How To make Curry Chicken Pitas
1 lb Boneless, skinless
-chicken breast, -cut into 1-inch chunks 2 tb Margarine
1/2 c Finely chopped onion
1 tb Curry powder
1/2 ts Ground cinnamon
1/4 ts Ground coriander
2 ds Cayenne pepper
2 tb Water
2 Pitas
In a large skillet over medium-high heat melt margarine. Add onion and saute for 2 to 3 minutes. Add chicken and saute 5 to 6 minutes, until cooked through. Add seasonings and water. Stir well until thoroughly blended. Split between the two pitas, putting chicken on top of the pitas and trickling the remainng sauce over them. (Neil decided to fill his pita with the chicken, but I ate mine on the outside, rather than in the pocket. It's good either way. Oh, and make sure your bathroom door is closed when you make this, or your towels will smell like curry when you go to dry off from your shower the next morning...) Vadouvan Chicken Pitas
10 oz chicken breast strips
1 red onion
½ cup tzatziki
1 tbsp apple cider vinegar
2 pocketless pitas
2 scallions
3 tbsp sweet chili sauce
2 tbsp vadouvan curry powder
½ lb red cabbage
1- preheat oven to 450 degrees
Cut cabbage; slice the leaves
Slice the scallions, separating the white bottoms and hollow green tops
Slice the onion
2- combine the sliced cabbage, white bottom of the scallions, sweet chili sauce, and vinegar; season with salt and pepper
Set aside to marinate for 10 minutes
3- pat the chicken dry with paper towels; season with salt, pepper, and curry powder to coat
Heat 2 tbsp of olive oil
Add chicken and onion in an even layer
Season with salt and pepper. Cook 4-6 minutes
4- wrap the pitas in foil and place directly onto an oven rack; warm 7-9 minutes
5- spread the tzatziki onto the warmed pitas; top with the chicken and onion
Serve the pitas with the slaw on the side
Garnish with the green tops of the scallions

2 lbs chicken thighs
4 pita of choice
5 cloves garlic
1/2 shallot
1/4 cup yogurt
2 Tbsp olive oil
Zest and juice of a lemon
Seasonings:
1 packet Sazon
1 tsp chipotle chili powder
2 tsp paprika
1 tsp oregano
1 tsp cayenne pepper
1/2 tsp cumin
Salt to taste
Bake for 20 minutes at 400F, flip and finish at 425F ~ took about 10-15 more minutes
Finish with tomato red onion or any pickles you like!

Marination
Ginger Garlic paste - 2tsp
Lemon - 1/2 lemon juice
Gravy
Oil - 3 tbsp
Chicken - 750 gm
Onion - 2medium size
Garlic - 10-12
Green chilly - 2
Ginger - 1inch
Black pepper - 10-12
Green coriander
Black cardamom - 1
Clove - 3
Bay leaf - 1
Red chilly powder - 1tsp
Turmeric - 1/2 tsp
Coriander powder - 2tsp
Garam masala - 1tsp
Green Coriander for garnish
Salt to taste
