Tofu Spring Rolls Recipe | How to Make Spring Rolls
These tofu spring rolls are so fresh, delicious and fun to make! Vietnamese spring rolls are usually made with shrimp but in this recipe I made fresh spring rolls with crispy tofu (vegan spring rolls). For serving these homemade spring rolls are served with two dipping; peanut butter dipping sauce and sweet&spicy dipping sauce.

Ingredients:
For the crispy tofu:
1 block (14oz/400g) Extra-firm Tofu
2 tablespoons Cornstarch
1 tablespoon Sesame oil
1 tablespoon Vegetable oil
2 tablespoons Soy sauce
1 tablespoon Sriracha (optional)
For the spring roll:
10-12 Rice paper
150g Vermicelli rice noodles
1 Carrot
2 Cucumbers
1/4 Red cabbage
Mint leaves/Cilantro Leaves/Basil leaves
For the dipping sauce:
Peanut butter:
1/2 cup (125g) peanut butter
2 tablespoons soy sauce
1 tablespoon sriracha/hot chili sauce
4-5 tablespoons water
2 tablespoons lime juice
1 tablespoon Brown sugar
1 teaspoon Sesame oil
Sweet & spicy sauce:
2 tablespoons Soy sauce
2 tablespoons Water
*for non-vegan version you can use 4 tablespoons of fish sauce
1/4 cup (50g) Sugar
1/3 cup (80ml) Water, hot
2 tablespoons Lime juice
2 teaspoons Rice vinegar
1 garlic clove, grated
1 chili pepper, small – chopped
Directions:
1. Make crispy tofu: Wrap block of tofu with paper towels and pat dry, pressing down on the tofu to squeeze out excess moisture. Cut into rectangles. Coat the tofu with cornstarch.
2. In a bowl, mix sesame oil, vegetable oil, soy sauce and sriracha.
3. Heat 1 tablespoon of oil, once oil is heated up, add the tofu to the skillet and let brown on both sides. When browned, pour in the sauce and cook until thickened. Set aside.
4. Cook the vermicelli: Cook vermicelli noodles in boiling water, for just a few minutes, according to package instructions. Drain and rinse with cold water. Set aside.
5. Prepare the vegetables: slice carrot, cucumber and avocado into thin strips, chop cabbage and gather all your filling ingredients on a large plate.
6. Assembly: Add about 1 inch of water to a large, deep dish. Place one rice wrapper into the water and let soak for a few seconds. It should still feel pretty firm as you remove it and lay it on your counter or plate.
7. On the 1/3 section of the rice paper wrapper closest to you, start layering your veggies, herbs, cooked rice noodles and tofu, fold the side and finish rolling over as described in the video above.
8. Make the peanut butter sauce: place all sauce ingredients in a bowl and whisk until smooth.
9. Make the sweet and spicy sauce: place all sauce ingredients in a bowl and whisk until smooth.
10. Serve and enjoy!

✅Ingredients
• 4 salmon filets
• 4 tablespoons freshly squeezed lemon juice
• 2 teaspoons extra virgin olive oil
• 1 tablespoon soy sauce
• 2 teaspoons minced garlic
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 teaspoon paprika
• 2 tablespoons finely chopped fresh dill
• Lemon slices for serving
✅Instructions
1️⃣ In a shallow dish combine the lemon juice, olive oil, soy sauce, and minced garlic. Place salmon filets in the dish and flip them over, ensuring both sides are coated.
2️⃣ Next, sprinkle filets with salt, pepper, and paprika.
3️⃣ Preheat air fryer to 400 degrees Fahrenheit.
4️⃣ Spritz a little oil onto the cooking surface of the air fryer and place filets in the air fryer and cook for 8-10 minutes, depending on their thickness. Remove from air fryer.
5️⃣ Sprinkle fresh dill on top of salmon and serve immediately. Garnish with lemon slices if desired.

1 large bunch mint leaves
1 large bunch cilantro
¼ red cabbage, thinly sliced
For the Ginger Peanut Dipping Sauce:
1/2 cup peanut butter
1 1/2 tbsp low sodium soy sauce
1 tbsp raw honey
2 tbsp freshly squeezed lime juice
1/2 tsp chili paste
1 tsp fresh grated ginger
SHRIMP SPRING ROLLS WITH SPICY ALMOND DIPPING SAUCE
For the Shrimp Spring Rolls:
6 rice spring roll papers
1 tbsp olive oil
12 oz shrimp, deveined
1/2 tsp sea salt
1/4 tsp ground black pepper
1 cucumber, thinly sliced
3 carrots, thinly sliced
6 leaves green leaf lettuce
12 mint leaves
For the Spicy Almond Dipping Sauce:
2 tbsp almond butter
2 tsp hoisin sauce
1 tsp Sriracha sauce
1 tsp rice wine vinegar
SESAME AVOCADO AND CABBAGE SPRING ROLLS WITH HONEY MISO SAUCE
For the Sesame Avocado and Cabbage Spring Rolls:
6 rice spring roll papers
1/4 head red cabbage, thinly sliced
1 bunch mint leaves
2 tbsp white sesame seeds
2 tbsp black sesame seeds
1 avocado, sliced
For the Honey Miso Sesame Sauce:
2 tbsp white or red miso paste
1 tbsp water
1 tsp raw honey
1 tbsp rice wine vinegar
1 tsp low sodium soy sauce
1/2 tsp sesame oil
GARLIC CHICKEN SPRING ROLLS WITH AVOCADO CILANTRO SAUCE
For the Garlic Chicken Spring Rolls:
1 tbsp olive oil
1 lb boneless, skinless chicken
1/2 tsp sea salt
1/4 tsp ground black pepper
1/8 tsp garlic powder
1 cup cooked quinoa (optional)
1 cucumber, thinly sliced
6 leaves fresh iceberg lettuce
6 rice spring roll papers
For the Avocado Cilantro Dipping Sauce:
1 avocado, pitted and peeled
1/2 cup plain greek yogurt
1 cup unsweetened almond milk
1 cilantro bunch
1/2 tsp garlic powder
1/2 tsp sea salt
1 tbsp lime juice
KIWI STRAWBERRY SPRING ROLLS WITH HONEY LIME SAUCE
For the Kiwi Strawberry Spring Rolls:
6 rice spring roll papers
1 mango, thinly sliced
3 kiwi, peeled and diced
1 1/2 cups strawberries, sliced
For the Honey Lime Dipping Sauce:
2 tbsp freshly squeezed lemon juice
2 tbsp freshly squeezed lime juice

**salmon rice paper chips - such a quick & easy meal! Make sure your oil is hot enough before frying the rice paper (it should crisp up within a few seconds) & really shake out that oil.

**crab house in koreatown, LA - it’s very hard to find raw crab in the US, so I’ve been wanting to try this place for awhile. The crab was very good and I loved the sauce too! I’d just say it’s very very expensive $$… I will probably try to make it at home next time I’m craving ????
