1/2 tablespoon salt or to taste
1 tablespoon garlic ginger paste
1/2 tablespoon lemon juice
1 tablespoon olive oil
1 tablespoon yoghurt

Chicken Gyro ????
2 lbs chicken thighs
4 pita of choice
5 cloves garlic
1/2 shallot
1/4 cup yogurt
2 Tbsp olive oil
Zest and juice of a lemon
Seasonings:
1 packet Sazon
1 tsp chipotle chili powder
2 tsp paprika
1 tsp oregano
1 tsp cayenne pepper
1/2 tsp cumin
Salt to taste
Bake for 20 minutes at 400F, flip and finish at 425F ~ took about 10-15 more minutes
Finish with tomato red onion or any pickles you like!

►Equipment I used in this recipe:
Ingredients:
6 Tortilla wraps
3 tablespoons Oil
Salt to taste
Black pepper to taste
1-2 teaspoons Paprika
1 Red chili flakes (optional)
1 teaspoon Cumin
1 teaspoon Oregano
600g Chicken tights/breast, cut into bite size pieces
1 tablespoon Mayonnaise, for each tortilla
Lettuce
Cabbage
Cheese of your choice
Directions:
1. In a large bowl mix all the spices with oil.
2. Add chicken chunks and mix until well coated.
3. Heat a large pan over high heat, when hot add the chicken and cook until fully cooked, about 6-8 minutes. Turn the heat off and set aside.
4. Chop the lettuce and cabbage.
5. Take a tortilla, spread 1 tablespoon of mayonnaise, then, layer few tablespoons of the chicken chunks, chopped lettuce, chopped cabbage, shredded cheese. Wrap the tortilla as shown in the video.
6. Heat wrap tortilla from all sides until golden.
7. Serve immediately.

Chicken Curry and Pita Bread for Ramadan!
Marinated Chicken Ingredients
- 1 whole chicken, cut
- 1 tsp chili powder
- 1 tsp turmeric
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp rosemary ground
- 1/2 tsp red pepper flakes
Chicken Curry Ingredients
- 4 tbsp olive oil
- 1 red onion
- 2 tomatoes
- 1/2 of a green red, yellow pepper, chopped
- 1/2 cup cilantro
- 1 squeezed lemon juice
- 1 tbsp soy sauce
- 5 garlic cloves
- 2 tbsp ginger root
- 2 potatoes, peeled
- 1/4 cup water
Pita Bread Ingredients
- 1 cup water
- 1 cup warm milk
- 1 tbsp yeast
- 1 tbsp sugar
- 6 cups flour
- 1 tsp salt
Chicken Curry Steps
1. Crush 1 tbsp grinder root and 5 garlic cloves together. Set aside for later!
2. Mix the spices (1 tsp chili powder, 1 tsp turmeric, 1 tsp salt, 1 tsp pepper, 1/2 tsp red pepper flakes, and 1/2 tsp rosemary ground) into the chicken
3. Cover the chicken with plastic wrap and put in the fridge to marinate anywhere from 1 hour to overnight
4. Place a manual pressure cooker pot onto the stove on medium heat
5. Add 4 tbsp olive oil to the pot
6. Add the chopped red onion and sauté for 4 minutes
7. Add the marinated chicken and cook for 3 minutes
8. Add the crushed garlic and ginger to the pot
9. While the chicken cooks for 5 more minutes add 2 cut tomatoes, 1/2 cup cilantro, and 1 tbsp soy sauce into a blender
10. Blend until well mixed
11. Add the following to the pot: the blended sauce, 2 chopped potatoes, red, green, and yellow peppers, and 1/4 cup of water
* Make sure the water is poured into the cup you just used
to blend the sauce!
12. Close the pressure cooker and let cook for 15 to 20 minutes
13. After it’s finished, add the 1 squeezed lemon juice to the pot!
14. Check if the potatoes are soft and the chicken is cooked!
Pita Bread Steps
Mixing
1. Add the following to a mixer: 1 cup water, 1 cup warm milk, 1 tbsp yeast, and 1 tbsp sugar
2. Whisk and let sit for 1 minute
3. Connect the dough attachment to the mixer
4. Add 5 cups of flour to the mixer
5. Mix for 3 to 5 minutes or until the dough no longer sticks to your fingers
6. Wrap the dough in plastic wrap and let prove (rise) for 30 minutes
7. After it has proved, fold the dough as shown in the video
Cooking
1. Cut the dough into 9 pieces
2. Shape the dough into 9 spheres
3. Let the spheres prove for 5 to 10 minutes each
4. Roll out 1 of the 9 dough spheres
5. Place a pan on the stove on medium heat
6. Let the pan heat up as you roll out the other 4 spheres
7. After 5 total have been rolled out, place the first dough you rolled out onto the pan
* it’s important to let the rolled out dough sit for a few
minutes by cooking the dough that was rolled out the
earliest
15. Wait for the air pocket in the dough to form!
16. Gently push down on the air pocket
17. Flip once the bottom browns and flip again once the other side browns
18. Finish rolling out the rest of the dough as you cook more dough!
19. Add any topping to your pita bread! We added an olive oil and cilantro mix to ours.
Curried chicken and apple pita
Combine the flavours of curry powder with Greek yoghurt in this quick and easy-to-make sandwich. The green apples make it a tad bit sweet, but also tone down the saltiness of the yoghurt.
RECIPE: Curried chicken and apple pita
1 chicken breast, grilled and cubed
2 tbsp Greek yoghurt
1 tsp curry powder
Half green apple, sliced
Pita bread, sliced in half
Fried onions, for garnish
1) Mix together 1 tsp curry powder with 2 tbsp Greek yoghurt
2) Add 1 grilled and cubed chicken breast and mix well.
3) Fill the pita with green apple slices and the chicken mix, and garnish with fried onions.
