The third in our flourless egg white range, these tortillas are soft when warm and firm up as they get cold to about the same firmness of a regular tortilla. So they would be great to shape them how you like when warm...perfect for tacos. In this video we show you the results of the experiment and the various tests we put them through.

Nutritional Information/Serve:
Cal: 148 | Net Carbs: 0.6g | Fiber: 0g | Total Carbs: 0.6g | Fat: 12g | Protein: 11g
Large Tortillas - Serves 3
Nutritional Information/Serve:
Cal: 246 | Net Carbs: 0.9g | Fiber: 0g | Total Carbs: 0.9g | Fat: 20g | Protein: 19g
Ingredients:
180g Powdered Cheese (equates to 2 cups less 1 tbsp)
4g/ 1 tsp Baking Powder
3g/ 1 tsp Gelatin Powder
6g/ 2 tsp Xanthan Gum
2 Egg Whites (1/4 cup or 60g)
Pinch Cream of Tartar
Vegan Substitutions:
Use Almond Flour to replace the Cheese
205g/2 cups Almond Flour
Use Agar Agar to replace the Gelatin
You will need a little fat so the dough is not dry, about 1 tablespoon.

You finish eating and think, “I just had the greatest breakfast ever, and there wasn’t any bacon”. Huevos Rancheros is That kind of meal.
Learn to make Huevos Rancheros. This classic Mexican egg dish was created to feed hungry, hardworking vaqueros (cowboys). It nourishes, pleases and allows them to ride and work.
A crisp freshly cooked tortilla. Layered with a rich tasting sauce, refried beans, fried egg and cheese.
I love cooking basic simple food. Foods that were created to use local ingredients, while living on a budget.

Tortillas:
Use only corn tortillas. Homemade is best, but takes time. Buying them is OK. Best to buy at a tortilleria if there is one nearby, or a local Mexican grocery store.
For those of us living in Australia I have listed some sources down below, and on my blog.
Refried Beans:
Better to make your own, but I wouldn’t hesitate to heat up some canned ones; rather than miss out on this special treat. Black beans or pinto beans seem to be the best to use
Eggs:
We like fried eggs; sunny side up or over easy; a runny yoke is nice. I reckon poached eggs would be ok
Ranchero Sauce:
Best to make your own; it is easy, but you can buy some jarred Mexican Cooking Sauce, Enchilada Sauce, or Salsa.

Not in your major supermarkets.
If I don’t make my own tortillas I buy the ones made by Diego’s they are made in the Gold Coast and are delicious. Just like the ones I used to buy my favourite tortilleria (tortilla maker), when I lived in in San Diego, near the Mexican border.
I buy my Diego’s GoMEX® Corn Tortillas at Grandma’s Kitchen in Capalaba QLD.
You can go to enter your post code and find a list of their stockist in your area. It might be a good idea to call the local store to see if they carry the products.
