chopped)
• Spring onion bulbs 1/4th cup (sliced)
• Spring onion greens 1/4th cup (chopped)
• Salt and pepper to taste
• Soy sauce 1 tbsp
• Chilli oil 1 tbsp
• Spring onion greens 1 tbsp (chopped)
• Vinegar 1 tsp
Methods:
• Cut the capsicum in juliennes, that means length wise strips.
• Peel the carrots, trim if the head and tip and further cut them into juliennes.
• Take off one layer of cabbage, cut the base and cut them in toc shreds.
• Boil water in a wok, add salt and oil, add the noodles and boil for 6-7 minutes. Do not overcook.
• Strain the noodles and rinse it with cold water or with tap running water, pour few drops of oil and mix with noodles to avoid it from sticking to each other.
• Set a wok on medium heat, add oil, garlic and spring onion bulbs, sauté it for a minute.
• Add the spring onion greens, shredded cabbage, julienned carrots, capsicum and sugar, mix well and sauté it for 2-3 minutes.
• Add the boiled noodles, salt and pepper to taste, soy sauce, chilli oil and some freshly chopped spring onion greens, mix and toss well for 3-5 minutes. Add vinegar and toss well once again.
• Your veg hakka noodles is ready to be served, serve hot with schezwan sauce.
