How To make Tamale Pie Rancheros
2 tb Vegetable oil
1/4 c Chopped onion
1/4 c Chopped green pepper
3/4 lb Ground beef
1 cn Stewed tomatoes (16 oz)
1 cn VEG-ALL Mixed Vegetable,
-drained (16 oz) 1 c Cornmeal
1 ts Basil
1/8 ts Pepper
2 tb Mild green chilis
1/2 c Shredded cheddar cheese
1. Heat oil in heavy skillet. Add onion and green pepper; cook over low
heat until soft. 2. Add ground beef and brown.
3. Stir in remaining ingredients, except for cheese.
4. Place in a 9" pie pan and bake at 375'F. for 30-35 minutes.
5. Sprinkle with cheese and bake 5 minutes longer.

It's time to leave, we are packed and ready to return to Ohio, I will miss our Texas. As winter Texans we travel back and fourth, we spend our Summers in Ohio and winters in Texas, and it's always hard to do because we love them both. This will be the last time I cook in this kitchen since it was only temporary while we we found a permanent Texas home, but we just couldn't find the perfect one for us. INGREDIENTS
FOR THE HUEVOS RANCHEROS:
1 tbsp. extra-virgin olive oil
1 onion, chopped
1 tsp. cumin
1 tsp. chili powder
kosher salt
1 c. black beans, drained and rinsed
1 c. salsa
1 c. Shredded Monterey Jack
4 large eggs
FOR SERVING:
4 corn tostadas
1 avocado, sliced
1 tbsp. freshly chopped cilantro
Hot sauce
sour cream
DIRECTIONS
1. Preheat oven to 400º.
2. In a large skillet over medium heat, heat oil. Add onions and cook until soft, 5 minutes. Season with cumin, chili powder, and salt.
3. Add black beans and salsa to skillet and stir to combine.
4. Sprinkle all over with cheese, then create four wells with a spoon and crack in eggs. Season with salt.
5. Bake until egg whites are set and yolks still runny, 8 to 10 minutes.
6. Plate on top of tostada. Garnish with avocado and cilantro, then drizzle with hot sauce and sour cream.

HUEVOS A LA MEXICANA is a delicious Mexican breakfast recipe that is nutritious and very easy to make. Because this dish is prepared with tomatoes, onions and green chilis that mirror the colors in the Mexican flag, it was given the name Huevos a la MEXICANA. This dish reminds me so much of my childhood, my mom made it often and she served it with delicious refried beans and the best salsa made in her molcajete and her famous flour tortillas. I have continued the tradition by preparing it for my family ad well when serving it to people who don't like hot chilis in their food you can totally remove the seeds to make it a delicious mild breakfast and before serving it you can fold in some chopped cilantro which is optional too. This dish is easy and hearty and is sure to please.
•INGREDIENTS-------------------
2 TBSP VEGETABLE OIL
MINCED SERRANO PEPPERS (seeds optional)
1/2 MEDIUM DICED ONION
6 XTRA LARGE EGGS (well beaten)
2 LARGE ROMA TOMATOES (Diced)
SALT (to your liking)
CHOPPED CILANTRO (optional)
•REFRIED BEANS-----------------
2 TBSP BACON GREASE (or vegetable oil)
1/4 C. DICED ONIONS
1 LARGE GARLIC CLOVE (minced)
BEANS (I used about 4 Cups)
SMALL PIECE HAM HOCK
